12 ounces mostaccioli or penne pasta
1/2 cup mayonnaise
1/4 cup whole milk
1/4 cup white vinegar, plus more if needed
Freshly ground pepper
1 1/2 teaspoons adobo sauce from a can of chipotles (or 1 minced chipotle)
1 10-ounce package grape tomatoes, halved lengthwise
1/2 pound smoked gouda cheese, cut into small cubes
24 fresh basil leaves, thinly sliced

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain and rinse under cold water until no longer hot; set aside.
  • Make the dressing: Mix the mayonnaise, milk, vinegar, 1/2 teaspoon salt, pepper to taste and the adobo sauce in a small bowl.
  • In a large bowl, combine the pasta, dressing, tomatoes and gouda. Taste for seasoning, adding more salt and pepper if needed, and even an extra teaspoon or 2 of vinegar, if necessary. Stir in the basil at the end. Refrigerate for a couple of hours before serving.

4 cloves garlic (minced or pressed)
1 tablespoon Dijon mustard
1/2 cup white wine (or 1/2 cup water, but wine adds more flavor)
4 1/2 cups water
3/4 teaspoon salt (more or less to tsate)
1 (8 oz) block swiss cheese (shredded)
1/2 cup shredded parmesan

Steps:

  • Melt butter over medium heat in a large stockpot.
  • Once melted, add in onion, salt and pepper and cook for 5-7 minutes, or until tender.
  • Add in ham, pasta, garlic, mustard, wine (if using), water, and additional salt.
  • Bring to a simmer and simmer for 9-13 minutes, stirring regularly, until pasta is al dente.
  • Remove from heat and stir in swiss and parmesan.
  • Taste and re-season, if necessary, and enjoy!

1 large head cauliflower, cut into 2 (1/2-inch thick) steaks, scraps reserved
2 tablespoons olive oil
Salt and pepper to taste
½ cup Gouda cheese, grated
½ teaspoon smoked paprika for garnish
1 cup peas, cooked
1 lemon, juiced
1 pinch red pepper flakes
6 basil leaves, chopped
1 tablespoon olive oil
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees F.
  • Brush cauliflower steaks with oil and season with salt and pepper. Bake for approximately 10 minutes. Add ham to baking sheet and cook for 5 more minutes, or until cauliflower is browned.
  • In pot of salted boiling water, cook remaining cauliflower scraps until soft. Transfer to blender. Add Gouda and puree until smooth and creamy. Thin with cooking liquid if necessary.
  • To serve, plate cauliflower cream on bottom. Top with roasted cauliflower steak. Add 1/2 cup Smashed Pea Pesto and ham; then garnish with smoked paprika.
  • For pesto, combine all ingredients in the food processor. Season with salt and pepper to taste.

8 ounces uncooked farfalle pasta (or your favorite small pasta )
4 Tablespoons unsalted butter, divided into 1 and 3 Tablespoons (Note 1)
1 shallot, peeled and diced
2 cloves garlic, peeled and minced
1/2 teaspoon Italian seasoning (Note 2)
1/2 teaspoon salt (Note 3)
1/2 teaspoon black pepper (Note 2)
1 Tablespoon all-purpose flour
2 cups heavy cream (Note 4)
1 cup low-fat mozzarella cheese, shredded
1 cup Gouda cheese, shredded
1 cup frozen peas, thawed
1 cup diced ham (Note 4)
pasta water (Note)
fresh parsley, optional garnish

Steps:

  • Prepare the farfalle according to package directions, set aside
  • While pasta cooks, in a saute pan, over medium heat add 1 Tablespoon unsalted butter (Note 1), let melt. Add in diced shallots, saute about 2 minutes to soften shallots.
  • Add in minced garlic, Italian seasoning, salt, and black pepper. Continue to saute another few seconds to blend flavors. (Note 6)
  • Stir in the remaining butter (Note 1), let melt. Whisk in the flour, continue to whisk about 1 minute to blend flavors.
  • Whisk in heavy cream to blend. Cook and stir occasionally, about 5 minutes to thicken sauce.
  • Mix in the shredded cheese combo. Whisk to melt cheese, about 1 minute.
  • Gently stir in the peas, ham, and cooked farfalle. Simmer another minute to blend flavors and warm pasta, stirring occasionally.
  • Taste sauce for seasoning, adjust any, if needed.
  • Serve with chopped fresh parsley, optional.

1/4 cup fine dry breadcrumbs
8 ounces rigatoni pasta, uncooked
2 tablespoons all-purpose flour
2 cups milk
1/4 teaspoon salt
1/4 teaspoon black pepper
4 ounces cooked ham, diced
4 ounces mozzarella cheese, shredded
2 ounces provolone cheese, shredded
2 ounces fontina cheese, shredded
1/4 cup Parmesan cheese, freshly grated

Steps:

  • Melt 1 tablespoon butter in a small saucepan over low heat. Add breadcrumbs, and toss well. Set aside. Cook pasta according to package directions; drain well. Set aside, and keep warm. Melt remaining 2 tablespoons butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Stir in salt and pepper. Add ham and cheeses, stirring until cheeses melt. Add cooked pasta to cheese mixture; stir well. Pour into a buttered 2-quart baking dish. Cover and bake at 375 degrees F for 25 minutes or until bubbly. Uncover and sprinkle with breadcrumb mixture. 500g bag farfalle
50g butter, plus a little extra
200g small mushroom, halved
bunch spring onions, finely sliced
50g plain flour
500ml milk
140g thickly cut ham, chopped
140g mature cheddar, grated

Steps:

  • Cook the pasta according to pack instructions, then drain. Heat oven to 200C/fan 180C/gas 6, then melt a little butter in a large saucepan. Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.
  • Melt the remaining butter in the pan, then add most of the onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce. Increase the heat and bubble the sauce, stirring for a few mins to thicken. Turn off the heat, stir in the ham and most of the cheese, then season to taste.
  • Tip the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish. Scatter over the remaining cheese and spring onions, then bake for 10 mins until golden.

My Dutch son-in-law loves my regular mac & cheese and he LOVES this one using Dutch Gouda (we pronounce it goo-dah, but I'm told that it's actually closer to how-dah). It's really just fancy mac & cheese with vegetables. I serve it with a green salad and french bread.

4 tablespoons butter
4 tablespoons flour
2 cups milk
1 pinch ground nutmeg
1 pinch salt
1 pinch pepper
2 cups grated smoked gouda cheese
1 teaspoon dried mustard
1 cup frozen peas, thawed
2 cups cooked ham, cubed
8 ounces pasta, cooked (farfalle, rotini or shells)

Steps:

  • Preheat oven to 375 degrees.
  • In a medium saucepan, melt butter. Gradually whisk in flour, stirring constantly. Cook over medium heat until flour and butter are smooth. Gradually whisk in milk.
  • Add nutmeg, salt, pepper and dried mustard.
  • Reduce heat to low and cook, stirring frequently, until sauce is thickened. Remove from heat and stir in 1 1/2 cups of the cheese. Adjust seasonings, if desired.
