This cake is practical and can be for many uses. You can also add fruit in it if you wish.

1 ½ cups all-purpose flour
½ teaspoon salt
2 teaspoons baking powder
½ cup butter, room temperature
1 cup white sugar
2 eggs, room temperature
1 teaspoon vanilla extract
¾ cup milk, room temperature

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square baking pan. Line bottom with parchment or wax paper, or dust lightly with flour.
  • Sift together the flour, salt, and baking powder.
  • Beat butter and white sugar until fluffy and light in color. Gradually add eggs, beating well after each addition; stir in vanilla. Add the sifted dry ingredients to the creamed mixture alternately with the milk. Stir until just blended (see Cook's Note for Blueberry Cake variation). Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for until cake springs back when lightly touched, about 30 minutes. Let cool in pan for 10 minutes before inverting onto wire rack to cool completely.

9 cups granulated sugar
6 cups cake flour
1/4 cups salt
1/4 cups baking soda
2 3/4 cups solid shortening
4 cups butter
2 cups whole eggs
5 cups buttermilk
1/8 cup vanilla extract
8 cups egg whites
8 cups granulated sugar

Steps:

  • Preheat oven to 320 degrees F.
  • Mix together sugar, flour, salt, soda, shortening and butter in the bowl of a stand mixer. Mix on 2nd speed for 3 minutes. Then add whole eggs, buttermilk and vanilla to the mixture and beat again for 3 minutes on 2nd speed. In a separate bowl, beat the egg whites and sugar into a meringue state. Then gently fold the meringue into the buttermilk mixture. Pour into 4 parchment lined sheet pans or 4 (4 by 13-inch) round cake pans. Bake until a toothpick comes out clean when inserted in the center of the cake.

1 cup butter, sofened
1 1/2 cups sugar
3 large eggs
3 large egg yolks
1 tablespoon vanilla
3 1/4 cups cake flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 1/4 cups milk

Steps:

  • Butter and flour two 9-inch round cake pans and preheat oven to 350 degrees.
  • In mixer bowl, on medium-high speed, beat butter and sugar until fluffy (4 to 5 minutes).
  • Add eggs, then yolks,one a time, beating well after each, scraping sides of bowl occasionally.
  • Beat in vanilla.
  • In another bowl, mix flour, baking powder and salt.
  • Mix in about a third of flour mixture into butter mixture.
  • Stir in half the milk, just until blended.
  • Stir in another third of flour mixture, then remaining milk and finally the rest of the flour mixture.
  • Spread batter equally into two the two cake pans.
  • Bake until wooden skewer or toothpick inserted in the center comes out clean (25 to 30 minutes).
  • Cool on racks in pans for 10 minutes, then inverte cakes onto racks and remove pans.
  • Cool completely before forsting.

1.5c Brown Sugar

2T Vanilla
2c Flour
1t Baking Soda
1t Baking Powder
.5t Salt
1c Milk

Steps:

  • Beat butter and brown sugar 3 minutes on high in large bowl of electric mixer, until light and fluffy. Beat in eggs, 1 at a time, and extract.
  • Stir together flour, baking soda, baking powder, and salt. On low, beat half of dry mixture into butter mixture until blended; slowly add milk and beat until blended. Add remaining flour mixture and beat until well blended.
  • spread into greased and floured (or use non-stick spray with flour) into pan.
  • Bake at 350, 30 minutes in a 9 inch pan.

2 1/4 cups granulated sugar

1 1/2 cups all-purpose flour
1 1/2 teaspoons vanilla extract
Cream Cheese Layer 4 ounces cream cheese, room temperature
1 egg, room temperature
1/3 cup granulated sugar
1/2 teaspoon vanilla extract

Steps:

  • 1 Preheat oven to 325 2 Spray 4 mini springform pans with baking spray 3 Prepare the cake batter. In a stand mixer cream butter, cream cheese, and sugar for 1-2 minutes. Add vanilla. Add eggs one at a time and beat on low for 20 seconds after each addition. Whisk flour and salt, then add to creamed mixture. Beat on low until just incorporated, making sure not to over beat. 4 Prepare the cream cheese layer. In a small bowl whip together cream cheese and granulated sugar until creamed, add egg and vanilla extract. 5 Pour cake batter into prepared springform pans then top with a layer of the cream cheese mixture. 6 Bake for 60 - 75 minutes, or until tops are golden brown and a toothpick comes out clean when inserted into the center of the cakes. 7 Cake can be made a day ahead. When ready to serve microwave until hot approx 1 minute on 80% power then with a kitchen blow torch brûlée the top and sides of the cake to caramelize the sugar crystals. 8 To serve this cake a la "Mastro's", top with a generous scoop of vanilla ice cream, drizzle with raspberry coulis and top with a sprig of fresh mint.

1 package yellow cake mix
2 eggs, (room temperature)
1 teaspoon vanilla extract
1/2 cup (113g) butter, ( melted)
1 package (8 ounces) cream cheese, ( room temperature)
2 eggs
1 teaspoon vanilla
1/2 cup (113g) butter, (melted)
4 cups confectioners sugar

Steps:

  • Heat oven to 350 degrees. (I set my convection oven to 325°F)
  • In a bowl, combine cake mix, 2 eggs, 1 tsp vanilla and the melted butter. Mash together with a fork until all ingredients are fully incorporated.
  • Spray a 9-inch by 3-inch round cake pan or a 9-inch by 13-inch pan with baking spray or use a piece of parchment in the bottom of the pan.
  • Press cake mixture into bottom of prepared pan and get it as flat as possible.
  • Place cream cheese, remaining eggs, vanilla and melted butter in a stand mixer and beat on medium speed until creamy.
  • Add in confectioners sugar 1 cup at a time (and on low speed) until all sugar has been added.
  • Pour cream cheese mixture over cake mixture.
  • Bake for 35-45 minutes. I moved mine from the oven when the edges were brown, but the center was still a bit jiggly. You do not want to over cook.
  • Allow to cool before serving.
