4 ounces linguine, cooked al dente
2 teaspoons cajun seasoning (your recipe, Cajun Seasoning Mix or store-bought)
2 tablespoons butter
1 thinly sliced green onion
1/2 cup heavy whipping cream
2 tablespoons chopped sun-dried tomatoes
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
1/4 cup grated parmesan cheese

Steps:

  • Place chicken and Cajun seasoning in a bowl and toss to coat.
  • In a large skillet over medium heat, sauté chicken in butter or margarine until chicken is tender, about 5 to 7 minutes.
  • Reduce heat add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through.
  • Pour over hot linguine and toss with Parmesan cheese.

1 lb dry pasta (I like rigatoni)
2 tablespoons olive oil
1/2 cup onion, chopped
2 tablespoons garlic, minced
1 teaspoon chicken bouillon granule
1 cup white wine
1 tablespoon cajun seasoning (or creole-use your favorite)
1 tablespoon sweet smoked paprika
salt, to taste
fresh ground pepper, to taste
2 tablespoons tomato paste
1 pint heavy cream
2 tablespoons fresh parsley, chopped
1/2 cup parmesan cheese, shredded

Steps:

  • In large stockpot, boil water for pasta.
  • In a large sauté pan, heat olive oil over medium heat. Add onions and saute for 2 minutes. Add garlic, saute additional 1 minute.
  • Stir chicken bouillon into white wine and add to pan.
  • Using a wooden spoon, scrape any brown bits off the bottom of the pan. Let the wine reduce to half - about 3 minutes.
  • In the meantime, cook your pasta to the al dente stage.
  • Add cajun seasoning, paprika, salt, pepper, and tomato paste to the sauce. Stir.
  • Add heavy cream. When the cream mixture is almost bubbling, turn heat to low. Let the crème mixture reduce to half - about 5 minutes.
  • Drain the pasta very well - add pasta to the crème sauce.
  • Toss with freshly chopped parsley and Parmesan.
  • Serve.

3/4 1 lb. box bow tie pasta
1 tablespoon olive oil
2 tablespoons butter
2 cloves garlic, chopped
1 small onion, chopped
4 links sweet sausage (about 1 lb. fresh link sausage)
1 pint heavy cream (or whipping cream)
2 teaspoons Cajun seasoning
1 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions, drain and put back in the pot.
  • While the pasta is cooking, using a sharp knife, make long slits on the outside casing of the sausage links. Gently remove the casing from the sausage.
  • Heat the skillet over medium heat and add the butter and oil. Cook onions for about 3 minutes and then add the garlic.
  • Bump the heat up to medium-high and add the crumbled sausage to the pan. Continue cooking for about 5-7 minutes, continuously breaking up sausage with a spatula as it cooks. Make sure sausage is cooked through.
  • Lightly salt and pepper as this cooks.
  • Add the heavy cream and Cajun seasoning to the skillet; stirring to combine. Let simmer for about 4-5 minutes.
  • Add the bow tie pasta to the skillet and gently stir until the pasta is well coated.

cajun seasoning
1 chicken breast (or chicken tenders)
1 pound pasta
1 tablespoon garlic (minced )
⅓ cup green onion (diced)
1 tablespoon cajun seasoning
4 cups heavy whipping cream
1 cup parmesan (fresh grated)
1 red bell pepper (sliced (optional))
1 green bell pepper (sliced (optional))

Steps:

  • Add olive oil to a plate or shallow bowl and cajun seasoning to a plate or solid bowl. Dip chicken breast into oil followed by cajun seasoning and transfer to a cast iron skillet over medium heat.
  • Blacken chicken 3 minutes and flip. Cook chicken 3 minutes or until done. Set aside.
  • Meanwhile, bring a large pot of water to a boil.
  • Cook your pasta according to package directions (I like to save a little of the pasta water just in case the sauce needs thinned).
  • Sauté your peppers and mushrooms over medium heat with a little olive oil (you can also just cook them with the sauce, they just don't get quite as soft)
  • Once they are tender, add garlic, green onions, cajun seasoning and heavy cream.
  • Bring sauce to a boil until bubbles form in the center.
  • Toss the fresh cooked pasta into the cajun sauce with the chicken.
  • Remove from heat and immediately add parmesan cheese. Toss until coated.

