This recipe is a favorite! Very quick for those days when you get out of work late. I got this years ago from the back of a Ronzoni pasta box. Now I use Barilla Plus multi grain pasta. Taste the pasta from time to time, the Barilla seems to take a bit longer than the regular elbow noodles. So good! Tastes fantastic with corn bread on the side.

2 (14 1/2 ounce) cans stewed tomatoes
2 (14 1/2 ounce) cans dark red kidney beans
2 cups water
1/4 cup dried parsley
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/2 teaspoon dried thyme
16 ounces elbow macaroni

Steps:

  • Bring undrained tomatoes, undrained kidney beans, water, parsley and seasonings to a boil in large saucepan over medium heat.
  • Add pasta, stir, turn off heat, and cover.
  • Stir frequently until pasta is tender.
  • Sprinkle with shredded cheddar cheese if desired.

1 pound kale
1 tablespoon oil, or to taste
1 large red onion, finely chopped
kosher salt and ground black pepper to taste
6 cloves garlic, sliced
1 teaspoon dried sage
1 cup vegetable broth
2 (15 ounce) cans kidney beans, rinsed and drained
1 teaspoon hot pepper sauce

Steps:

  • Cut tough stems off kale and discard. Stack leaves, roll tightly and cut crosswise into 3/4-inch strips. Transfer to a large bowl and cover with cold water; swirl to remove grit. Drain in a colander. Clean a second time if water in the bowl looks visibly dirty.
  • Heat oil in a saucepan over medium heat. Add onion and a pinch each of salt and pepper. Cook, stirring often, until golden brown around the edges, about 3 minutes. Add garlic and sage; cook and stir until fragrant, about 1 minute.
  • Stir in vegetable both, scraping up any browned bits from the bottom of the saucepan. Cover, reduce heat to low, and simmer, about 5 minutes. Increase heat to medium and add the kale. Season with salt and pepper and stir until just wilted, about 2 minutes. Cover and cook until tender but not soft, about 3 minutes.
  • Uncover saucepan; stir in beans and hot sauce. Stir until beans are heated through, 2 to 3 minutes. Season with salt and pepper.

Kosher salt and freshly ground black pepper
4 ounces radiatore or orecchiette pasta
1/4 cup extra-virgin olive oil
1 onion, chopped
3 cloves garlic, chopped
8 ounces Tuscan kale, tough stems removed, leaves chopped
1 tablespoon finely chopped rosemary
1/2 teaspoon crushed red pepper
1 quart chicken stock or low-sodium broth
One 15-ounce can cannellini beans, rinsed and drained
One 6- to 8-ounce jar tuna ventresca in olive oil (or two 3.5-ounce cans solid tuna in olive oil), drained
Grated Parmesan, for serving
Crusty bread, for serving

Steps:

  • Bring a large pot of water to a boil over high heat, then add a small handful of salt. Add the pasta and cook until al dente. Drain the pasta.
  • Meanwhile, heat the oil in a large saucepan or very deep skillet over medium heat. (Alternatively, cook the pasta and then wipe out the pot before proceeding.) Add the onions and garlic and cook, stirring occasionally, until softened, 5 to 7 minutes.
  • Add the kale, rosemary and crushed red pepper. Cook until the kale is just starting to wilt, about 3 minutes. Add the stock and bring to a simmer over high heat. Add the pasta, beans and tuna and simmer over low heat until hot, about 1 minute. Season with salt and pepper. Ladle into shallow bowls and top with grated Parmesan. Serve with crusty bread.

The classic combination of beans and greens in this easy pasta recipe is budget friendly, fast, and flavorful! Just a handful of ingredients and the amount of time it takes to boil the noodles is all you need to get this dish on the table. Put this Pasta with White Beans and Kale on your menu tonight!

