SPINACH AND BACON QUICHE



Spinach and Bacon Quiche image

Quiches don't have to be difficult to make. This delicious Swiss cheese, spinach and bacon quiche is made using refrigerated pie crust making this a fast quiche to whip up. Perfect for brunch, lunch or showers.

Number Of Ingredients 8

1 9 inch fitted to a 9 inch glass pie plate refrigerated piecrust
1 1/2 cups shredded Swiss cheese
1 lb cooked and crumbled bacon
2 cups chopped packed fresh baby spinach
6 large beaten eggs
1 1/2 cups heavy cream
to taste salt
to taste black pepper

Steps:

  • Preheat the oven to 375 °F. Combine the eggs, cream, salt and pepper in a food processor or blender. Layer the spinach, bacon and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

This is not low fat by any stretch of the imagination. But there are several places where one could make some substitutions to bring the fat content down.

1 9" pie crust
6 eggs
3/4 cup half and half
1 lb bacon, cooked and crumbled
1 cup shredded cheddar or Jack cheese
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Cook and crumble bacon
  • Bake pie crust at 350 for five minutes (it will not be done)
  • Beat eggs and half and half together; add salt and pepper
  • Sprinkle crumbled bacon and shredded cheese on bottom of semi-cooked pie crust. You might save a little bacon to use as garnish for each piece. Pour egg mixture on top of eggs and bacon in crust. Bake for about 40 minutes until the center is no longer jiggly! Makes 8 servings.
