FLINT'S ORIGINAL CONEY ISLAND

I've lived in Flint, Michigan my entire life, and I was brought up on Coneys. The recipe has always been kept "top secret", and every restaurant has a slightly different version. But my friend's grandmother opened and ran one of Flint's top Coney Island restaurants for many years, and she gave me this recipe. The original recipe calls for beef kidney, heart and suet. But guess what? That's what hot dogs are made from! That's why ground hot dogs are a good substitution. I've tried and tasted many copycat recipes for Coney sauce, but I'm convinced that this one is the best. Coneys are traditionally served using a steamed hot dog bun, a koegel vienna hot dog (any vienna hotdog will do) then topped with the sauce, yellow mustard and finely chopped onions. Yum! The friend also noted that if it tastes like something is missing.. add more cumin. By the way, Koegel Viennas are now available to order online!

1 lb hamburger (not lean)
1/2 lb beef hot dog, ground up (the cheap hot dogs work best)
1 onion, finely chopped
3 tablespoons ground cumin
3 tablespoons mild paprika
2 tablespoons chili powder
2 cups water

Steps:

  • Mix all ingredients in a heavy pan and cook over med to low heat until mixture cooks and becomes dry and crumbly.
  • If it seems too wet or greasy, add a few crumbled saltine crackers.
  • Best if made a day ahead and reheated in a frying pan.
  • Freezes well.
  • Note: I grind my hot dogs up in a blender with a little water.
  • I also chop the onions using my blender with water.

The story of how the Coney Island hog dog got to the Midwest is pretty straightforward, but no one really knows exactly how the wiener first came to be topped with what is basically a hot meat relish. I have no idea how authentic this is, and have never been to Detroit, or even Flint. I have had Nathan's® version, which I enjoyed, but the word on the street is that it's not nearly as good as the relatives it spawned.

1 ½ pounds lean ground beef
2 cups water, or more to taste
½ cup diced onion
⅓ cup ketchup
2 tablespoons butter
2 cloves garlic, crushed
2 tablespoons chili powder, or more to taste
1 ½ teaspoons salt, or to taste
1 teaspoon freshly ground black pepper, or to taste
1 teaspoon ground cumin, or to taste
½ teaspoon celery salt, or to taste
1 pinch cayenne pepper, or to taste
8 all-beef hot dogs
8 hot dog buns
¼ cup prepared yellow mustard, or to taste
¼ cup diced onion, or to taste

Steps:

  • Combine ground beef, water, 1/2 cup diced onion, ketchup, butter, garlic, chili powder, salt, black pepper, cumin, celery salt, and cayenne pepper together in a pot. Mix with a potato masher or spatula over medium-high heat until mixture has a finely ground consistency and begins to bubble, about 10 minutes.
  • Bring beef mixture to a simmer, reduce heat to medium-low, and cook, stirring occasionally, until sauce thickens and reduces, about 1 hour. Season with salt and pepper to taste.
  • Bring a large pot of water to a boil. Cook hot dogs in boiling water until heated through, 5 to 7 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Arrange hot dog buns on a baking sheet.
  • Cook buns in the preheated oven until soft and warm, 2 to 3 minutes.
  • Place 1 bun on a plate. Place a hot dog in the bun and top with meat sauce. Drizzle yellow mustard and diced onion over the meat sauce. Repeat with remaining hot dogs.

1 can (15 ounces) tomato sauce
1/2 cup water
2 tablespoons Worcestershire sauce
1 tablespoon dried minced onion
1/2 teaspoon garlic powder

Dash cayenne pepper

1 pound lean ground beef
1 onion, chopped
½ teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon paprika
2 tablespoons chili powder

Steps:

  • In large skillet melt butter over medium-high heat. Cook ground beef in butter until brown, 3 to 5 minutes. Stir in chopped onion and cook until beef juices run clear, 3 to 5 minutes. Drain.
  • Stir in salt, pepper, paprika and chile powder. Add water to cover, and simmer until water is absorbed, stirring frequently, 10 to 15 minutes.

