VINEGAR PIE

Vinegar Pie image

This Vinegar Pie is a super simple old fashioned pie that has been around for years! It gets it's flavor from a little bit of vinegar and is topped with whipped cream and a sprinkle of nutmeg!

Provided by Lindsay

Categories     Dessert

Time 1h

Number Of Ingredients 8

1 refrigerated pie crust
4 large eggs
1 1/2 cups (310g) sugar
1/4 cup (56g) butter, melted
1 1/2 tbsp white vinegar
1 tsp vanilla extract
Whipped cream, optional
Nutmeg, optional

Steps:

  • Place the pie crust in a 9 inch pie pan and crimp the edges. Pre-bake according to the temperature and time of the package directions. Use pie weights to keep the crust from puffing up too much when baking.
  • 2. Adjust oven temperature to 350°F, if needed.
  • 3. In a large bowl, combine the eggs, sugar, butter, vinegar and vanilla extract. Whisk well to combine, then pour into pre-baked pie shell.
  • 4. Bake pie for 30-40 minutes, or until pie is set but a little jiggly.
  • 5. Allow pie to cool to room temperature, then refrigerate pie until cool and firm and serve.
  • 6. Serve pie with whipped cream and a sprinkle of nutmeg. Don't skip the nutmeg - trust me!

Time 1h40m

Yield 8 servings.

Number Of Ingredients 7

2 cups sugar
3 tablespoons all-purpose flour
1/4 to 1/2 teaspoon ground nutmeg
Pastry for double-crust pie
1/2 cup butter, cubed
2/3 cup white vinegar
1 quart hot water

Steps:

  • Preheat oven to 450°. Whisk together sugar, flour and nutmeg; set aside. On a lightly floured surface, roll one-third of pie dough to a 1/8-in.-thick circle; cut into 2x1-in. strips. Layer a deep 12-in. enamel-coated cast-iron skillet or ovenproof casserole with half the strips; sprinkle with half the sugar mixture. Dot with half the butter. Repeat sugar and butter layers., Roll remaining two-thirds of pie dough to a 1/8-in.-thick circle. Place over filling, pressing against sides of skillet or casserole. Cut a slit in top. Add vinegar to hot water; slowly pour vinegar mixture through slit. Liquid may bubble up through crust; this is normal. To catch spills, line an oven rack with foil., Bake until crust is golden brown, about 1 hour. Cover edge loosely with foil during the last 15-20 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack.

PAULA'S PERFECT PIE CRUST

Paula's Perfect Pie Crust image

A classic pie dough recipe that works great for all pies!

Provided by Paula Deen

Time 15m

Yield 15

Number Of Ingredients 6

2 1/2 cups all purpose flour
1/4 teaspoon fine salt
3 tablespoons granulated white sugar
1/4 cup cold vegetable shortening
12 tablespoons cold and cubed butter
1/4 to 1/2 cup ice water

Steps:

  • In a large mixing bowl, sift together the flour, salt and sugar. Add the shortening and break it up with your hands as you start to coat it all up with the flour. Add the cold butter cubes and work it into the flour with your hands or a pastry cutter. Work it quickly, so the butter doesn't get too soft, until the mixture is crumbly, like very coarse cornmeal. Add the ice water, a little at a time, until the mixture comes together forming a dough. Bring the dough together into a ball.
  • When it comes together stop working it otherwise the dough will get over-worked and tough. Divide the dough in half and flatten it slightly to form a disk shape. Wrap each disk in plastic and chill in the refrigerator for about 30 minutes. On a floured surface roll each disk out into a 10 to 11-inch circle to make a 9-inch pie.

RECIPE: OLD FASHION VINEGAR PIE, A WEST VIRGINIA DESSERT
2018-04-26 Hannah’s original recipe also calls for the addition of meringue topping, made with the leftover egg whites, after the fully baked pie crust is filled with the chilled cooked custard. I like to skip the meringue, instead baking the pie once more at around 350 degrees Fahrenheit for about 15 minutes, until the custard top becomes firm and develops a slight golden-brown color.
