MUSTARD-ROASTED POTATOES

2 1/2 pounds small red potatoes (or small Yukon Gold potatoes)
2 yellow onions
3 tablespoons good olive oil
2 tablespoons whole-grain mustard
Kosher salt
1 teaspoon freshly ground black pepper
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 425 degrees.
  • Cut the potatoes in halves or quarters, depending on their size, and place them on a sheet pan. Remove the ends of the onions, peel them, and cut them in half. Slice them crosswise in 1/4-inch-thick slices to make half-rounds. Toss the onions and potatoes together on the sheet pan. Add the olive oil, mustard, 2 teaspoons salt, and the pepper and toss them together. Bake for 50 minutes to 1 hour, until the potatoes are lightly browned on the outside and tender on the inside. Toss the potatoes from time to time with a metal spatula so they brown evenly.
  • Serve hot sprinkled with chopped parsley and a little extra salt.

8 small red potatoes
8 small white potatoes
8 small blue potatoes
3 tablespoons canola oil
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon pepper
SAUCE:
6 bacon strips, cooked and crumbled
2/3 cup sour cream
1/3 cup mayonnaise
1/4 cup stone-ground mustard
1 tablespoon brown sugar
2 teaspoons minced fresh chives
1/4 teaspoon paprika

Steps:

  • Preheat oven to 425°. Toss together first 8 ingredients. Transfer to a large cast-iron skillet or shallow roasting pan. Roast until tender, 30-35 minutes, stirring occasionally., Mix sauce ingredients. Serve with potatoes.

From "The Silver Palate Good Times Cookbook", this potato salad has been declared the absolute favorite of many guests I have served it to; it's one of my favorites too. Preparation time does not include time needed to chill salad.

14 small red potatoes, scrubbed clean and halved
6 hard-boiled eggs, peeled and halved
1 medium carrot, peeled and grated
2 green onions, sliced (white part and 2 inches green)
3 tablespoons chopped fresh dill or 1/2 teaspoon dried dill
2 tablespoons chopped fresh parsley or 1/2 teaspoon dried parsley
1 tablespoon caraway seed
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
3/4 cup sour cream (lowfat's fine)
3/4 cup mayonnaise (Please not Miracle Whip, unless you really have to.)

Steps:

  • Boil potatoes until tender; drain, and cool.
  • Combine eggs, potatoes, carrot, and green onions in a large bowl.
  • Add dill, parsley, caraway, salt, and pepper; gently toss to combine.
  • Mix sour cream and mayonnaise and gently fold into the potato mixture.
  • Refrigerate salad at least four hours before serving to allow flavors to blend.

Mustard-Crusted Roast New Potatoes With Shallots and Garlic image

A flavour packed roast potato recipe which results in crisp and crunchy little new potatoes with caramelised shallots in a wholegrain mustard crust. Wonderful for dinner parties as well as BBQ's. These are SO easy to prepare, no peeling required and they can be prepared ahead of time; just let them sit in the mustard and oil marinade until they need to be roasted..

500 g new potatoes, halved with skin left on
3 pink shallots, peeled and quartered
4 garlic cloves, peeled and crushed
3 tablespoons coarse grain mustard
3 tablespoons olive oil
sea salt, to taste
fresh ground black pepper

Steps:

  • Pre-heat the oven to 200C/400F/Gas 6.
  • Par-boil the potatoes for 3 to 5 minutes and then drain well.
  • Place the potatoes into a large bowl with the oil, mustard, salt, pepper, shallots and garlic and mix well.
  • Toss the potatoes well so they are all evenly coated with the seasonings, oil and mustard.
  • Transfer them to a roasting tray and roast them in the pre-heated oven for 35 to 45 minutes or until the mustard forms a golden crust and the potatoes are crisp and cooked.
  • Gently toss them in the tin before serving hot with chicken, sausages, roasts, stews or with burgers and pies.

Number Of Ingredients 8

1 Tbsp butter
1 small onion chopped
1 Tbsp each flour and prepared mustard
1/2 c chicken stock
salt and pepper
1 lb potatoes peeled and small cubed.
1/4 c each panko bread crumbs and fresh grated parmesan cheese
parsley for garnish

Steps:

  • 1. Peel and cube the potatoes. Cook in boiling salted water. Cook until softened but firm. Drain While potatoes are cooking make the sauce.
  • 2. Add butter to a saucepan and add the onions cook until translucent. Mix in the flour then slowly add the chicken stock. Bring to a boil once thickened turn to low and stir in the mustard. Taste and season with salt and pepper. Remove from heat.
  • 3. Preheat oven 400 degrees. Spray a baking pan. Mix the mustard sauce with the potatoes. Pour into the prepared pan. Sprinkle with Panko and Parmesan cheese. Bake for about 15 minutes.
  • 4. Serve garnished with parsley