1 lb Ground Beef
1 Large Yellow Onion (finely chopped)
1 Tbsp Chili Powder
1/2 Tsp Salt
1/4 Tsp Ground Allspice
1/4 Tsp Ground Dry Mustard
1/2 Tsp Ground Black Pepper
1/8 Tsp Ground Cumin
1/4 Cup Tomato Paste
2 Cups Water
1/8 Tsp Ground Cinnamon

Steps:

  • In a medium saucepan, brown the ground beef; drain well.
  • Add to the ground beef the finely chopped onion, chili powder, 1/2 teaspoon salt, allspice, ground mustard, garlic powder, cumin, cinnamon, black pepper, tomato paste, and water. Bring to a boil. Reduce heat and simmer for 1 to 2 hours.
  • Top each hot dog with about 2 tablespoons of sauce.
  • Optionally add 1 to 2 tablespoons of chopped onion over the ground beef mixture then add mustard. Top the hot dogs with shredded Cheddar cheese.

The Detroit Coney Dog is a hot dog with heart. Literally. It's the beef heart that makes the difference. That's the secret ingredient in the pasty chili sauce that crowns the wiener.

6 pork and beef blended frankfurters with natural casings
6 hot dog buns
1 white onion, chopped fine
Yellow ballpark mustard
1 pound ground chuck
1/2 pound ground beef heart
3 tablespoons all-purpose flour
1 large onion, chopped
1 red bell pepper, chopped
3 garlic cloves
4 teaspoons American chili powder
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon Morton Coarse Kosher Salt
1/2 teaspoon finely ground black pepper
1.5 cups chicken or beef broth
4 ounces tomato paste
2 teaspoons cider vinegar
1/2 teaspoon hot pepper sauce

Steps:

  • Prep. In a small bowl, mix the American chili powder, paprika, cumin, oregano, salt, and pepper. Mince the garlic.
  • Cook. In a large skillet over medium-high heat, cook the ground beef and beef heart for 5 minutes or until brown. Crumble it as it cooks so it is brown all over.
  • Pour the meat into a strainer and drain the fat into a small sauce pan. Discard all but 3 tablespoons of fat. Whisk the fat and flour together over medium heat. This makes a roux. Cook it, stirring frequently, until it turns amber, about 15 minutes. Then whisk in the chicken stock, tomato paste, and vinegar. Let it sit on low a few minutes on low while you handle the next few steps.
  • Add the onion, garlic, and red bell pepper to the ground meat in the skillet and cook for another 5 minutes.
  • Push everything aside and add the spices and cook in contact with the bottom of the pan for 2 minutes, stirring so the spices don't stick to the bottom. This "blooms" the flavor. Then mix them in with the meat.
  • Add the roux mix ingredients and stir it in. Simmer for at least 15 minutes, an hour is better.
  • Pour 1/3 the mix into your blender and puree it until it is pasty, and mix it back in. If you prefer you can use a stick blender to get the mix thick. Taste and add more of whatever you want.
  • Split the frank down the middle but don't cut it in half. Leave a hinge. This step is controversial. Some locals hate the concept. I like it because it creates more browned meat, and browned meat is better than chocolate. On a griddle, in a frying pan, or better still, on your grill, grilling the frank until it starts to brown on all sides. Steam the bun.
  • Serve. Put the frank on the bun, split side up. Squirt a line of mustard down its length. Spoon on a generous amount of Coney saucce, and top with the chopped onions. Serve with Vernor's.

1/2 cup ketchup
1 tablespoon Worcestershire sauce
1 cup onion (cut fine)
2 teaspoons paprika
2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon celery salt
1/2 teaspoon allspice
1/2 teaspoon prepared mustard
3 teaspoons chili powder

Steps:

  • Place the hamburger and onion a heavy skillet and brown. Add water and remaining ingredients.
  • Stir mixture and bring it to a boil.
  • Reduce heat and simmer for 45 minutes stirring occasionally.
  • The finished consistency should be more on the thicker side not thin.
  • Add a boiled hot dog (I like the cheap ones) to a steamed bun, (I like the New England hot dog rolls) add mustard, coney island sauce, chopped onions and a sprinkle of celery salt and ENJOY!
