One Pot Pasta with Cheesy Lentil Sauce image

An easy one pot vegetarian pasta dinner that the whole family will love! The protein packed cheesy tomato lentil sauce is thick, creamy and comforting. There is minimal chopping, everything cooks in one pan, and it's on the table in 20 minutes.

5 cloves garlic (minced)
2 tsp mixed Italian herbs
1 can green or brown lentils (drained)
2 Tbsp tomato paste
2 cans chopped or whole tomatoes ((14oz / 400g size cans))
1/2 tsp balsamic vinegar
1/2 tsp brown sugar
300 g dried pasta
170 g grated cheddar cheese

Steps:

  • In a large pan, saute your garlic until fragrant. Add the mixed herbs and lentils and mix together for another minute.
  • Add your tomatoes, tomato paste, balsamic vinegar and sugar to form your tomato sauce.
  • Add the dried pasta and then fill the tomato can one and a half times with water and add to the pan.
  • Bring to a simmer, and let the pasta cook for 10 to 12 minutes (stirring regularly) until it is al dente.
  • Keep an eye on the pasta. If the sauce in the pan thickens up before the pasta is cooked, add some extra water. Thicker pastas will require more water than thinner, quicker cooking ones. I've erred on the side of less water in these instructions, because my pasta was a quick cooking variety. But if, once the pasta is cooked, the sauce is too thin: just keep it on the heat for a few more minutes uncovered until some liquid evaporates. Or you can add some more tomato paste to thicken it up.
  • Once the pasta is cooked, add the cheddar cheese and stir until melted. Serve!

The French green Le Puy lentils are smaller and firmer than brown lentils, but have the same type of earthy flavor. They lend themselves to dishes where you want the lentils to stay intact like salads and sides. "Beluga lentils" will also work for this salad.

Number Of Ingredients 14

1 pound green or beluga lentils about 2 1/4 cups, washed and picked over
1 medium onion, cut in half and peeled
2 large garlic cloves, crushed
1 bay leaf
Salt, preferably kosher salt to taste
1/4 cup minced flat-leaf parsley, or a mixture of parsley and chives
4 ounces fresh goat cheese, cut in rounds
1/4 cup sherry vinegar or red wine vinegar
1 garlic clove, minced
2 teaspoons Dijon mustard
1/4 cup extra virgin olive oil
1/2 cup cooking liquid from the lentils
Salt, preferably kosher salt
freshly ground pepper to taste

Steps:

  • Place the lentils in a large saucepan or soup pot with the halved onion, the garlic cloves, and the bay leaf. Add enough water to cover by 1 1/2 inches. Bring to a simmer, add 1 teaspoon salt, cover and simmer 30 minutes, or until the lentils are tender all the way through but intact. Set a strainer over a bowl and drain the lentils. Remove the onion halves, bay leaf, and garlic and discard. Return the liquid to the pot and bring to a boil. Reduce to 1/2 cup.
  • Preheat the oven to 350ºF. Whisk together the vinegar, garlic, Dijon mustard, olive oil, and cooking liquid from the lentils. Season to taste with salt and pepper. Toss with the lentils. Stir in the parsley (or parsley and chives), place in a baking dish and top with the rounds of goat cheese. Heat through for 15 minutes, until the goat cheese has softened, and serve.

12 ounce penne (dry)
2 tablespoon butter (unsalted)
2 cloves garlic (minced)
6 ounce goat cheese (soft)
1 cup half and half cream
¼ cup fresh basil (sliced chiffonade*)
¼ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 tablespoon lemon juice (from 1 lemon)
lemon zest (from 1 lemon)
1 cup Parmesan cheese (grated)
2 tablespoon fresh parsley (chopped)

Steps:

  • Cook pasta: Cook the pasta al dente according to package instructions. Reserve 1 cup of the pasta cooking water.
  • Make sauce: Heat the butter in a skillet over medium-high heat. Add the garlic and sauté for 30 seconds to 1 minute, just until the garlic becomes aromatic. Add the goat cheese, half and half and stir. Whisk until smooth.
  • Add pasta: Reduce the heat to medium. Add the cooked penne and 1/2 cup of the reserved pasta water to the skillet. Stir well to coat the pasta and let it bubble in the sauce for 1-2 minutes.
  • Finish: If you'd like a thinner sauce, add more of the pasta water as needed. Mix in the basil, then season with salt and pepper to taste. Add the lemon juice and zest and more pasta water if needed. Turn off the heat and stir in the Parmesan cheese.
  • Garnish and serve: Garnish with parsley and serve.

