The sauce can be doubled if desired, start with 2 tablespoons of relish and keep adding in until you achieve the flavor you like.

Steps:
- Heat oil in a skillet.
- Add in onion; saute over medium heat until tender (about 7-8 minutes).
- Add in sauerkraut and caraway seeds; cover and cook over medium heat (stirring occasionally until sauerkraut is tender and lightly browned, about 20 minutes).
- Meanwhile in a bowl combine ketchup, mayo and relish (start with 2 tablespoons relish and add in more until you achieve the flavor you like).
- Split the bread rolls (careful not to cut all the way through).
- Place pastrami down the center, dividing evenly between buns.
- Top with sauerkraut/onion mixture, then the sauce, then top with cheese.
- Wrap in foil (leave top open).
- broil about 8 inches from heat.
- Heat through and until cheese has melted (about 3 minutes).
- Serve.

- Spread each slice of bread with thousand island dressing. Top 4 of the bread slices with sauerkraut, cheese and pastrami. Place remaining bread slices on sandwich. Spread margarine on the outsides of each sandwich.

- Preheat your George Foreman Grill with the lid closed for at least 5 minutes. Assemble your sandwich with best results by folding slices in half when placing on bread slices. Have the cheese slices on opposite sides of the meat to get that gooey goodness throughout the whole sandwich. Use margarine or olive oil or cooking spray to coat the outside of both slices of bread. Doesn't have to be mush, just enough to coat. Place on Foreman Grill and close lid. Keep an eye on it after about 90 seconds. Remove sandwich when it's golden brown. At this point you can now add mayonnaise or mustard.
- Slice in half and serve with kettle chips and a good kosher pickle.

- Obviously the first step is to make, steam, and bake your pastrami in the vegan corned beef recipe (or marinate a replacement, if doing that (see above)). Make sure your pastrami has rested and been sliced thinly. While it's resting you can bring the simmering liquid to... well, a simmer.
- Add all ingredients for the simmering liquid into a large pot (enough room to fit all your sliced pastrami, and a bit of breathing room for them so they can soak in that delicious liquid) and whisk together until the spices, mustard, and bouillon paste or cubes have dissolved.
- Once the liquid is hot and simmering, carefully add the seitan pastrami slices one at a time, so they each have a chance to soak up the liquid. Let it simmer, stirring occasionally, for about 10-15 minutes, or until the pastrami is completely reheated. Test a piece, it should be delicious and melt-in-your-mouth tender. Feel free to simmer a bit longer if desired, but don't exceed 25-30 minutes.
- Serve that vegan pastrami up on an amazing vegan reuben (details below) or with anything you like. It would be especially amazing as a double down sandwich with two latkes.
- If making a reuben, use toasted rye bread, vegan provolone or swiss cheese, sauerkraut, this vegan pastrami, and vegan Russian dressing. Serve with a big pickle spear and some salt and vinegar chips.
- Store leftover pastrami WITH some of that simmering liquid (enough to cover), to keep it moist and delicious.

- For the brine: Add 1 gallon of water to large pot. Add salt, sugar, garlic and curing salt and stir until it dissolves.
- Put navel in brine fully submerged. Leave in refrigerator for 5 days.
- For the pastrami: Preheat the oven to 350 degrees F and remove the navel from the brine. Stir together the allspice, coriander, pepper, brown sugar, garlic powder and dry mustard in a bowl. Sprinkle the rub all over the navel until fully covered. Place in a roasting pan and cover with foil. Bake until a fork can easily pierce through, about 1 hour. Slice when ready.

- Oil a grill or grill pan and preheat it to 400 degrees F.
- Steam pastrami and sauerkraut together in a double boiler. Place tortillas on hot grill and divide half of the Swiss on top of the tortillas. Cook until cheese is melted. Divide the pastrami and sauerkraut mixture evenly on top of the melted cheese. Squirt Russian dressing evenly over each tortilla. Divide the remaining Swiss among the tortillas. Fold tortillas in half and cook until cheese is melted. Transfer to a cutting board and cut into wedges. Serve immediately.

- In a mortar and pestle, crush the mustard seeds and then add to a bowl with the rest of the spice mix.