1 pound fresh asparagus, trimmed and cut into 2-inch pieces
1 package (14 ounces) smoked sausage, sliced

When I go out to eat at an Italian restaurant, nothing bugs me more than ordering a crème based sauce and what shows up is so much crème that it feels like I'm drinking the pasta. Because of the reduction in this recipe, the cream just hugs the pasta.

8 Chicken Strips
5 handfuls Linguine Pasta
2 cups Parmesan Cheese
0.5 cup Sun Dried Tomatoes

  • 01 - Start boiling some salted water in a large pot, and cook the Pasta. 02 - In a separate small pot, boil the Chicken for 3 minutes. 03 - While the water boils and the Pasta cooks, heat Oil in a large pan. Saute Garlic and Red Pepper Flakes until Garlic is browned and fragrant. 1 lb large shrimp (peeled and deveined)
1 Tbsp olive oil
2 Tbsp cajun seasoning (divided)
2 Tbsp unsalted butter
2 garlic cloves (minced)
1/2 cup diced tomatoes
1 1/2 cups heavy whipping cream
1/2 cup grated parmesan cheese (plus more to serve)
2 Tbsp parsley to garnish ( (optional))

Steps:

  • Cook the penne pasta in a pot of salted water until al dente according to package instructions. Drain the water and cover the pasta to keep warm.
  • Coat the shrimp with 1 Tbsp of the cajun seasoning. In a deep skillet, heat 1 Tbsp oil over medium heat. Once hot, add the seasoned shrimp in a single layer and saute for about 1-2 minutes per side, or until the shrimp is no longer translucent, remove from skillet and cover to keep warm.
  • In the same skillet, melt 2 Tbsp butter with the minced garlic and cook 30 seconds until fragrant. Add in the diced tomatoes and saute for about 2-3 minutes.
  • Pour in the heavy whipping cream, remaining 1 Tbsp cajun seasoning and grated parmesan cheese. Bring to a simmer then reduce to medium/low heat and continue 2-3 minutes or until the sauce thickens.
  • Add the shrimp and pasta back into the skillet and stir until noodles are coated in sauce and everything is heated through. Garnish with chopped parsley if desired and serve.

1/2 lb. penne pasta (cooked to al dente)
1 tbsp olive oil
1 bell pepper (sliced in strips, any color)
1/2 red onion (sliced in strips)
3-4 garlic cloves (chopped)
14.5 oz can diced tomatoes (drained )
12 oz fully cooked beef smoked sausage (cut into 1/2 inch pieces )
1 tsp (heaping) cajun seasoning (**see note about cajun seasoning)
1 tsp (heaping) smoked paprika
1/2 tsp each: onion powder, garlic powder, dried oregano
pinch red pepper flakes (or cayenne pepper for more heat)
1 1/4 cups heavy whipping cream

Steps:

  • Cook pasta. Cook your penne pasta to al dente, per box instructions. Drain and set aside.
  • Saute the peppers & onions in oil. In a large skillet (with high sides), over medium heat, add 1 tbsp olive oil and saute the onions, peppers, and garlic for 4-5 minutes.
  • Add all additional ingredients, except cream. Stir in the 1/2 lb. pasta, 12 oz. smoked beef sausage, 14.5 oz. drained diced tomatoes, 1 heaping tsp cajun seasoning, 1 heaping tsp smoked paprika, 1/2 tsp onion pwd, garlic pwd, dried oregano, pinch of red pepper flakes. Stir for 1 minute to coat the pasta and warm the spices.
  • Stir the the heavy cream and simmer until thickened. Stir in 1 1/4 cups heavy whipping cream and simmer over medium heat until the cream has thickened and coated the pasta, about 5-10 minutes.
  • Taste for seasonings & serve!

