SWEET POTATO AND LENTIL PATTIES



Sweet Potato and Lentil Patties image

Really tasty patties that are somewhat healthier.

1 ½ cups water
1 cup red lentils
2 cups peeled and cubed sweet potato
1 head broccoli, broken into small florets
1 tablespoon olive oil
½ yellow onion, chopped
5 ounces spinach
3 ounces shredded Colby-Monterey Jack cheese
5 cloves garlic, minced
2 eggs
⅓ cup all-purpose flour
1 ½ tablespoons vegetable seasoning (such as La Grille®)
1 teaspoon ground black pepper
½ cup oil for frying, divided

Steps:

  • Combine 1 1/2 cup water and lentils in a small saucepan; bring to a boil. Reduce heat, cover, and simmer until lentils are soft, about 20 minutes. Drain any excess water.
  • Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until soft, about 10 minutes. Drain.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add spinach; cook and stir until wilted, about 5 minutes more. Pour off any excess cooking liquid from the skillet.
  • Combine lentils, sweet potatoes, broccoli, onion and spinach mixture, Colby-Monterey Jack cheese, and garlic in a large bowl. Mix well to combine.
  • Whisk eggs, flour, vegetable seasoning, and black pepper into a smooth paste in another bowl. Mix paste into sweet potato mixture. Shape into patties.
  • Heat 2 tablespoons oil in a nonstick skillet over medium heat. Pan-fry patties, working in batches, until golden, about 3 minutes per side. Repeat with remaining oil and patties.

I make this salad for almost every large family gathering I attend. It is ALWAYS a great hit and there is seldom any left over. It is a great pasta salad which can easily be made the day before. You can vary the ingredients by using fresh broccoli, cauliflower, mushrooms, cucumbers, etc.

1 ½ pounds seashell pasta
1 (6 ounce) can pitted black olives, chopped
2 large tomatoes, chopped
4 ounces sliced pepperoni sausage, each slice cut in half
½ cup chopped green olives
3 bunches green onions, chopped
2 cups chopped ham
2 cups shredded mozzarella cheese
1 (16 ounce) bottle zesty Italian dressing

Steps:

  • In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
  • In a large bowl, combine the pasta, black olives, tomatoes, pepperoni, green olives, green onions and ham or turkey. Before serving, add shredded mozzarella and dressing. Toss well and serve.

2 cups mashed potatoes (cooled)
1 egg (beaten)
1 onion (minced)
1/4 cup all-purpose flour
1/2 cup Parmesan cheese (grated)
1/4 teaspoon salt
1/8 teaspoon white pepper
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • Gather the ingredients.
  • Mix together the mashed potatoes, beaten egg, and onion in a medium bowl.
  • Add the flour, cheese, salt, and pepper, and stir well with a wooden spoon.
  • In a large nonstick skillet over medium heat, heat the olive oil and butter together until the butter melts and the mixture starts to sizzle.
  • Drop about 1/4 cup of the potato mixture into the frying pan, patting it into 3-inch circles that are about 1/2 inch thick. Cook the potato patties until the bottom is browned and crisp, which will take about 3 to 4 minutes.
  • Carefully turn each patty over with a spatula and cook the second side until it is brown and crisp, about 3 to 4 minutes longer.
  • Remove the patties from the pan and drain briefly on paper towels.
  • Serve the patties immediately with ketchup or salsa or any other sauce you'd like. Enjoy.

My Potato Salad was entered in a cooking contest In NY and won 1st place. I live in NSB FL now and Everyone seams to like it here too

5 lb potatoes
6 eggs hard boiled
6 celery ribs
1 or 2 carrots grated
1 onion
50 green olives
~ 3 c hellmann's mayonnaise
3/4 c parmesan cheese ( secret ingredient )
1/2 c mustard spicy brown or deli
celery salt (to taste)
paprika ( mostly for looks )
parsley flakes ( mostly for looks)

Steps:

  • 1. Peel and boil the potatoes and boil and peel the eggs the night before to make sure they are cooled ( If the potatoes are warm when you cut them up your salad will be too mushy )
  • 2. The next day...Cut or chop up potatoes in small chunks smaller than bite size and chop up eggs
  • 3. dice celery and and onion very small (especially onion) Great carrots cut each Green Olive in half
  • 4. Mix in the Hellmann's Mayo, Mustard, Parm.cheese and spices Mix all together and chill
  • 5. I put a sliced egg on top and paprika and parsley to decorate and make it look nice Maybe even some grated carrot

1 red onion, finely chopped

2/3 cup mayonnaise
2 tablespoons yellow mustard
2 tablespoons sweet pickle relish
salt & freshly ground black pepper
paprika

Steps:

  • Place the potatoes in a large pot and add enough salted water to cover by 1-inch. Bring to a boil over high heat. Reduce the heat to medium-low and simmer until tender, but not mushy, about 20 minutes. Pour out most of the water and place the pot in the sink. Run cold water over the potatoes for about 2 minutes, or until cool enough to handle. Drain well. Peel the potatoes and cut them into 1/2-inch cubes. Place in a large bowl. Chop 4 hard-cooked eggs and add to the potatoes, along with the red onion, green pepper, and celery. Sprinkle with the celery seed. Gradually stir in the mayonnaise, mustard, and relish (wear rubber or plastic gloves and use your hands, if you wish), being careful not to smash the potatoes. Season with salt and pepper to taste. Transfer to a large serving bowl. Slice the 2 remaining hard-cooked eggs. Arrange the slices on top of the salad and sprinkle with paprika.
