cooking spray
4 pounds potatoes, unpeeled, cut into 1-inch cubes
salt and ground black pepper to taste
1 pound bacon
1 ½ cups shredded Colby-Monterey Jack cheese, divided
1 onion, minced
½ cup sour cream
½ cup mayonnaise
1 bunch chives, diced, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking pan with cooking spray.
  • Season potatoes with salt and pepper and spread in the baking pan.
  • Roast potatoes in the preheated oven until easily pierced with a fork, 25 to 35 minutes. Let cool, 10 to 15 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels; crumble into smaller pieces.
  • Combine 3/4 cup Colby-Monterey Jack cheese, onion, sour cream, mayonnaise, and most of the chives in a large bowl. Stir in potatoes and crumbled bacon. Garnish with remaining 1/4 cup Colby-Monterey Jack cheese and chives.
  • Refrigerate salad before serving, 4 hours to overnight.

Baked potatoes, crispy bacon and sharp Cheddar are tossed in a tangy sour cream dressing to create the ultimate summery potato salad that tastes exactly like the loaded winter favorite. Bake and cool the potatoes the night before to make day-of prep even easier.

Yield 6 to 8 servings (about 8 cups)

Number Of Ingredients 9

6 small russet potatoes (about 3 pounds)
2 tablespoons unsalted butter, softened
Kosher salt and freshly ground black pepper
8 slices bacon
1 cup sour cream
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
6 ounces sharp Cheddar, cut into 1/3-inch cubes (about the size of a pea)
2 scallions, thinly sliced, white and green parts separated

Steps:

  • Position 2 racks in the center of the oven, and preheat to 375 degrees F. Thoroughly wash and dry the potatoes, then prick each all over 8 to 10 times with a fork. Rub the butter evenly on the potatoes, and sprinkle liberally with salt and pepper. Place the potatoes on a baking sheet with at least 1 inch of space between them.
  • Put the bacon in a single layer on a rimmed baking sheet lined with parchment paper.
  • Place both baking sheets in the oven, the bacon below the potatoes. Cook the bacon, flipping halfway through, until golden brown and crispy, 18 to 20 minutes; transfer to a paper-towel-lined plate, let cool and then crumble. Bake the potatoes, flipping halfway through, until the skin is crispy and a small knife inserted in the center goes in and out without any resistance, 45 to 50 minutes. Transfer the potatoes to a cutting board and let cool completely, about 2 hours; quarter each cooled potato lengthwise, then cut into 1-inch pieces.
  • Whisk together the sour cream, mayonnaise, apple cider vinegar, 2 tablespoons water and 1 teaspoon each salt and pepper in a large bowl. Add the potatoes, bacon, Cheddar and white parts of the scallions, and gently stir to combine. Season with additional salt and pepper if needed.
  • Serve immediately, or refrigerate until ready to serve. Garnish with the scallion greens right before serving.

OLD-FASHIONED POTATO SALAD

1 (3-pound) bag small red potatoes, quartered
½ cup mayonnaise
½ cup sour cream
1 tablespoon minced fresh dill
1 teaspoon salt
1 teaspoon ground black pepper
10 slices bacon, cooked until crisp and crumbled
5 hard-cooked eggs, peeled and chopped
1 cup chopped celery
¼ cup minced red onion

Steps:

  • In a large Dutch oven, bring potatoes and water to cover to a boil over medium-high heat. Reduce heat, and simmer for 8 minutes or just until tender. Drain well, and let cool completely.
  • In a large bowl, whisk together mayonnaise and next 4 ingredients; stir in potatoes, bacon, and all remaining ingredients until well combined. Cover and refrigerate for up to 3 days.

HERBED POTATO SALAD

3 pounds small red potatoes, cut into ¾-inch pieces
5 teaspoons salt, divided
4 tablespoons olive oil, divided
½ cup finely chopped sweet onion
¼ cup tarragon vinegar
3 tablespoons chopped fresh chives
3 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill
1 tablespoon whole-grain mustard
½ teaspoon ground black pepper

Steps:

  • In a large saucepan, bring potatoes, 3 teaspoons salt, and cold water to cover to a boil over high heat. Reduce heat, and simmer for 10 minutes or until tender. Drain well. Meanwhile, in a small skillet, heat 1 tablespoon olive oil over medium heat. Add onion, and cook, stirring occasionally, for 10 minutes until or until tender. In a large bowl, whisk together vinegar, remaining 5 ingredients, remaining 3 tablespoons oil, and remaining 2 teaspoons salt; stir in potatoes and onions. Cover and refrigerate until ready to serve.

½ (8-ounce) package cream cheese, softened
¾ teaspoon ground black pepper

2 cups shredded Cheddar cheese
1 (12-ounce) package fresh broccoli florets
¾ cup chopped green onion
6 slices bacon, cooked until crisp and crumbled

Steps:

  • Preheat oven to 375º. Spray a 13x9-inch baking dish with nonstick cooking spray.
  • In a large bowl, stir together potatoes, cream cheese, and pepper until well combined. Stir in half each of chicken, cheese, broccoli, green onion, and bacon. Spread mixture in prepared pan, and layer with remaining chicken, broccoli, green onion, and bacon; sprinkle with remaining cheese.

5 cups peeled and diced sweet potato (about 1 1/2 pounds)
2 tablespoons olive oil
3/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
4 slices bacon
1/2 cup chopped celery
1/4 cup chopped green onion
3/4 cup sour cream
2 tablespoons sherry vinegar

Steps:

  • Preheat oven to 450°. Line a rimmed baking sheet with aluminum foil, and spray with nonstick cooking spray. In a large bowl, combine red and sweet potatoes, olive oil, salt, and pepper, tossing gently to coat. Spread mixture in a single layer on prepared pan. Bake for 25 to 30 minutes or until potatoes are tender. Let potatoes cool to room temperature. Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove bacon to paper towels to drain. Crumble bacon. In a large bowl, place potatoes, bacon, celery, and green onion. In a small bowl, combine sour cream and vinegar. Add to potato mixture, tossing gently to coat. Cover and refrigerate until ready to serve.

1 tablespoon fresh parsley, chopped

1 tablespoon stone ground mustard

1/2 teaspoon ground black pepper

Steps:
