Steps:
- Bring large pot of salted water to a boil. Meanwhile in large skillet, heat oil and saute leeks, stirring often, about 3 minutes or until softened.
- Add garlic, thyme, wine and sun-dried tomatoes.
- Cook 1 minute, then remove from heat and set aside.
- Add pasta to the pot of boiling water, and cook according to package directions.
- About 2 minutes before pasta is done, add asparagus and cook just until tender. Drain pasta and asparagus and transfer to shallow serving bowl.
- Reheat sauce and add to pasta, tossing to coat.
- Season with salt and pepper and add goat cheese. Serve hot.

Steps:
- Cook Pasta as directed, drain, set aside.
- In large skillet, heat olive oil.
- Add onion, garlic, and rosemary, saute until garlic begins to caramelize and the onions are translucent.
- Add white wine and simmer for about one minute.
- Add the heavy cream, salt, pepper, asparagus and sundried tomatoes.
- Simmer for about 5 minutes or until vegetables are heated.
- Toss cream mixture with pasta and Grated cheese.

PASTA WITH ASPARAGUS AND SUN DRIED TOMATOES
Pasta with asparagus and sun dried tomatoes. A quick and easy spring pasta recipe featuring asparagus and sun dried tomatoes with a lemon basil dressing.

Steps:
- Prep all your ingredients as you bring a large pot of water to a boil.
- Snap off the tough ends of asparagus and discard. Cut the asparagus into bite sized pieces. Set aside.
- Finely mince sun dried tomatoes and set aside.
- Grate parmesan cheese and set aside.
- Mince garlic and set aside.
- Mince basil and set aside.
- Make dressing by whisking together lemon juice, 2 tbs olive oil, 1 clove of minced garlic, minced basil, black pepper and salt. Set aside.
- Once the water is boiling, add pasta and bouillon cube. Cook according to package instructions.
- While the pasta is cooking, add 1 tbs olive oil to a large sauté pan over high heat. Add cut up asparagus, two cloves of minced garlic and red pepper flakes to the sauté pan. Stir for one minute over high heat, turn down heat to medium low, cover sauté pan with lid and cook asparagus for 4 minutes - stirring occasionally.
- When the pasta is ready, drain and add to the asparagus. Add minced sun dried tomatoes and lemon basil dressing and stir until combined. Sprinkle with parmesan cheese and gently toss before serving.
ASPARAGUS GOAT CHEESE PASTA
Steps:
- Preheat oven to 425° F. and line a sheet pan with foil. Lay the asparagus on the sheet pan and drizzle with olive oil, salt and pepper. Toss together and spread into a single layer. Roast the asparagus for 9-12 minutes or until tender. Cut the asparagus into approximately 1 inch pieces.
- While the asparagus is roasting cook the pasta. Before draining reserve 1/2 cup of the pasta water. Drain the pasta and then add it back into the pot with the frozen peas, goat cheese, lemon zest and roasted asparagus. Season with salt and pepper.
- Stir everything together until the goat cheese melts. Stir in some of the reserved pasta water to thin out the sauce until desired consistency is achieved. Taste for seasoning and serve.

- Cut asparagus into 1-inch pieces. Put 1 tablespoons water in a microwave safe bowl, add asparagus, cover, and microwave on high for 3 minutes. Meanwhile, cook pasta til al dente, about 10 minutes. - Heat 2 tablespoons of the oil from the sun-dried tomatoes in a heavy large skillet over medium heat. Add the onion and saute until tender, about 3 minutes. Stir in the garlic and saute until fragrant, about 1 minute. Add the tomato paste and cook for 2 minutes, stirring constantly. Add the wine and sun-dried tomatoes and simmer until the liquid reduces by half, about 2 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, stirring occasionally, about 5 minutes. Drain, reserving 1/2 cup of cooking liquid. Add the pasta to the tomato mixture and toss to coat, adding some reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper. Sprinkle with the goat cheese and parsley and stir. Mound the pasta into bowls and serve.

