12 ounces whole-wheat spaghetti
2 tablespoons olive oil
1/2 medium onion, thinly sliced, lengthwise
2 garlic cloves, thinly sliced crosswise
1/2 cup dry white wine
1 can artichoke hearts, drained, rinsed, and quartered lengthwise
1/3 cup pitted kalamata olives, quartered lengthwise
1 pint cherry or grape tomatoes, halved lengthwise
1/4 cup grated Parmesan cheese, plus more serving
1/2 cup fresh basil leaves, torn

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente according to package directions. Drain, reserving 1 cup of pasta water. Return pasta to pot.
  • Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high. Add onion and garlic, season with salt and pepper, cook, stirring occasionally until browned, 3 to 4 minutes. Add wine and cook until evaporated, about 2 minutes.
  • Stir in artichokes and cook until starting to brown, 2 to 3 minutes. Add olives and half of the tomatoes; cook until tomatoes start to break down, 1 to 2 minutes. Add pasta to skillet. Stir in remaining tomatoes, oil, cheese, and basil. Thin with reserved pasta water if necessary to coat the spaghetti. Serve with additional cheese.

8 ounces rigatoni pasta, any pasta will do, cook according to package directions, allow time for this
2 teaspoons olive oil
1 teaspoon dried oregano
2 garlic cloves, minced
1/4 cup green onion, sliced
15 ounces diced canned tomatoes, with juices
1/4 cup fresh flat leaf parsley, chopped, divided
2 tablespoons lemon juice
7 ounces marinated artichoke hearts, slightly drained
4 ounces kalamata olives, halved, add more to your liking
1 cup feta cheese, crumbled, divided, can use less

Steps:

  • Heat a large pot of water for boiling pasta, add salt as desired. Cook Rigatoni to package instructions. (may take up to 13 minutes) Drain.
  • In the mean time.
  • Heat oil in a large nonstick skillet over medium high heat.
  • Add garlic, green onions & oregano; sautee 60 seconds or longer until green onions, soften slightly. Careful not to burn the garlic.
  • Add tomato, artichoke hearts, 1/2 of parsley, and lemon juice; Stir to combine, simmer until heated through. About 5-7 minutes. Add Kalamata olives, toss to coat and warm through. Can simmer longer until tomatoes are tender. NOTE: Do not add the kalamata olives too soon, the heat tends to make them taste off, to me.
  • Add rigatoni to the tomato mixture and 3/4 cup cheese, toss gently.
  • Top with remaining 1/4 cup cheese, if desired and parsley.
  • Serve immediately.

Steps:

  • Cook pasta according to directions.

Steps:

  • Purée 2 1/2 cups tomatoes, wine, and garlic in blender. Heat oil in heavy large skillet over medium-high heat. Add tomato puree and olives. Cook until sauce begins to thicken, stirring often, about 6 minutes.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1/2 cup pasta cooking liquid.
  • Add pasta, parsley, basil, and vinegar to sauce in skillet. Toss over mediumhigh heat until sauce coats pasta, adding reserved cooking liquid by 1/4 cupfuls if dry, about 3 minutes. 1 garlic clove, smashed
1/4 cup olive oil
Juice from 1/2 a lemon
1/3 cup halved Kalamata olives

1 (10-ounce) jar artichoke hearts, drained and quartered (use the kind marinated in herbs)
2 tablespoons chopped fresh parsley
1/2 teaspoon kosher salt

Steps:

  • Bring a large pot of water to a boil. Add the spaghetti and cook it according to package directions.
  • While the spaghetti is boiling, add the garlic and olive oil to a small pan. Heat the oil over medium-low heat and let the garlic gently cook in the oil, for about ten minutes. Adjust the heat, if needed, so the garlic doesn't brown too quickly. After ten minutes discard the garlic and turn off the heat.
  • Once the spaghetti is cooked, drain it and return it to the pot. Add everything, except the feta cheese, to the pot with the spaghetti and toss it all to combine. Add 3/4 of the feta, reserve some for serving, and give it one more gentle toss. Serve right away with the extra feta on the side.

2-3 chopped Garlic Cloves
Fresh basil bunch (about 1/3rd cup, see notes)
8 oz. block of feta cheese

8 oz. box of pasta - I recommend Cavatappi

Steps:

  • Preheat oven to 400 degrees.
  • Pour in 2 pints of cherry tomatoes into casserole dish.
  • Place feta cheese block in center of tomatoes.
  • Sprinkle tomatoes and cheese with sea salt, freshly cracked pepper.
  • Drizzle olive oil around dish, approximately 1/3rd cup, going over tomatoes and cheese. Its fine to use a little more or a little less.
  • OPTIONALLY add 1/3rd cup fresh basil leaves - please read article about adding basil leaves prior to baking.
  • Place in oven on 400 for 30 minutes.
  • Move on to boiling pasta al dente according to box. I recommend Cavatappi, however other pastas can be used.
  • Carefully remove dish after 30 minutes. Tomatoes should be popped and cooked, cheese should be hot.
  • Throw in chopped garlic. Add in freshly chopped basil leaves, about 1/4th-1/3rd cup, and mix.
  • Pour in half of the cooked pasta into dish and stir, combining cheese, tomatoes and pasta.
  • Stir in second portion of pasta and continue mixing.
  • Serve while warm.

  • Heat the olive oil in a large skillet over medium heat. Season the chopped chicken with sea salt, freshly cracked pepper, and garlic powder, to taste. Add the chicken to the skillet and cook, stirring occasionally, for 5-6 minutes.
