Steps:
- Using a mortar and pestle, mash garlic cloves and sea salt.
- Once creamy, add paprika, thyme, oregano and olive oil; combine well.
- Rub roast all over with this mixture.
- Place uncovered in a preheated 350 degree Fahrenheit oven.
- Bake 3 to 4 hours or until cooked through.
- Remove from oven and allow to stand 15 minutes before slicing.
- Slice into very thin slices.
- Serve on crusty baguettes, lightly salted.

Steps:
- Heat the oil in a large pot over medium heat. Add the onions, garlic and cook for about 4 minutes or until the onions are translucent. Add the tomato and water, and cook for about 7 minutes more.
- Add the pork loin chops, bay leaf, salt, cumin powder and bring to a boil, then reduce the heat to low, cover and let it cook for about 30 minutes or until the meat is tender.
- Add the potatoes, green beans and carrots. Cover and cook for an additional 30 minutes or until the potatoes and carrots are tender.
- Serve with rice and avocado on the side.

- Place the potatoes, garlic, salt and pepper in a slow cooker. Stir to coat.
- Season the pork roast with salt and pepper. Lay atop the potatoes.
- Pour the sauerkraut (including liquid) over the roast, sprinkle with caraway seeds.
- Cook in slow cooker on Low 8-10 hours.

This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. - Combine oil, pepper, and salt in a bowl; rub oil mixture over pork and refrigerate while oven preheats.
- Preheat an oven to 475 degrees F (245 degrees C).
- Place a roasting rack in a large roasting pan; arrange pork on the roasting rack.
- Roast in preheated oven until pork with browned, about 30 minutes. Remove pork from oven and reduce oven heat to 325 degrees F (165 degrees C). Allow pork to rest uncovered at room temperature for 30 minutes. An instant-read thermometer inserted into the center should read between 115 degrees F (46 degrees C) and 140 degrees F (60 degrees C).
- Return to oven and continue to cook until pork is slightly pink in the center, 15 to 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
- Let the roast stand uncovered at room temperature for 15 to 20 minutes before slicing and serving.

GYRO-STYLE PORK SANDWICHES
My kids love gyros but the frozen ones you can buy at the store lack the special taste and cuke sauce that the authentic ones have. This is a quick to fix copycat that also has the cuke sauce. It is a nice change of pace. Marinating time is not included. Posted for the Zaar World tour to Greece.

- Cut pork chops crosswise into thin slices, place in a large resealable bag.
- Combine olive oil, mustard, lemon juice, garlic and oregano.
- Pour marinade over pork, seal bag and refrigerate for 1 to 8 hours.
- Meanwhile, in a small bowl stir together yogurt, cucumber, garlic and dill.
- Cover and refrigerate.
- Preheat oven to 450 degrees.
- Drain marinade from pork chops and place pork in a single layer on a shallow pan. Roast until crisp, about 10 minutes.
- Open each pita half to form a pocket. Distribute pork among each half.
- Top each sandwich with some chilled yogurt mixture and sliced onions.
SLOW COOKER ITALIAN-STYLE PORK ROAST
If you are a pork roast enthusiast, this is definitely one to add to your collection. The pork is simmered in a tomato sauce, and served over hot rice or noodles. The recipe calls for beans, I did not use any since my kids don't like them.

- Combine garlic, salt, basil, oregano and red pepper flakes in small bowl; rub over roast.
- Place half of onion slices into slow cooker. Cut roast in half to fit into slow cooker. Place one half of roast over onion slices; top with remaining onion slices and other half of roast. Pour pasta sauce over roast. Cover; cook on LOW 8 to 9 hours until roast is fork tender.
- Remove roast from cooking liquid; tent with foil. Let liquid in slow cooker stand 5 minutes to allow fat to rise. Skim off fat.
- Stir beans into liquid. Cover; cook on HIGH 10 to 15 minutes or until beans are hot. Cut pork. Serve with beans mixture and garnish wi fresh basil, if desired.
- I did not use the beans, so I used corn starch to thicken the liquid and spooned it over the rice and pork.

I found this recipe in Gourmet magazine and I *love* it - a spicy vinegar based potato salad that has a great kick and nice flavor.

Steps:
- In a saucepan, cover the unpeeled potatoes with enough cold water to cover them by 1 inch.
- Bring to a boil and simmer for 15 to 20 minutes, or until just tender.
- In a bowl, combine olive oil, vinegar, garlic, cumin, paprika and red pepper flakes and whisk until blended.
- Drain potatoes, pat them dry, and toss with dressing, scallions and parsley.
- Cut potatoes into smaller chunks if desired.
- Add salt and pepper to taste.
LATIN STYLE PORK ROAST
I adapted this recipe from a recipe for Puerto Rican Pernil given to me by a friend. I loved the Pernil, but it was too fatty for me and took longer to prepare. This is faster, easier, and lower in fat. (Sazon is a seasoning product made by GOYA and can be usually found in the Ethnic food section or the grocery store. Substitute small amounts of MSG, salt, garlic powder, and coriander if you are unable to find Sazon.)

- Preheat the oven to 375 degrees.
- Sprinkle Adobo seasoning on the roast and rub in using the back of a fork.
- Open the packet of Sazon and rub into the pork.
- Rub the oregano into the roast and at this point you can allow the roast to"marinate" for deeper flavor or cook right away.
- Place the roast in a shallow baking pan that has been coated with non-stick spray.
- Roast, and check the temperature after 45 minutes, if the temperature is at least 160 degrees (this usually takes 1 hour, but may vary by roast size), remove from the oven and cover the pan with aluminum foil and allow to sit for 15 minutes.
- Slice as desired.
