MEATBALLS FOR PATSY'S MEATBALL LASAGNA

An expert trick makes simple work of rolling these meatballs into shape. The meatballs are used in Patsy's Meatball Lasagna.

3/4 cup fresh breadcrumbs
6 tablespoons whole milk
2 tablespoons extra-virgin olive oil
2 medium onions, finely chopped
6 cloves garlic, finely chopped
1 1/2 pounds ground beef, preferably chuck
1 1/2 pounds ground pork
3 large, whole eggs, lightly beaten
3 large egg yolks, lightly beaten
3 tablespoons finely chopped fresh flat-leaf parsley
3 tablespoons finely chopped fresh oregano
1 1/2 cups freshly grated Parmesan cheese
Coarse salt and freshly ground pepper
Dried breadcrumbs, for work surface
Olive oil, for frying

Steps:

  • Place breadcrumbs in a small bowl. Drizzle the milk over and let stand until absorbed.
  • Heat 2 tablespoons oil in a large skillet over medium-high heat. Add the onion and garlic; cook until translucent, about 3 minutes. Set aside.
  • Place the ground meats in a large bowl. Add breadcrumb mixture to meats along with the reserved onion and garlic, whole eggs, yolks, parsley, oregano, and cheese. Season with salt and pepper. Using your hands, mix until just combined.
  • Sprinkle breadcrumbs over work surface. Roll 3/4 cup meatball mixture into a thin strip, about 12 inches long; repeat 3 more times. Line strips next to one another; sprinkle with breadcrumbs. Cut strips into 1-inch lengths. Repeat process with remaining meat mixture.
  • Working in batches, transfer 1-inch pieces to a large sieve; sprinkle lightly with breadcrumbs to prevent sticking. Toss until pieces become round and form meatballs.
  • Lightly coat the bottom of a large skillet with olive oil; set over medium-high heat. Working in batches, cook meatballs until browned and cooked through, 1 to 2 minutes. Transfer to a paper towel-lined baking sheet to drain. Repeat with additional oil and remaining meatballs.

1 whole egg
1 egg yolk
1 garlic clove, minced
2 tablespoons grated romano cheese
salt and pepper
chopped fresh parsley

1 pinch oregano

Steps:

  • Mix thoroughly and form into 2½-inch meatballs.
  • Preheat olive oil in skillet to 350 degrees (oil should cover half the meatball when frying).
  • Fry meatballs in olive oil, 2 minutes on each side.
  • Take out of oil.
  • Place the meatballs in simmering tomato sauce and cook another 10-15 minutes.

A neighbor shared this recipe with me at a block party back in the '60s. It's been a favorite of my family's and is easy to fix for a large group.

2 teaspoons ground mustard
1 teaspoon salt
1/2 teaspoon pepper

1/3 cup cornmeal
3/4 cup whole milk
2 pounds ground beef
3 tablespoons vegetable oil
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1-1/2 cups water

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into 2-in. balls. In a large skillet, brown meatballs in batches in oil over medium-high heat. , Place in a 2-qt. baking dish. Combine soup and water; pour over meatballs. Bake, uncovered, at 350° for 45-50 minutes or until a thermometer inserted in meatballs reads 160°.

coarse salt
10 cups pasta sauce (homemade or store-bought)
3 cups meatballs (1/2 recipe meatballs for Patsy)
1 1/3 cups freshly grated pecorino romano cheese
1/4 cup chopped fresh basil leaf, plus more for garnish
2 lbs sweet Italian sausage, broiled and thinly sliced
2 lbs fresh mozzarella cheese, cut into 1/2-inch cubes (about 2 1/4 cups)
2 cups fresh ricotta cheese
1 large egg

Steps:

  • Bring a large pot of water to a boil; season with salt. Add lasagna sheets and cook until pliable and al dente, 1 to 2 minutes. Drain, and rinse under cold water.
  • Preheat oven to 450 degrees.
  • Pour 1 cup sauce into a shallow baking dish; set aside.
  • Cut two sheets in half lengthwise to make four 2-by-8-inch sheets; set aside.
  • Spread 1 cup sauce on the bottom of a 13-by-9-inch baking dish.
  • Dip half of a reserved cut sheet crosswise in the reserved sauce, and drape over a corner of the baking pan, leaving the sauce-covered end in the pan with the other half hanging over the edge.
  • Repeat with remaining 3 cut sheets and corners.
  • Line edges of pan in the same manner using full-size sheets dipped lengthwise.
  • Finish lining the bottom of the pan with 2 full sheets.
  • In a medium bowl, toss to combine meatballs with 1/3 cup pecorino Romano, and 1/4 cup basil; spread evenly in bottom of dish.
  • Pour over 1 cup sauce, and cover with 2 lasagna sheets.
  • In the same bowl, toss sausages with 1/3 cup pecorino Romano; spread evenly in baking dish.
  • Pour over 1 cup sauce, and cover with 2 lasagna sheets.
  • In a medium bowl, combine mozzarella with 1/3 cup pecorino Romano; spread evenly in baking dish.
  • Pour over 1 cup sauce, and cover with 2 lasagna sheets.
  • In a medium bowl, combine remaining 1/3 cup pecorino Romano with ricotta and egg; spread evenly in baking dish.
  • Top with 1 cup sauce.
  • Center pasta sheets on ricotta within 1/2-inch of the edge of dish. Brush draped lasagna with sauce, and fold over to seal and enclose.
  • Cover lasagna with a clean, damp kitchen towel.
  • Double-wrap baking dish in aluminum foil.
  • Place an ovenproof plate, upside down, in a large roasting pan; fill pan with 2 inches of hot water.
  • Place lasagna on top of plate. Bake until lasagna reaches an internal temperature of 160 degrees to 170 degrees on an instant-read thermometer, 1 1/2 hours to 1 hour 40 minutes.
  • Remove from oven; let stand 15 minutes before serving.
  • Garnish with remaining basil, and serve with remaining sauce, if desired.

