Slow grilled meat yields a tender and juicy entree

Number Of Ingredients 8

6 cups soaked hickory chips
1 (5 to 6 lbs) trimmed but left with a layer of fat about 1/4 inch thick brisket
3 tablespoons Paula Deen's Southern Chili Spice
6 tablespoons Paula Deen's House Seasoning
1 1/2 teaspoons brown sugar
1 1/2 teaspoons onion powder
1 teaspoon dried oregano
1 teaspoon cayenne pepper

Steps:

  • Rinse brisket thoroughly under cold water and pat dry with paper towels. In a small bowl, mix together House Seasoning, chili powder, brown sugar, onion powder, oregano and cayenne. Rub brisket with the rub on all sides.
  • Follow directions on your grill/smoker for indirect grilling. Place the soaked chips into the chip box, or make a pouch with tin foil for the chips, then place pouch directly on the coals. Place brisket fat side up in a large disposable aluminum pan and place in the center of the grate and cover the grill.
  • Slow grill the brisket until tender and an instant-read thermometer inserted in the center of the meat reads about 190 °F, about 6 hours. Add coals and wood chips as necessary to maintain a constant temperature. Transfer the brisket to a cutting board to rest for about 10 minutes. Slice the brisket across the grain and serve.

She served it plain with powdered sugar on top, with strawberries & homemade whipped cream. If you were lucky she would toast you a piece for breakfast, and you could have it with one of her homemade jam's or jellies."

1 cup butter
1/2 cup Butter Flavor Crisco or 1/2 cup any shortening
3 cups sugar
5 eggs
3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°.
  • Grease & flour a 10" tube pan or bundt pan.
  • Sift dry Ingredients.
  • Cream butter & shortening together.
  • Add sugar a little at a time.
  • Cream until fluffy.
  • Add eggs one at a time, beating after each addition to fully incorporate the eggs into the batter.
  • Add dry ingredients and milk to mixture alternating; starting and ending with flour.
  • Mix in vanilla.
  • Pour into prepared pan.
  • Bake 1 to 1 1/2 hours, or until it passes the toothpick test.

Makes 8 to 10 servings

Number Of Ingredients 10

1 tablespoon olive oil
1 teaspoon salt
1 teaspoon ground black pepper
1 (2½- to 3-pound) beef brisket, trimmed
1 (12-ounce) bottle pale ale
2 tablespoons tomato paste
1 medium onion, sliced
1 green bell pepper, chopped
2 cloves garlic, minced
2 bay leaves

Steps:

  • In a large skillet, heat oil over medium-high heat. Sprinkle salt and pepper onto beef; cook for 3 to 5 minutes per side or until browned. In a 4-quart slow cooker, stir together ale and tomato paste until smooth. Stir in onion and remaining 3 ingredients; place beef on top of onion mixture. Cover and cook on LOW for 8 hours or until fork-tender. Remove beef from slow cooker, and slice across the grain. Serve with vegetables and sauce.

MAMA'S BRISKET

Stuart's mother taught him how to bake a brisket very well! Cooking this brisket low and slow makes the meat tender and it just falls apart. The flavor is really good between the onions and rubbing the meat down with the onion soup mix... so yummy. The juice poured over the meat and veggies is perfect. A great family meal!

Number Of Ingredients 8

6-8 lb beef brisket, with or without deckel, your choice
4 beef bouillon, cubes, crushed into a powder (or use the equivalent powdered bouillion)
4-5 c water
4 lb red or yukon gold potatos, quartered
2 white onions, large and coarsely chopped
5 carrots, cut in 1-2 inch pieces
2 pkg onion soup mix (like knorr, liptons, or campbell)
1 pkg mushroom soup mix

Steps:

  • 1. Preheat the oven to 375. Rinse off brisket and pat dry. If there's too much fat on the meat, trim it. But be careful not to remove too much. Remember, fat adds flavor.
  • 2. Combine the two packages of soup mix in a bowl. Coat the brisket with oil or spray with cooking spray. Then, rub the instant soup mix liberally into both sides of the brisket, using it all.
  • 3. Place the chopped onions on the bottom of a large dutch oven and put the meat directly on top. Add cut up carrots, and potatoes to the dutch oven. Add enough water to the dutch oven to come up almost to the top of the roast.
  • 4. In another sauce pan, boil 1 1/2 cup of water. Once boiling, add the bouillon. Keep stirring until dissolved. Add mushroom soup mix. Then add to dutch oven.
  • 5. Cover the pot and put in the preheated oven to cook. Cook at 375 for 3-4 hours. At 2.5 hours, check the liquid level in the pot - you want it to reduce, just not gone. Add more water or beef stock as needed. At 3 hours, check the meat for tenderness. When the brisket is done, it will come close to falling apart. Remove from oven. Take the meat out. Let it cool in the fridge. It cuts better when its cold. When you're ready to eat, reheat the "gravy" in the pot and ladle the heated liquid over the sliced meat. If the meat isn't hot enough, you can reheat it in the oven or microwave. Just be mindful of how long its been cooking.
  • 6. Serve everything together in a big serving pot or platter and enjoy. This is particularly good served open faced on top of some good Jewish rye bread. As I mentioned in step 4, if you want to slice the brisket, its best to prepare it the day before, cool it in the fridge and slice it cold. It slices much easier and better when cold. Then put it back in the pot with the potatoes, etc. only to reheat when ready for supper. Doing it this way, also gives you a chance to remove some/most of the fat from what was left in the pot.

1 beef brisket (4 to 5 pounds)
2 large onions, sliced
1 cup ketchup
1 tsp salt
1/2 cup Worcestershire sauce
3 dashes of Tabasco
1 tsp chili powder
1 tbsp brown sugar
Four 14 1/2 cans whole white potatoes, drained
One 1 pound bag baby carrots

Steps:

  • Preheat the oven to 400 Place the brisket, fat side up, in a roasting pan. Brown in the oven,uncovered, for 30 minutes. Remove from the oven and lay the onions over the meat. Bring all of the ingredients for the sauce to a boil in a small saucepan. Pour the hot sauce over the meat. Reduce the oven temperature to 325 and cook the brisket for 1 1/2 hours, basting often. Remove from the oven and let cool. Cover with aluminum foil and refrigerate overnight. When ready to serve, preheat the oven to 300. Remove any fat that has congealed. Slice the meat and return to the pan. Add the carrots and potatoes. Bake, covered, until the meat is very tender, about 1 1/2 hours.
