BROCCOLI-CHEDDAR QUICHE

- Preheat oven to 375º. Unroll pie crusts, and stack together on a clean work surface. Roll crusts into a 14-inch circle. Fit pie dough into a 9½ -inch glass pie plate. Fold over edges and crimp. Using a fork, prick bottom and sides of crust. Line with parchment paper, and fill with pie weights or dried beans. Bake for 20 minutes or until lightly browned. Remove weights and paper. In a medium skillet, cook bacon over medium heat until crisp. Remove bacon to paper towels to drain. Crumble bacon. In a large saucepan, cook broccoli florets in boiling salted water to cover for 3 to 4 minutes or until crisp-tender; drain. Plunge into ice water to stop the cooking process; drain well and pat dry with paper towels. In a large bowl, whisk together eggs, milk, cream, salt, and pepper until smooth and light in color. Sprinkle bacon, broccoli, and ½ cup cheese in baked crust. Pour egg mixture over bacon mixture. Bake for 20 minutes. Sprinkle with remaining ¼ cup cheese, and bake 10 minutes longer or until center is set.

Crustless quiches are so easy without the pie crust step! This spinach quiche made without a crust calls for frozen chopped spinach, sour cream, cottage cheese, cheddar and Parmesan. Bake until set and cut into squares for serving.

- Preheat the oven to 325 °F. Spray an 8 by 8-inch baking dish with cooking spray.
- Unwrap the spinach and put it, box and all, on a plate. Microwave and cook on high power for 4 minutes. Allow it to cool and remove it from the box. Squeeze out all of the liquid out of the spinach and put it into a medium bowl.
- Combine the eggs, sour cream, cottage cheese, Parmesan, flour, salt and pepper, in a medium bowl. Stir together, or blend in food processor until the mixture is smooth, about 1 minute. Pour the mixture into the bowl with the spinach. Add the cheddar and blend with a spoon until well mixed. Pour the spinach mixture into the baking dish and smooth out the top.
- Bake until set, about 45 minutes. Remove the baking dish from the oven. It will be puffed up, but will fall slightly as it cools. Allow it to cool, then, refrigerate. Cut it into squares and serve.
BACON AND SPINACH CRUSTLESS QUICHE
Hold the crust: this simple egg dish uses a sprinkle of Parmesan cheese instead of a crust.

- Preheat the oven to 350 degrees F. Brush a 9-inch pie pan with the butter and sprinkle the grated Parmesan evenly on top. Put the pan on a rimmed baking sheet.
- Whisk the half-and-half, flour, cayenne, eggs, egg yolks, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl. Spread the spinach and bacon out in the prepared pie pan. Pour the egg mixture over top and sprinkle with the cheese and chives.
- Bake until the quiche is just set in the center, 40 to 50 minutes. Transfer to a wire rack to cool and then slice into wedges. Serve with more baby spinach if using.
HASH BROWN QUICHE
Not many quiches are gluten free but this one is! This ham and cheddar quiche has a hash brown crust. It also has green onions to boost its flavor. Enjoy this quiche for brunch with a side of fresh fruit and mimosas.

- Preheat oven to 450 °F.
- Gently press the drained hash browns between paper towels to dry them as best as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides to form a crust. Bake for 20 to 25 minutes until golden brown and starting to crisp.
- Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the hash brown crust is ready pour the egg mixture over it and return to the oven.
- Lower the oven temperature to 350 °F and bake for about 30 minutes until the quiche is light golden brown on top and puffed.
SPINACH AND BACON QUICHE
Quiches don't have to be difficult to make. This delicious Swiss cheese, spinach and bacon quiche is made using refrigerated pie crust making this a fast quiche to whip up. Perfect for brunch, lunch or showers.

CRUSTLESS SPINACH CHEESE QUICHE
This is my take on Paula Deen's recipe. It is more like a casserole without the crust but just as rich and yummy. Her recipe calls for cottage cheese which I do not like so I used creamed spinach instead of chopped, some milk and extra parmesan cheese to make up the difference.

- Microwave the creamed spinach according to package directions, but only enough to thaw it so that it can be mixed with ingredients, if it is too hot it will cook the egg as it is mixed in . Set aside.
- Combine the eggs, sour cream, milk, Parmesan, flour, salt, and pepper, in a medium bowl. Stir together, or blend in food processor until the mixture is smooth, about 1 minute. Add creamed spinach and the Cheddar and blend with a spoon until well mixed. Pour the spinach mixture into the baking dish and smooth out the top.
- Bake until set, about 45 minutes. Remove the baking dish from the oven. It will be puffed up, but will fall slightly as it cools.
