BRAISED LAMB RAGU WITH PENNE
If you love lamb, then try this dish, it is a fantastic dinner to serve to guests, or of coarse family, as it is so easy to make! I promise you will get rave reviews on this dish! This dish has lots of sauce, when I made it I simmered the sauce separately in a small saucepan for about 25 minutes to reduce slightly after the complete dish was cooked, but that is only optional, also if you have any leftover sauce, you can freeze it.

Steps:
- Season the lamb shanks with salt and pepper, to taste. Heat the oil in large heavy pot over medium-high heat. Working in batches, if necessary, to not overcrowd the pan, sear the shanks on all sides until deep brown, about 7 minutes. Remove the shanks to a plate and add the port. Bring to a simmer, scraping any brown bits off bottom of pan and reduce by 1/3. Add the mulling spices, wrapped in cheesecloth or in a muslin tea bag. Return shanks to the pot, adding water if needed, to cover the meat. Cover and simmer until the meat is tender, about 2 1/2 hours. Remove the shanks to a cutting board and let rest. Discard the mulling spices. Simmer the braising liquid until reduced and thickened, about 20 minutes.
- Meanwhile, cook the pasta to al dente according to package directions in a large pot of salted boiling water, about 4 minutes. Pull the meat from the bones, chop it and add it to the sauce. Drain the pasta, and add it to the meat and sauce. Toss and serve immediately. Enjoy!

- Add 1 tablespoon of the olive oil to a heavy-bottomed pot with a lid over medium-high heat (I use a 4-qt Dutch oven). Use paper towel to pat the lamb as dry as possible, then season generously with 1 teaspoon each kosher salt & ground black pepper. Add the seasoned lamb to the Dutch oven and cook until deeply browned on all sides, about 2-3 minutes per side. Work in batches as needed to avoid overcrowding the pot, which prevents browning. Transfer the lamb to a plate and set aside. At this point, preheat the oven to 325 degrees F.
- Add the remaining 1 tablespoon olive oil to the pot & reduce the heat to medium. Once the oil is hot & shimmers, add in the onion, carrots, and celery, seasoning with 1 teaspoon kosher salt. Cook, stirring occasionally, until the veggies are softened & deeply browned, 15-20 minutes. Stir in the garlic and cook until fragrant, 1-2 minutes. Stir in the tomato paste, stirring to coat the veggies, and cook for 1-2 minutes more, caramelizing the tomato paste.
- Slowly pour the red wine into the Dutch oven, using a wooden spoon to scrape up the browned bits that have formed at the bottom of the pot – that’s where all the flavor is! Let the red wine reduce by about half (this goes by quickly!), then pour in the beef stock, crushed tomatoes, and the herbs. I like to use kitchen twine to tie them into a little bundle for easy removal. Return the lamb to the Dutch oven.
- Cover the Dutch oven and place it in the oven to braise for 2 – 2 ½ hours. When it’s ready, the lamb should shred very easily – it’ll be tender enough that you should be able to shred it right in the ragu by using the back of a wooden spoon. Remove the Dutch oven from the oven. Remove & discard the spent bay leaves & herbs. Shred the lamb & stir to combine. At this point, you can cool & store for later use (see Recipe Notes for storage & freezing instructions), or proceed with prepping lamb ragu pappardelle or gnocchi (below).

- Preheat oven to 350°. Season lamb with salt and pepper. Heat canola oil in a medium ovenproof pot over medium-high. Cook lamb, turning occasionally, until evenly browned, 10–12 minutes.
- Reduce heat to medium-low and cook shallots and garlic until shallots are softened and edges of garlic are golden brown, 3–4 minutes. Add tomato paste and cook until heated through and darkened in color, about 2 minutes.
- Meanwhile, tie remaining 5 thyme sprigs into a bundle with twine. Heat olive oil in a large skillet over medium. Add onions and thyme bundle; season with salt.
- Transfer lamb to a cutting board and let cool. Strain braising liquid through a fine-mesh sieve into a small bowl or measuring cup (you should have about ¼ cup).
- Pull off meat from shank and finely chop; transfer to a medium bowl; discard any silver skin and excess fat. Add caramelized onions, cheese, 4 Tbsp.
- Crush tomatoes with your hands or the back of a fork in reserved pot. Add remaining braising liquid and solids and cook over medium heat, stirring occasionally, until reduced by half and sauce is thickened and slightly chunky, 25–35 minutes.
- Dust a large rimmed baking sheet with cornmeal. Set pasta maker to thickest setting; dust lightly with cornmeal. Divide dough into 4 pieces. Working with 1 piece at a time and keeping remaining dough wrapped in plastic as you work, flatten dough into a narrow rectangle (no wider than mouth of machine); pass through rollers.
- Lightly dust work surface with cornmeal. Cut sheet of dough in half crosswise. Starting 1" from the short edge, spoon lamb mixture, 1 Tbsp. at a time, down length, spacing about 1" apart (you should get 5 mounds).
- Using a sharp knife or pizza cutter, cut each ravioli into a 2" square. Arrange on prepared sheet, dust with cornmeal, and cover loosely with plastic wrap.
- Working in batches if needed, cook ravioli in a large pot of boiling salted water until tender, about 5 minutes. Drain.
