BRAZILIAN PASTEL DE QUEIJO (CHEESE PASTRIES)



Brazilian Pastel de Queijo (Cheese Pastries) image

Pastel de queijo are savory Brazilian cheese pastries. This appetizer and street food is something all cheese lovers definitely need to try!

3 ½ - 4 c all-purpose flour
1 egg, lightly beaten
1 Tbsp salt
1 c water
2 Tbsp vegetable oil
1 tsp white wine vinegar
2 Tbsp Cachaça (or white rum or vodka)
Vegetable oil for frying
8 oz soft and melt-able cheese (mozzarella, cheddar, provolone, etc), sliced or cubed

Steps:

  • In a large bowl, mix together 3 ½ c flour and salt. Add the water, egg, oil, vinegar, and alcohol to the flour mixture and mix well. Once the dough starts to come together, transfer it to a floured surface and knead until the dough is very smooth and elastic (5-7 minutes), adding extra flour as needed to keep the dough from sticking to your hands or the counter.
  • Cover the dough with a tea towel and let rest for 30 minutes - 1 hour.
  • Divide the dough in half. Roll out one half as thinly as you can (aim for 1-2 mm thick).
  • Using a round cookie cutter (we used a 3 ½ inch cutter), cut circles in the dough.*
  • Place a couple cubes of cheese in each round of dough.
  • Fold the dough over the filling to create a half circle. Press the edges of the pastel tightly closed using a fork, to seal the filling in. (If you are having trouble getting the edges to seal, or if your dough has set out for a while and started to dry, simply dip your finger in some water and use it to moisten the edges of the dough.)
  • Continue rolling out the dough and filling it, until all the dough has been used. Heat a deep skillet (or saucepan) with enough oil to cover the pastéis (roughly 1-2 inches). Heat the oil to around 350F, but not smoking.
  • Fry the pastéis until golden and crispy, turning once, being careful not to over-crowd your cooking oil. Frying time will vary depending on how hot your oil is, but it should take from around 1 - 3 minutes a side.
  • Transfer the pasteis to a paper towel-lined plate and serve as soon as possible!

6 cups of corn kernels (from about 6-8 fresh ears of corn - can also use frozen corn kernels (defrost first))
3 cups of grated or crumbled cheese (mozzarella or a fresh farmers cheese, plus more for topping if desired)
1 cup diced white onions (about ½ large onion)
2 garlic cloves (crushed)
About 1 cup corn meal
¼ cup of heavy cream
2 eggs
Salt to taste
Tomato and onion curtido salsa
Aji de tomate de arbol or tree tomato hot sauce
Aji criollo hot sauce

Steps:

  • Pre-heat the oven to 350F.
  • Place the corn kernels, 1 cup of cheese, diced onions, crushed garlic, corn meal, cream, eggs, and salt in the food processor, mix until the corn is pureed.
  • Pour half of the corn mix into a pre-greased rectangular oven mold.
  • Add a layer of cheese using the 2 cups of grated cheese. Add another layer with the rest of the corn mix.
  • Cover with foil and bake in a pre-heated oven for about 45 - 50 minutes. It can served directly as is. If you want the extra cheesy version, then add some more grated cheese on top and turn on the broiler until the cheese is melted and golden, about 5 minutes/
  • Serve warm with tomato and onion curtido, tree tomato hot sauce, and aji criollo.

1 package puff pastry sheets ((I used Pepperidge Farm))
1 package guava paste ((I like the Conchita brand))
1 package cream cheese** (optional (the block over the spreadable kind))
1 egg** (whisked)

Steps:

  • Preheat oven to 400 degrees F. Thaw the puff pastry according to package directions, usually about 20-30 minutes. Line a cookie sheet with parchment paper. Set aside.
  • Cut guava into thin slices. If using cream cheese, cut the block into slices too. Unfold one of the pastry sheets and place it on the cookie sheet.
  • Place 6 slices of guava per pastry sheet fold about 1-2 inches apart (you'll have 18 slices total on the entire pastry sheet). Add cream cheese over guava paste slices (optional).
  • Unfold the second pastry sheet and place it over the other one that now has the guava paste slices.
  • Cut into 9 squares and score the tops of each one. No need to divide the squares. Leave everything intact. Brush egg wash on each one to get that flaky crust.
  • Bake for 25 minutes or until golden brown. Serve immediately and enjoy!

  • Add the corn oil and whisk until well combined.
  • In a liquid measuring cup or small bowl, lightly beat together the eggs. Add the milk.
  • Gradually add the egg mixture to the dry ingredients. Mix until the dough begins to come together in a ball.
  • Transfer the dough to a lightly floured surface and knead for 10 minutes, until smooth.
  • Place the dough in a floured bowl. Cover with a kitchen towel or plastic wrap and let it rest for 45 minutes, or until dough has nearly doubled in size.
  • Roll the dough into about 25 smaller balls, or fewer if you prefer larger pasteles. Transfer to a baking sheet and cover with a kitchen towel so the dough balls don't dry out as you roll them out.
  • Working 1 at a time, roll each dough ball out into ⅛-inch (3 mm) thick ovals. Use an inverted bowl to cut out circles about 4-5 inches (10-13 cm) in diameter. Discard the dough scraps.
  • Add about a tablespoon of Oaxaca cheese to the center of each circle. Lightly wet the edge of the dough with water, then fold in half and seal using the repulgue technique or an empanada mold cutter.
  • Fill a large pot with canola oil and heat to 360°F (182°C).
  • Add several pasteles at a time to the hot oil and fry for about 5 minutes, or until crisp and golden brown. Drain on paper towels.
  • Dust the hot pasteles with powdered sugar. Serve with api, if desired.
