SWISS STEAK
A stewed meat dish that is tender and flavorful.

Steps:
- Cut steak into serving-size pieces. Season, to taste, with garlic powder, salt and pepper. Dust meat with flour. In heavy skillet, brown both sides of meat in vegetable oil. Transfer to Dutch oven. Combine garlic, tomatoes, onion, bell pepper and 1 tomato-can measure of water. Pour over steak and simmer over low heat until meat is tender, about 1 1/2 hours, adding water if necessary to keep meat partially covered. Season, to taste, with additional salt and pepper. Hint: Cook this in a slow-cooker, according to manufacturers instructions, on low for a most fabulous dinner. Low heat on a slow cooker is about 200 °F and high heat on a slow cooker is about 300 °F.
- Note: to ensure tenderness, it is necessary to have the butcher run the round steak through a cuber.

- 1. Cut the steak into four serving size pieces. Place in crock pot. Add the rest of the ingredients and cook for 6 to 8 hours. This makes lots of gravy to go over rice or mashed potatoes as a side dish.
SWISS STEAK (PAULA DEEN)
I saw Paula make this on one of her shows last week and it looked delicious! Well, I tried it and it is delicious, so I decided to post it. Note: The recipe calls for 1 round steak, it is necessary to have this steak cubed (tenderized) by the butcher. I used round steak, and pounded the life out of it, and it turned out fine, but I would recommend following Paula's suggestion and having the butcher do it!

Steps:
- Cut steak into serving sized pieces. Season, with salt, pepper, and garlic powder. Dust meat with flour.
- In a dutch oven, heat oil and brown both sides of meat. Remove meat and drain excess oil.
- Combine garlic cloves, tomatoes, onion, green pepper and one can full of water. Mix with steak drippings in pan.
- Add steaks and cover. Simmer on low for 1 1/2 hours. Add extra water if needed to cover meat.
- This can also be cooked in slow cooker.
- Enjoy!

SLOW COOKER SWISS STEAK
I threw this together in my crock pot one day and we loved it! A little time consuming because I sauteed the vegetables and browned the meat first, but it's well worth it. Browning the meat first gives it a better flavor. This is great with mashed potatoes!

- In a shallow bowl, mix the flour, salt, and pepper. Lightly coat the round steak pieces in the flour mixture.
- Heat the oil in a skillet over medium heat, and saute the celery, onion, and carrots about 5 minutes, until tender. Remove from heat, and set aside. Mix in the round steak pieces, and cook until lightly browned.
- Place the vegetables and steak in a slow cooker. Mix in the tomatoes with juice, Worcestershire sauce, and brown sugar.
- Cover, and cook 8 to 10 hours on Low, until the round steak is very tender.

CROCKPOT SWISS STEAKS
Tender pieces of steak are slow-cooked with a rich tomato brown gravy!

- Add sliced carrots, celery, onion, & garlic to the bottom of a slow cooker.
- Pound steaks with a meat tenderizer to ¼ inch thickness and season with salt and pepper (cube steaks do not need to be pounded). Put flour in a shallow dish or plate and dredge each steak in the flour mixture.
- Heat oil in a skillet over medium-high heat and brown steaks on both sides, about 2 minutes per side adding more oil if needed.
- In the same pan, add wine and scrape up any brown bits. Add to the slow cooker with remaining ingredients except for the cornstarch.
- Cover and cook for 6-8 hours on low or 4-5 hours on high or until steaks are fork tender.
- Serve over mashed potatoes or noodles.

I got this from a magazine recently, I think it was Paula Deen's magazine. I've never used tomato of any kind in my Swiss Steak, but after I made this DH and I both decided we always want it this way! I serve this with mashed potatoes, but it will go well with noodles or rice, too.

- Heat the oil in a skillet, then coat the steak with flour and brown in the oil.
- Remove the steak from the skillet and drain.
- Place the potatoes, carrots and onion in the bottom of the Crock-Pot.