8 ounces penne pasta ((gluten-free, if needed))
1 tablespoon extra-virgin olive oil ((12 grams))
1/2 red onion (, chopped (140 grams))
2 bell peppers ((I use red & green; 128 grams each))
4 ounces cremini mushrooms (, chopped (117 grams))
1 (14.5 oz) can diced tomatoes with green chilies (, reserve juices for sauce)
salt & pepper
1/2 cup raw cashews ((65 grams))
1/2 teaspoon dried oregano
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika ((or regular paprika))
Pinch of cayenne pepper

Steps:

  • Bring a pot of water to a boil (I add 1 tablespoon of salt to the water), then cook the pasta according to the directions on the package. When it's done cooking, drain and set aside.
  • While the pasta is cooking, heat the olive oil in a separate large skillet. Saute the onion, peppers, and mushrooms until they start to soften, about 5 to 8 minutes. Season the veggies with a 1/2 teaspoon of salt as you stir, and keep this on medium-low heat, so you can stir together the spice blend as the veggies cook.
  • In a small bowl, stir together the Cajun spice blend. Start with just a pinch of Cayenne pepper, because you can always add more later, but you can't undo spice! An 1/8 teaspoon of cayenne pepper makes this dish quite spicy, so I recommend starting with less than that.
  • To make the creamy sauce, drain the juices from the can of diced tomatoes directly into your blender. To this, add in the cashews, a 1/4 cup of water, and a 1/2 teaspoon of salt. Blend until very smooth, with no visible cashew pieces remaining.
  • Once the veggies are tender, add in the spice blend and stir briefly. Then, add in the diced tomatoes, creamy sauce, and the pasta, and toss well.
  • Taste the pasta, and adjust any seasoning, as needed. You can add more salt to boost the flavor, some freshly ground black pepper, and another pinch of cayenne pepper, if you like things spicier, or a little more smoked paprika, for more of a smoky flavor. Serve warm, with any extra garnishes you like. (I added chopped green onions and cilantro.) Leftovers can be stored in an airtight container in the fridge for up to 3 days.

500 g (1lb) shrimp / prawns (peeled and deveined )
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp chilli flakes
2 tsp oregano
2 tbsp Cajun seasoning
2 tbsp butter
2 tsp crushed fresh garlic
1 cup white wine (I used Sauvignon Blanc)
1 cup heavy cream
1-2 tsp fresh lemon juice
salt and pepper (to taste)

Steps:

  • Place a large pot of salted water over medium heat. Bring to the boil then season generously with salt.
  • Once boiling, add the pasta and cook according to package instructions until al dente. Reserve 1 cup of water then drain and set aside.
  • Place the peeled and deveined shrimp in a large bowl then add the olive oil, crushed garlic, half of the seasonings and a generous pinch of salt.
  • Stir to coat the shrimp in the spices.
  • Heat a large skillet or pan over medium-high heat. Sear the shrimp for a minute per side until they are golden brown and just cooked.
  • Remove and set aside.
  • In the same pan, melt the butter and add the garlic. Cook for 30 seconds then add the remaining spices.
  • Cook for another 30 seconds then pour in the white wine. Allow the pan to deglaze and the wine to reduce by half.
  • Pour in the cream and season with salt and pepper. Allow the cream to simmer for 5 minutes or until the sauce coats the back of a spoon.
  • Taste and adjust seasoning if necessary.
  • Add the shrimp back to the pan with a squeeze of fresh lemon. Allow the shrimp to heat through.
  • Toss the creamy sauce and shrimp with cooked pasta of your choice and a splash of the reserved pasta water and serve scattered with fresh parsley and oregano (optional).