- Heat the oil in a saucepan and saute the asparagus for about 4 minutes. Add the tomatoes, thyme, parsley and salt and pepper. Saute an additional 3 to 5 minutes. Pour the vegetables over the cooked pasta and sprinkle the Parmesan cheese over the top.

- Put the pine nuts in a dry small skillet over medium heat. Shake constantly until evenly toasted on all sides, about 4 minutes. Set aside.
- Fill a large saucepan three fourths full of water. Bring to a boil over high heat and add kosher salt. (about 1 1/2 teaspoons kosher salt per quart of water). Add the pasta and cook, stirring occasionally, until barely tender, 8 to 10 minutes. Add the asparagus to the pan and cook until tender-crisp, 1 to 2 minutes. Drain the pasta and asparagus, reserving 3/4 cup of the cooking water.
- Set the pan over medium heat and heat the olive oil. Add the garlic and cook until fragrant and lightly brown, 1 to 2 minutes. Return the pasta and asparagus to the pan, then add the reserved cooking water. Add the tomatoes (if using), Parmesan cheese, Bousin, dill and the 3/4 teaspoons lemon pepper and toss to combine. Stir in the pine nuts. Season with kosher salt to taste and more lemon pepper if necessary.
- Divide the pasta between 2 bowls and garnish with parsley, if desired. Serve immediately.

Wonderful dish for the summer and your fresh tomatoes. This recipe serves 12, so you may want to cut in half for smaller servings. Please note: this is an adopted recipe and I have just made it myself. Findings: I used different pasta since it's what I had to hand, and this made quite a large serving bowl filled to the top, and fusilli would have been easier to mix so it's the better choice. Taste? (dreamy look coming over me) awesome... if you love sundried tomatoes you gonna Looooove this ! I doubled the dressing,(more garlic is good) but left the capers to be added at the end by those who like them.. the bowl with the dressing would probably have been licked clean if only the others would have left one of us at the table alone LOL ! the dressing and the pasta compliment each other perfectly. - Cook pasta in large pot of boiling, salted water with splash of oil. Boil 12 minutes, or according to directions on package. Drain well and allow to cool.
- Place pasta in bowl and add tomatoes, olives, mozzarella and chopped sun-dried tomatoes.
- To make dressing: Combine sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt and pepper in food processor until almost smooth.

PASTA WITH GOAT CHEESE AND ROASTED ASPARAGUS
Steps:
- Preheat oven to 450°F. Place asparagus on a large rimmed baking sheet; dot with 2 tablespoons butter, and season with salt and pepper. Roast until tender, tossing occasionally, 10 to 15 minutes. Remove from oven and cut into 2-inch lengths.
- Meanwhile, bring a large pot of water to a boil; add a generous amount of salt. Cook pasta until al dente according to package instructions. Reserve 1 1/2 cups pasta water; drain pasta, and return to the pot.
- In a bowl, combine goat cheese, remaining 3 tablespoons butter, and 1/2 cup reserved pasta water. Season with salt and pepper, and whisk until smooth.
- Add goat-cheese mixture and asparagus to pot; toss with pasta to combine, adding enough additional pasta water to create a thin sauce to coat pasta. To serve, divide among shallow bowls, and garnish with chives.
SHRIMP. TOMATO AND GOAT CHEESE PASTA
Ahtough this light dish is truly delicious "as is", you can vary it by adding leftover cooked broccoli or asparagus. Each week, I cook 8 ounces of pasta, drain and store it in a resealable plastic bag so I can fix this light lunch or supper in under 20 minutes, including peeling the shrimp. Vegetarians can substitute black beans for the shrimp. If you love olives, sprinkle a few sliced ones on top.

- Cut shrimp in half lengthwise.
- Cover and microwave about 1 minute just until shrimp turn pink.
- Set aside.
- NOTE: As you work, divide the ingredients evenly between two bowls.

- Top with goat cheese cut into pieces.
