CRANBERRY SCONES



Cranberry Scones image

Makes about 1 1/2 dozen

Number Of Ingredients 10

2 cups self-rising flour
1/2 cup granulated sugar
1 teaspoon apple pie spice
1/2 teaspoon kosher salt
4 tablespoons unsalted butter, cut into ½-inch pieces
1 cup fresh cranberries
1/2 cup plus 2 tablespoons whole buttermilk, divided
1 large egg, beaten
1 teaspoon vanilla extract
2 tablespoons turbinado sugar

Steps:

  • Preheat oven to 400°. Spray 2 (8-well) cast-iron wedge pans with nonstick cooking spray. In a large bowl, whisk together flour and next 3 ingredients. Using a pastry blender, cut in butter until mixture resembles coarse crumbs; stir in cranberries. Stir in 1/2 cup buttermilk, egg, and vanilla. Spoon dough into prepared pans. Dampen fingers with remaining 2 tablespoons buttermilk, and pat dough into wells; sprinkle with turbinado sugar. Bake for 20 minutes or until golden brown. Serve warm, or let cool completely on wire racks. Store in an airtight container for up to 3 days.

MOM'S APPLE PIE



Mom's Apple Pie image

You can't beat Mom's Apple Pie Recipe for an all-American dessert.

Number Of Ingredients 10

8 peeled & sliced, half Granny Smith, half Macintosh apples
2 sticks cold and cubed, plus 2 tablespoons cold and sliced unsalted butter
1 1/4 cups plus 1 teaspoon sugar
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
2 1/2 cups plus 3 tablespoons flour
1 teaspoon salt
1/4 to 1/2 cup ice water
1 lightly beaten, for egg wash egg
for dusting cinnamon sugar

Steps:

  • Preheat oven to 400 °F.
  • In a food processor combine the 2 1/2 cups flour, salt, 1 teaspoon sugar and pulse. Add in 2 sticks cubed, cold butter and slowly gradually add the ice water. Pulse until dough just comes together. Don't overwork the dough or it will make a tough crust.
  • Remove the dough from processor. Cut into two equal sections. Pat sections into discs and wrap in plastic wrap and place into refrigerator. Chill for 1 hour. (can be frozen for future use)
  • In a small mixing bowl bowl, combine cinnamon, nutmeg, 1 1/4 cups sugar and 2 tablespoons flour, set aside. In a large mixing bowl, add the peeled and sliced apples. Sprinkle spice and flour mixture over apples. Toss to coat.
  • Remove one chilled disc of dough from the refrigerator and roll out on a lightly floured surface, large enough to cover your pie pan. Shape to fit, cutting off any excess.
  • Pour apple mixture into pie pan and add your 2 tablespoons sliced butter to the top of the mixture. Remove second dough disk from refrigerator and roll out large enough to fit the top of your pie with an overhang. Place pie dough on top of apple mixture and crimp edges to seal. With a knife, add four slits to your piecrust. Lightly brush egg wash onto top of dough. Sprinkle liberally with cinnamon sugar.
  • Place onto a baking tray into preheated oven for approximately 50 minutes or until golden brown and bubbly. Allow pie to rest until cool before slicing. Refrigerate any uneaten portions.

HOMESTYLE APPLE PIE

Makes 1 (9-inch) deep-dish pie

Number Of Ingredients 7

1 (14.1-ounce) package refrigerated pie crust
1/4 cup plus 1 tablespoon granulated sugar, divided
1/4 cup firmly packed brown sugar
3 tablespoons cornstarch
1 teaspoon ground cinnamon
6 large Granny Smith apples, peeled, cored, and sliced
2 tablespoons heavy whipping cream

Steps:

  • Preheat oven to 350°. On a lightly floured surface, roll out 1 pie crust into a 12-inch circle. Fit crust into a 9-inch deep-dish pie plate according to package directions. In a large bowl, combine 1/4 cup granulated sugar, brown sugar, cornstarch, and cinnamon. Add apples, tossing gently to coat. Spoon mixture into prepared crust. On a lightly floured surface, roll out remaining pie crust. Using a pastry wheel or knife, cut into ½-inch-wide strips. Arrange strips in a lattice design over apple mixture. Trim pastry strips even with pie edge. Press edges of crust together. Fold edges under, and crimp. Brush crust with cream, and sprinkle with remaining 1 tablespoon granulated sugar. Bake for 45 to 50 minutes or until lightly browned. Remove to a wire rack, and cool at least 30 minutes before serving.