12 ounces spaghetti noodles (or pasta of choice; gluten free, if necessary)
2 tablespoons extra virgin olive oil
1/2 yellow onion (diced)
1 teaspoon dried thyme
1 teaspoon red pepper flakes
3/4 teaspoon sea salt
1/2 teaspoon black pepper
1 bunch Lacinato kale (woody stems removed; chopped)
3 cloves garlic (minced)
1 can (15 ounces) Cannellini beans (drained and rinsed; or other variety of cooked white beans.)
1-2 tablespoons nutritional yeast (optional)
squeeze of fresh lemon (to taste)

Steps:

  • Cook the pasta according to package directions in well salted water until al dente. Reserve 1 cup of the pasta cooking water before draining.
  • Heat the oil in a large skillet over medium heat. Add the onion and sauté 4 to 5 minutes, until soft and translucent.
  • Add the thyme, red pepper flakes, salt, and pepper, and sauté for 1 minute until fragrant.
  • Add the chopped kale and garlic. Sauté 3 to 4 minutes until the kale has wilted slightly and is bright green.
  • Add the white beans and stir to combine. Sauté 2 to 3 minutes to heat through.
  • Add the nutritional yeast, if using, and stir to combine.
  • Add the cooked pasta to the skillet. Stir to combine. Tip: Kitchen tongs are easier to use here than a spoon or spatula.
  • Add 1/2 cup of the reserved pasta cooking water to thin the sauce and a squeeze of fresh lemon juice. Add the remaining 1/2 cup of pasta cooking water if you like it saucier. *If you forgot to reserve the pasta cooking water, you can use vegetable broth.
  • Garnish with fresh cracked black pepper, if desired, and serve immediately.

2 red bell peppers
2 tablespoons extra-virgin olive oil,
plus more for drizzling
2 medium shallots, diced
2 cloves garlic, minced
Kosher salt and freshly ground pepper
1 to 2 teaspoons red pepper flakes, plus more for topping
1/2 cup dry white wine
1 28-ounce can diced fire-roasted tomatoes
1 14-ounce can diced fire-roasted tomatoes
2 large bunches kale (2 1/4 to 3 pounds)
4 cups coarsely shredded rotisserie chicken (skin removed)
1 cup chicken stock (optional)
1 pound rigatoni
1 cup grated parmesan cheese (about 2 ounces)

Steps:

  • Place the bell peppers over the flame of a gas burner to char, turning, 3 to 4 minutes per side (or char the peppers under the broiler, turning, 5 minutes). Place in a bowl, cover with plastic wrap and allow the peppers to steam about 10 minutes. Once cool to the touch, remove the peppers from the bowl and pull off the charred skin and stems and remove the seeds. Slice and set aside until ready to use.
  • Set a large Dutch oven over medium-high heat. Add the olive oil, then the shallots and garlic; season with salt and pepper and cook until the garlic is fragrant and the shallots are translucent, 3 to 4 minutes. Add the red pepper flakes and wine and cook until most of the wine has evaporated, 3 to 5 minutes. Add both cans of tomatoes and the roasted red peppers. Mix well and bring to a steady boil, then reduce the heat so the sauce simmers.
  • Meanwhile, prepare the kale by removing and discarding the stems; tear the leaves into bite-size pieces. Fold the kale into the tomato sauce along with the chicken and toss to combine. Cover and cook until the kale has wilted, about 5 minutes. If the sauce seems dry, add the chicken stock 1/2 cup at a time. Continue cooking, covered, until the kale is tender, all the flavors have come together and the sauce is thick, 15 to 20 minutes. Taste and season with salt and pepper.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions, 8 to 10 minutes. Reserve about 1 cup cooking water, then drain the pasta and add it directly to the Dutch oven with the finished sauce. Drizzle in some olive oil. Cook over low heat, tossing to coat everything, 2 to 3 minutes. (This allows the last cooking of the pasta to be done in the sauce.) Add a little of the reserved pasta water if needed. Serve the pasta in large bowls and top with spoonfuls of parmesan, more red pepper flakes and another drizzle of olive oil.
