Pasteli is a traditional Greek candy made from plenty of honey and sesame seeds. Nuts, sultanas & other ingredients can also be added. Traditionally, these small wrapped pieces of pasteli are given at baptisms. If you have a candy thermometer you can use it - pasteli should be cooked until 250°F -- "firm ball stage". Steps:
- In a saucepan, bring honey and lemon peel to a boil. Add sesame seeds stirring continuously and continue to cook while stirring to mix completely and thoroughly. When the seeds are fully mixed in and the mixture has boiled again, remove from heat. Remove and discard lemon peel.
- Place a large sheet of parchment on a flat work surface.
- Carefully pour the honey mixture onto the paper to form a square or rectangle about 1/2" thick. Lightly sprinkle the paper with rose water & cover with half of the sesame seeds.
- Dip a spatula into rose water or oil and press down the pasteli then. Cover the surface with the remaining sesame seeds and press them into the pasteli with the spatula.
- (Instead of pouring straight onto the paper you can use a lightly oiled jelly / jam roll tin, then follow the rest of the instructions.).
- Allow to cool slightly - do not leave too long or it will become impossible to cut!. Once firm, cut into squares or diamonds and allow to cool properly.
- Wrap each piece individually in small pieces of waxed paper and store in an airtight container.

Steps:
- To prepare this Greek honey sesame bars (Pasteli) recipe start by toasting the sesame seeds. Place a frying pan over high heat and add the sesame seeds. Toast them for 2-3 minutes until golden (not too brown). Remove the sesame seeds from the pan and set aside. Continue with the rest of the recipe quickly, so that the sesame seeds remain hot. Alternatively you can spread the sesame seeds in a pan and toast them in the oven at 180-190C (375F).
- In the same pan add the honey and bring to a boil, until it starts to foam. Remove the foam using a spatula, turn down the heat to medium and let it simmer until its temperature has reached 125C/260F. If you don't have a thermometer, take a bowl of cold water and drip in a teaspoon of the honey syrup. Let it cool down for a few seconds then shape it into a small ball using your fingers. Take it out of the water and drop it on your work surface. If it sounds like it is solid, the honey syrup is done.
- Its now time to add the remaining ingredients for your pasteli. Add a pinch of salt and the toasted sesame seeds and stir for about 10 minutes over medium heat, using a wooden spatula. The mixture should thicken considerably and stick to the spatula.
- Remove the pan from the heat, add the lemon zest and stir.
- Line a round pan (22cm/ 8.5 inch. diameter) with parchment paper and pour in the mixture. Be careful not to touch it, as it is very hot. Spread the mixture very well using a spoon.
- Let the pasteli cool down for about 20 minutes and them cut into portions. If you let it cool completely then it would be harder to cut into pieces.

GREEK SESAME HONEY CANDY (PASTELI)
Steps:
- Gather the ingredients.
- Bring the honey and lemon peel (if using) to a boil in a saucepan. Add the sesame seeds, stirring continuously. Continue to cook while stirring to mix completely and thoroughly.
- When the seeds are fully mixed in and the mixture has boiled again, remove the pan from the heat. Remove the lemon peel and discard it.
- Place a piece of baking parchment on a cool work surface and spread out the hot mixture thinly and evenly (about 1/4-inch deep).
- Cool the pasteli to room temperature before refrigerating it on the parchment paper (it doesn't need to be covered). Chill for at least 2 to 3 hours.
- Using kitchen shears , cut the pasteli together with parchment paper into small pieces, and serve.
- Peel off the parchment paper to eat. Store in the refrigerator in an airtight container. You can enjoy pasteli as a natural energy bar. Sesame seeds are high in protein, but also contain healthy oils and antioxidants. If you've become dependent on store-bought energy bars, these will have no additives, and you can ensure they are gluten free if that is a concern. One variation you might try is adding some crushed nuts to the mixture, such as pistachios. Or lightly toast some of the sesame seeds to add a roasted flavor.

Steps:
- Preheat oven to 350 F.
- Heat a heavy, wide-bottomed sauté pan over medium-high heat.
- Add the sesame seeds and toast lightly, about 2 minutes, stirring vigorously so they toast evenly. Keep a careful eye on the sesame seeds as they go from toasted to burnt really quickly. As soon as they start to brown, remove from heat.
- In a medium saucepan on medium heat, add maple syrup, orange zest, orange juice, and sugar and bring to a simmer.
- Lower to medium-low and continue to simmer for another five minutes, stirring regularly.
- Remove from heat and stir in sesame seeds and pistachios.
- Pour over a small baking sheet lined with parchment paper or a silicone mat. Use a spatula to distribute the candy evenly. It should be a little shy of 1/2 inch thick.
- Bake for 20 minutes. As ovens vary, be sure to check close to the end of the bake; if the sesame seeds look like they are about to burn, remove the candy from the oven early.
- Cool to room temperature. Then, snap into pieces and enjoy!

- Lightly oil a wooden spoon and a flat, heatproof work surface, such as a slab of marble, a plastic pastry sheet, even a large, flat plate. Have a small bowl of ice water ready and your rolling pin ready.
- Place the sesame seeds and pistachios in a nonstick skillet and toast them lightly over low heat just until they take on a hint of color. [Editor's Note: You want to be careful not to overdo the toasting, as the seeds and nuts will remain in the skillet and will continue to take on a deeper, richer hue and taste. If you happen to turn your back and accidentally toast them a little too much, transfer them to a plate and continue with step 3, melting the sugar without the seeds and nuts in the skillet. Then return the seeds and pistachios to the skillet when you add the honey. Trust us. We've been there.]
- Add the sugar to the seeds and nuts in the skillet and cook, without stirring, over low heat until the sugar melts and takes on a pale golden hue.
- Standing back so as to avoid any potential splatters, carefully add the honey to the skillet. Working quickly, stir the honey into the sesame seeds and pistachios and mix it while you can, as the mixture will soon turn sticky and thick. Scrape the pastelli out onto the oil-slicked work surface and flatten it a bit with the back of the oiled spoon. Still working fast and furious, dip your hands in the cold water and then use them to form the pastelli into a rectangular shape. Grab your rolling pin and level the surface, stretching it to a rectangle that's about 1/4 inch thick and roughly 6 by 7 inches in length.

- Toast the sesame seeds. You can spread them in a pan and put them in the oven at 325 degrees Fahrenheit or you can toast them in a pan. You want them to get a bit of color but not too brown.
- Pour the honey in medium sauce pan and heat the honey until it starts to bubble. Let it boil for 4-5 minutes. If you have a food thermometer, you boil until honey reaches a temperature of 250 F (125 C).
- Pour the toasted sesame seeds, lower the heat and stir. Making sure all ingredients are moxed well together. Heat the mixture for 2-3 minutes more (the more it cooks the crunchier it will be-but be careful of scorching). To check if it is ready, take a small amount and drop it in a glass with water, it should stay in a ball, if it spreads out it still needs to be heated.
- Line a pan with slight greased (I spray or brush with olive oil) wax paper or parchment paper and pour the sesame mixture, place another sheet of wax paper on top (also greased) and spread out the sesame-honey mix with a rolling pin. I prefer to do this step directly on the table instead of using a pan, that way I can spread as thin as I like (mine are rolled out to ¼ inch thick).