This is a modified apple pie recipe my mother has had for years. I prefer a combination of Braeburn, Fuji, and McIntosh apples.

4 cups peeled and sliced apples
2 cups cranberries
¾ cup white sugar
1 tablespoon cornstarch

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Fit a pie crust into a 9-inch pie dish and arrange sliced apples into crust. Spread cranberries over apples. Whisk sugar, cornstarch, and cinnamon in a small bowl and sprinkle mixture over cranberries. Distribute butter pieces over pie filling. Place remaining crust over filling, crimp both crusts together, and cut several slits into top crust to vent steam.
  • Bake until pie is browned and fruit filling is bubbling, 45 minutes to 1 hour.

1 double pie crust (1 top, 1 bottom) purchased, or your favorite crust recipe.
4 c granny smith apples, cored and sliced and peeled (about 4)
2 c fresh or frozen cranberries
2 c sugar
1/4 c cornstarch
1/4 c orange juice
1/4 tsp lemon juice
1/2 tsp ground cinnamon
1/2 tsp apple pie spice
1/8 tsp ground nutmeg
2 Tbsp butter

Steps:

  • 1. Preheat oven to 425°F.
  • 2. In a large bowl, combine sugar, cornstarch, orange juice, lemon juice, cinnamon, apple pie spice and nutmeg. Add apples and cranberries; toss gently.
  • 3. Line a 9-in. pie plate with bottom pastry. Add filling; dot with butter. Roll the remaining pastry to fit top of pie. Cut vents in pastry, using a small apple cutter if desired. Place over filling; seal and flute the edges.
  • 4. Bake at 425° F for 10 minutes. Reduce heat to 350° F; bake 50 minutes longer or until crust is golden brown and filling is bubbly. Let pie cool on wire cooling rack completely before serving to let pie set.
  • 5. NOTE: No Apple pie spice?? Make your own by using 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg and 1/8 teaspoon cardamom to make 1 tsp of apple pie spice.

Refrigerate while preparing filling., In a large bowl, combine the sugar and next 6 ingredients. Add apples and cranberries; toss gently. Spoon filling into prepared pie plate; dot with butter., Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. , Bake for 10 minutes. This is a wonderful twist on the traditional apple pie - great for fall! It calls for Pippin apples, but I usually use a combination of several kinds. Occasionally I add a bit of cinnamon, too!

1 cup dried cranberries
⅔ cup white sugar
3 tablespoons all-purpose flour
½ teaspoon ground allspice
2 ¼ pounds Pippin apples - peeled, cored and thinly sliced
1 ½ tablespoons brandy
1 teaspoon vanilla extract
1 recipe pastry for a 9 inch double crust pie

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Position oven rack in the bottom third of the oven.
  • In a medium bowl, toss together the dried cranberries, sugar, flour and allspice. Mix in the apples, brandy and vanilla. Place bottom crust into a 9 inch round pie pan so that it hangs 1 inch over the edges. Pour filling into the crust and cover with top crust. Seal and flute the edges. Cut slits in the top using a small knife.
  • Bake in the preheated oven for 60 to 65 minutes, or until apples are tender and crust is golden.

6 large apples (peeled, cored, sliced,)
125 ml sugar (to taste, )
30 ml lemon juice
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp Salt
30 ml butter
9 inch pastry pie shells (x 2)
15 ml sugar

Steps:

  • Combine the apples, sugar, lemon juice, cinnamon, nutmeg, and salt in a mixing bowl and toss to coat the apple slices.
  • Line a pie plate with one of the pastry shells and transfer the apples to the shell.
  • Dot the apples with the butter.
  • Moisten the edge of the pastry and place the second pastry shell on top.
  • Trim and crimp the edge, and make several slits in the top with a sharp knife.
  • Sprinkle the sugar and cinnamon mixture over the top.
  • Bake in a preheated 450F (230C) oven for 10 minutes, then reduce the heat to 350F (180C) and bake for an additional 25 to 40 minutes, depending on the type of apples used.
  • The pie is done when the apples are tender and the crust is golden brown.
  • Serve warm, cold, or at room temperature. Makes one 9-inch (22 cm) pie.