1 ¼ cup dried brown or green lentils, rinsed
1 ¼ cup short pasta shapes (ditalini, elbows, orecchiette, mezzi rigatoni...)
5 cups vegetable or chicken broth, plus more if needed
8 cherry tomatoes, cut into halves ((see notes)*)
1 Tbsp olive oil, plus more for drizzling
2 garlic cloves, minced
1 small-sized onion, diced
1 Tbsp tomato paste
1/4 tsp ground cumin
fine salt, to taste ()
1/8 tsp black pepper, plus more to taste

Steps:

  • Heat oil in a large pot over medium heat. Add onion and saute' for 5 minutes.
  • Add garlic, tomatoes, bay leaves and stir for a minute (If you use canned tomatoes or only tomato paste rather than fresh tomatoes, add them along with the ingredients listed below).
  • Add lentils, cumin, tomato paste, broth, and pepper.
  • Increase heat and bring to simmer. Place lid on and turn the heat down to medium-low. Simmer for about 20-25 minutes or until lentils are soft.
  • Taste and adjust the seasoning according to your liking (see notes).*
  • Add pasta, cook gently over medium heat until al dente. Stir frequently!
  • If the stew seems too thick, gradually add a touch of water or broth and thin to desired consistency (note: the longer it sits on the stove, the thicker it will get). Taste, you might want to adjust again the seasoning before serving.
  • Serve with a drizzle of olive oil, freshly ground black pepper, and grated parmesan cheese if you don't keep it vegan. Also, garnish with chili flakes and chopped parsley for extra flavor if you like. Enjoy!

5 cups water
3/4 cup lentils
2 large cloves garlic, crushed
3 tablespoons extra virgin olive oil
1 cup chopped canned plum tomatoes, with some juice
2 teaspoons salt
1/4 teaspoon salt
1/2 pound vermicelli or capellini, or small tubular pasta, or pasta mista
2 rounded tablespoons finely cut or snipped parsley
Optional garnish; extra virgin olive oil and hot red pepper flakes or hot pepper oil

Steps:

  • In a medium saucepan, bring the water to a rolling boil, add the lentils, and cook, covered over a medium high heat, until nearly but not entirely tender, about 20 minutes.
  • Add the garlic, olive oil, tomatoes, salt and pepper. Reduce the heat, cover and continue to simmer briskly for another 10 minutes, stirring a few times, or until the lentil are fully tender.
  • If using capellini, break it into 2 to 4 inch pieces and add them to the lentils. Cook, covered, at a steady simmer, stirring several times and scraping the bottom of the pot when you do. Cook until the pasta is just done, stirring more frequently as it gets closer to that point. If using a small tubular pasta or pasta mista, cook the pasta at least halfway in plenty of salted boiling water. Drain the pasta, add it to the lentils, and simmer to finish cooking the pasta.
  • When either pasta is cooked to taste, remove the pot from the heat, stir in the parsley, cover the pot, and let stand about 5 minutes before serving. Serve hot, passing hot pepper oil all the best quality extra virgin olive oil for drizzling on top.

Great side dish. French lentils (also called puy lentils) have a wonderful earthy flavor. You can't substitute regular green/brown lentils. They are expensive but usually affordable at your local food co-op. Goat cheese has a creamier texture than feta. I like to add grape tomatoes.

3 tablespoons sherry vinegar
3 tablespoons olive oil
½ teaspoon minced garlic
1 tablespoon olive oil
1 cup French green lentils
1 (14.5 ounce) can chicken broth
1 cup water
⅓ cup chopped fresh chives
¼ cup chopped fresh cilantro
½ cup crumbled chevre (goat cheese)
½ cup quartered grape tomatoes

Steps:

  • Combine sherry vinegar, 3 tablespoons olive oil, and minced garlic in a jar with a lid and shake until blended. Set aside.
  • Place lentils, chicken broth, water, and 1 tablespoon olive oil in a saucepan and bring to a boil. Reduce the heat to low and simmer, covered, until the lentils are just tender to the bite, about 20 minutes. Do not overcook. Remove from heat, drain, and cool for at least 30 minutes. Transfer cooled lentils to a mixing bowl.
  • Stir in the dressing, chives, and cilantro; mix well. If you're serving the salad immediately, add the goat cheese and tomatoes. If you're preparing the recipe ahead of time, refrigerate the salad and add the goat cheese and tomatoes just before serving.