This is my version of meatballs based on experimentation from several different recipes, including my mother's. I like to use these in spaghetti sauce, of course, but they're also delicious in my meatball subs. You can double or triple the recipe - sky's the limit! - and freeze.

1 small onion, diced
¼ cup dry bread crumbs, or as needed
¼ cup freshly grated Parmesan cheese

1 teaspoon dried thyme
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Line a large baking sheet with parchment paper.
  • Mix together the ground beef, onion, bread crumbs, Parmesan cheese, eggs, garlic, oregano, basil, thyme, Worcestershire sauce, salt, and pepper in a large bowl until just combined. Divide the mixture into 4 equal portions, then roll each of those portions into 4 meatballs. Arrange the meatballs on the prepared baking sheet.

This is one of my favorite recipes that was handed down from my mother. When she'd make this for Sunday dinner, I would wait in anticipation for this flavorful, savory dish!

1 pound ground beef
¼ pound sausage
½ cup plain bread crumbs
⅓ cup evaporated milk
2 tablespoons minced onion
1 teaspoon chili powder
1 (10.75 ounce) can cream of mushroom soup
1 (10.75 ounce) can cream of celery soup
1 cup evaporated milk
½ cup water
1 ½ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon chili powder
⅓ cup shortening
⅓ cup evaporated milk
1 egg
1 cup grated Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix ground beef, sausage, bread crumbs, 1/3 cup evaporated milk, onion, and 1 teaspoon chili powder together in a bowl; shape into small meatballs.
  • Cook and stir meatballs, 10 to 15 at a time, in a skillet over medium heat until slightly browned, 2 to 4 minutes. Return all meatballs to skillet, cover, and cook over low heat until meatballs are cooked through, about 10 minutes. Transfer meatballs to a 2 1/2-quart casserole dish. Pour excess grease out of skillet, reserving the browned bits of food in the skillet.
  • Combine cream of mushroom soup, cream of celery soup, 1 cup evaporated milk, and water in the skillet with browned bits of food; cook and stir until sauce is steaming but not boiling, about 5 minutes. Pour sauce over meatballs.
  • Combine flour, baking powder, and 1/2 teaspoon chili powder in a bowl; cut in shortening until mixture is crumbly. Beat 1/3 cup evaporated milk and egg together in a separate bowl; mix into flour mixture until a sticky dough forms. Knead dough about 10 times. Roll dough into a 10x12-inch rectangle on a floured work surface. Sprinkle Cheddar cheese over dough. Starting on the long end, roll dough around cheese forming a roll; cut into 8 to 10 slices. Turn slices on their side and flatten slightly with your hand; arrange on top of sauce.
  • Bake in the preheated oven until sauce is bubbling and biscuits are lightly browned, 20 to 25 minutes.

5 cloves garlic, crushed
½ teaspoon red pepper flakes
1 tablespoon McCormick® Savory Spice Blend
3 tablespoons tomato paste
56 oz canned whole peeled tomato
kosher salt, to taste
2 slices white bread, hearty, crusts removed, torn in 1/2 ( 1 1/4 cm) in pieces
10 tablespoons heavy cream
½ cup grated parmesan cheese
2 tablespoons onion, grated
2 tablespoons garlic, grated
pepper, to taste
1 lb ground pork
½ teaspoon kosher salt, plus more to taste
1 lb 85% lean ground beef
1 tablespoon McCormick® Savory Spice Blend
olive oil, to taste
1 lb spaghetti, dried
kosher salt, to taste
parmesan cheese, a chunk
¼ cup fresh basil, chopped

Steps:

  • Make the sauce: In a large pot over medium-low heat, combine the olive oil and garlic and cook until the garlic begins to sizzle very gently. Add the red pepper flakes and cook, stirring, until the garlic just begins to turn light golden in color, about 3 minutes. Add the Savory spice blend and continue to cook, stirring, for 1 minute more.
  • Add the tomato paste and cook, stirring, until the paste has softened and blended with the oil and garlic mixture, about 3 minutes.
  • Stir in the tomatoes and their juices and increase the heat to medium-high, bringing the to a gentle simmer. Lower the heat a bit if it's bubbling and spitting too much. Remove the sauce from the heat.
  • Using an immersion blender, blend the sauce until smooth. Tip: Drape a kitchen towel over the pot to act as a cover from sauce splatters. Or, transfer the sauce to a blender and puree, then return to the pot.
  • Decrease the heat to medium-low and bring the sauce to a simmer.
  • Make the meatballs: In a medium bowl, combine the bread cubes, cream, parmesan, onion, garlic, and pepper. Using a fork, mash into thick paste.
  • In a large bowl, gently mix the ground pork with the salt and baking powder. Add the beef and gently stir to combine (you can also use your hands for this). Add the bread mixture, Savory spice blend, and a pinch more salt and pepper and mix until just incorporated. Rub a bit of olive oil on your hands and form the mixture into smooth, round meatballs the size of golf balls--you should have about 25 total..
  • Once the meatballs are formed, gently lower each meatball into the pot of sauce. Bring to a low simmer, cover, and cook for 25-35 minutes, or until a meat thermometer inserted into a meatball reaches 165˚F (75˚C).
  • While the meatballs are cooking, bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions. Reserve 1 cup (240 ml) of pasta cooking water, then drain.
  • In a large bowl, toss the spaghetti with a few large spoonfuls of pasta sauce to coat, along with a few splashes of the reserved cooking water. Divide the pasta among bowls and spoon more sauce and meatballs over the pasta. Top each serving with freshly grated Parmesan and basil.