1 (9 inch) deep dish pie crust
6 apples - peeled, cored and chopped
1 (12 ounce) package fresh cranberries, roughly chopped
1 ½ cups white sugar
⅓ cup quick-cooking tapioca
1 ½ cups all-purpose flour
¾ cup packed brown sugar
1 teaspoon ground cinnamon
½ teaspoon salt
⅔ cup unsalted butter
1 egg, lightly beaten

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Invert pie shell over another pie pan of equal size. This will keep the crust from shrinking down into the pan. Bake in this position for 10 minutes, until partially baked. Turn right side up, and remove the extra pie pan from inside the crust.
  • In a large bowl, combine apples, cranberries, and sugar. Cover, and set aside for about 20 minutes. Mix in tapioca, and set aside for 15 to 20 minutes, until tapioca has absorbed fruit juice. Spread mixture into the partially baked pie shell.
  • In a medium bowl, combine flour, brown sugar, cinnamon, salt, and butter. Work mixture with fingertips until crumbly. Spread mixture over the apple-cranberry filling. Brush exposed pie shell with lightly beaten egg.
  • Place the pie on a cookie sheet to catch drips. Bake 45 to 60 minutes on the bottom rack of the preheated oven, or until apples are tender when tested with a wooden pick.

Juice of 1 orange
Zest of 1 orange

1/4 cup all-purpose flour

Steps:

  • To make filling, mix all filling ingredients together in a medium bowl.
  • To make topping, mix all topping ingredients together in a small bowl. The topping mixture should clump when pressed together.
  • Add filling to cold pie crust and scatter topping all over the filling. Bake at 400 degrees until the juice in the center of the pie is bubbling, about 1 hour. If the crust or topping becomes too dark, cover the pie loosely with foil.

All-purpose flour, for surface
5 pounds heirloom baking apples, such as Arkansas Black, Carpentin, Jonathan, Knobbed Russet, or Northern Spy (about 10)
1 1/2 cups fresh or thawed frozen cranberries
3/4 cup granulated sugar
1/3 cup all-purpose flour
2 tablespoons fresh lemon juice
1 teaspoon ground cinnamon
Salt
2 tablespoons cold unsalted butter, cut into small pieces
1 large egg yolk lightly beaten with 2 tablespoons heavy cream, for egg wash
2 tablespoons sanding sugar

Steps:

  • Preheat oven to 425 degrees. Make the crusts: Roll out small pate brisee disk to a 1/8-inch thickness on a floured surface. Fit dough into a 9-inch pie plate. Trim edges, leaving a 1-inch overhang. Repeat rolling with large pate brisee disk, and cut out a 12-inch circle; transfer to a parchment-lined baking sheet. Refrigerate crusts until firm, about 30 minutes.
  • Meanwhile, make the filling: Peel and core apples. Cut each into 1/2- to 1-inch-thick wedges, and transfer to a bowl. Toss in cranberries, granulated sugar, flour, lemon juice, cinnamon, and 1/2 teaspoon salt.
  • Transfer filling to bottom crust; dot with butter. Cover with top crust. Fold edges under; crimp. Cut eight 2 1/2-inch vents into dough to let steam escape. Freeze until firm, about 30 minutes.
  • Gently brush top crust with egg wash; sprinkle with sanding sugar. Bake pie set on a rimmed baking sheet for 15 minutes. Reduce oven temperature to 375 degrees. Bake until crust is golden and juices are bubbling, 1 hour 20 minutes more. (Tent with foil if crust is browning too quickly.) Let pie cool completely in plate set on a wire rack. Pie can be stored at room temperature for up to 3 days.
