Pastry Cream image

This is a classic pastry cream often used in bakeries and restaurants. It can be used as a filling for cakes, pies or pastries. To make a lighter filling, fold in plain whipped cream.

2 cups milk
¼ cup white sugar
2 egg yolks
1 egg
¼ cup cornstarch
⅓ cup white sugar
2 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • In a heavy saucepan, stir together the milk and 1/4 cup of sugar. Bring to a boil over medium heat.
  • In a medium bowl, whisk together the egg yolks and egg. Stir together the remaining sugar and cornstarch; then stir them into the egg until smooth. When the milk comes to a boil, drizzle it into the bowl in a thin stream while mixing so that you do not cook the eggs. Return the mixture to the saucepan, and slowly bring to a boil, stirring constantly so the eggs don' t curdle or scorch on the bottom.
  • When the mixture comes to a boil and thickens, remove from the heat. Stir in the butter and vanilla, mixing until the butter is completely blended in. Pour into a heat-proof container and place a piece of plastic wrap directly on the surface to prevent a skin from forming. Refrigerate until chilled before using.

Classic pastry cream, or creme patissiere, is a vanilla custard thickened with egg yolks and cornstarch. You can fill fluffy doughnuts, eclairs or other baked goods with this sweet cream or simply enjoy it on its own. This recipe does take some finesse, but the final product is completely worth the effort.

2 cups whole milk
1/4 teaspoon kosher salt
1/2 vanilla bean, split lengthwise and seeds scraped (see Cook's Note)
1/2 cup sugar
1/4 cup cornstarch
4 large egg yolks
2 tablespoons unsalted butter, cut into small pieces

Steps:

  • Stir together the milk, salt, vanilla bean and seeds and 1/4 cup of the sugar in a medium saucepan until smooth. Bring to a simmer over medium heat and cook until the sugar has just dissolved, 1 to 2 minutes.
  • Meanwhile, whisk together the cornstarch, egg yolks and remaining 1/4 cup sugar in a large bowl until smooth. While continually whisking, slowly pour in about 1/2 cup of the warm milk mixture. Continue to whisk until smooth. (This is called tempering, and it will prevent the yolks from scrambling.) Continue whisking and adding 1/2 cup of the warm milk mixture at a time until completely combined and smooth.
  • Transfer the mixture back to the saucepan and turn the heat to medium. Cook, whisking constantly, until thickened and the texture of pudding, 2 to 4 minutes. Remove from the heat, then whisk in the butter until smooth and glossy. Remove the vanilla bean.
  • Strain the pastry cream through a fine-mesh sieve into a medium bowl. Cover with plastic wrap, pressing it directly on the surface of the pastry cream, and refrigerate until chilled through, at least 2 hours and up to overnight. Before serving, whisk the pastry cream until smooth and fluffy.

  • Put the milk in a medium saucepan and scrape in the vanilla bean seeds. Add the vanilla bean pod to the pot as well. Whisk well to break up the seeds. Just bring to a boil over medium heat, remove from the heat, and allow to steep for 15 minutes. Discard the bean pod.
  • Meanwhile, whisk together the eggs, sugar, cornstarch, and salt in a heatproof bowl until very smooth.
  • Drizzle about one-quarter of the warm milk over the egg mixture, whisking constantly. Add the remaining warm milk and whisk to combine. Immediately pour the mixture back into the saucepan, and cook over low-medium heat until it begins to simmer and bubbles appear around the edge. Cook, whisking constantly to prevent scorching, for about 1 minute. The pastry cream should be thick enough to see whisk marks, but still satiny smooth and fluid. Remove from the heat and whisk in the butter.
  • Proceed as called for in individual recipes or cool and refrigerate until needed. See Tips below; stir the pastry cream a couple of times as it cools down to dissipate heat. When almost at room temperature, scrape into an airtight container, press plastic wrap directly onto the surface, snap on the cover, and refrigerate for at least 4 hours or until thoroughly chilled. Refrigerate for up to 3 days.

  • Add the bean and caviar with the milk into a saucepan. Heat the milk over medium high heat and bring it to a simmer, almost to a boil. (See notes)
  • While the milk is being heated, place the sugar, egg and yolks, cornstarch and salt in a bowl. Whisk until you have a thick, smooth mix. (If you are using vanilla bean paste or extract, add it to the egg mix too). Place the bowl with the egg mix on a towel or napkin (to prevent the bowl from slipping while whisking, in the next step), and set aside until the milk comes to a boil (almost to a boil).
  • As soon as the milk starts to simmer / bubble, remove it from the heat. Slowly pour about a half of the hot milk in a thin stream, into the egg mix, WHILE WHISKING CONSTANTLY to temper the egg mix. When the eggs have been tempered, add the egg mix back into the hot milk in the saucepan.

  • Pour the coconut and almond milk into a 2 quart sauce pan or pot and bring to a simmer over medium heat.
  • In the meantime, place all of the dry ingredients into a medium bowl and whisk to combine. Add the whole egg and yolks to the dry ingredients, whisking until smooth. Set bowl near the stove. When the milk mixture begins to simmer, stir it to evenly distribute the heat. Turn off the stove. Now, using a small ladle, slowly add the hot milk to the egg mixture whisking all the while, until half of the milk mixture has been incorporated. Now pour the rest of the milk mixture into the bowl. Whisk well and pour the ingredients back into the pot.
  • Turn the heat to medium-low and gently stir with a whisk as the mixture heats. As the mixture begins to thicken, turn the heat to low and begin whisking more quickly. Now is the time to minimize distractions because the magic will happen all at once, and voila, you will have a thick mixture resembling a loose pudding. Once thickened, it will begin to simmer very slowly. Continue to cook the custard for a full minute.
  • Remove the pastry cream from the heat and stir in the vanilla and ghee (if using). Place a piece of plastic film over the pastry cream, pushing it down onto the surface. Now poke holes through the plastic and let cool in the refrigerator before using.*Note: I like to cool my pastry cream right away by placing my bowl over ice and stirring until the mixture is cool. Then I cover with plastic film and refrigerate.
