TUNA & ARTICHOKE PASTA SALAD
I have been making this light, tangy pasta salad ever since I was at the University of Wyoming in the late 1980s. Made with pantry ingredients, it's quick and easy. A nice lunch or summertime dinner with fresh fruit or hearty bread. Sometimes I add halved cherry or grape tomatoes for a little sweetness. Leftovers are just as good! (Prep time does not include cooking time for pasta.)

Steps:
- Combine olive oil, lemon juice, garlic and capers in a small jar and shake to mix.
- In a separate bowl, combine tuna, olives, artickokes and parsley.
- Gently stir in cooked pasta, drizzle with dressing and toss.
- Add salt and pepper and chill briefly if desired.
- Divide into 2 bowls and enjoy!
ARTICHOKES AND TUNA PASTA SAUCE (RACHAEL RAY)
Started with a Rachael Ray recipe that looked amazing but very high fat and calories! Gave it a much needed fat and calorie makeover and this is how it ended up. Steps:
- Heat a large skillet over medium high heat and add butter and olive oil. When melted add shallots and garlic, and stir 3 minutes. Add tuna and heat through breaking it down as small as you want it. I like large chunks.
- Add artichokes and thyme and salt and pepper to taste. Remove from heat and add in vermouth or wine and chicken broth. Return to heat and reduce it a little just until it forms a nice sauce.
- Add lemon juice and zest to sauce. Add 1/2 cup starchy cooking water to sauce before draining pasta. Toss pasta with sauce. I like to remove from heat and let the pasta absorb some sauce. Taste and adjust seasonings if desired. Serve topped with parmesan and red pepper flakes if desired. Original recipe calls for seasoned bread crumbs on top,.
EASY TUNA PASTA SALAD WITH ARTICHOKES AND CROUTONS
Super fast and easy to make. I've made this when I only had 30 minutes before having to leave for work. I've tweaked it over time, but I've finally found the right combination.

Steps:
- Cook the pasta as directed on the box.
- Rinse pasta with cold water and transfer to a large mixing bowl.
- Add tuna, grape tomatoes,artichoke hearts, and mayo. You may use more or less artichokes as you like -- I find that 1 jar of artichoke hearts is good to make this recipe 3 times, which is why I say use a third of it. Same with mayo -- use more or less to your tasting.
- Mix well.
- sprinkle cheese and croutons.
- enjoy :).

Steps:
- Cook pasta in large pot of boiling, salted water until tender, but firm, 8 to 12 minutes, stirring often.
- Drain well and rinse with cold water.
- Shake out excess water and toss pasta with oil.
- Combine mayonnaise, lemon juice, parsley and basil.
- Place pasta in large bowl.
- Add mayonnaise mixture, chicken, artichokes and tabasco.
- Toss well.
- Garnish with almonds.
- For a decorative presentation, serve in avacado halves, in tomato cups or on lettuce leaves.
GRILLED CHICKEN PASTA SALAD WITH ARTICHOKE HEARTS
Use canned artichoke hearts but make sure to rinse them thoroughly. I've also used this recipe with turkey sausage or pepperoni instead of the grilled chicken and both make fun substitutions. This travels well! If you want to cut down on oil, try subbing half chicken broth.

- Light the grill or heat the broiler. Coat the chicken with 1 tbsp of the oil and season with 1/4 tsp salt, 1/4 tsp garlic powder and 1/4 tsp pepper.
- Grill or broil until just done, 4-5 minutes per side. Let the chicken rest for 5 minutes and then cut crosswise into 1/4-inch slices.
- In a large pot of boiling salted water, cook the fusilli until just done. Drain, rinse with cold water, and drain thoroughly.
- In a large bowl, toss the pasta with 1 tbsp olive oil. Make sure to coat all the pasta thoroughly, so it won't stick together.
- Add the chicken, artichoke hearts, scallions, parsley, remaining 5 tbsp oil, the vinegar, remaining 1 tsp salt, 1/4 tsp pepper, and the Parmesan to pasta and toss well.
- Serve with additional parmesan and Enjoy!
ARTICHOKE PASTA SALAD
Steps:
- In a large bowl toss all of the ingredients. Serve or store in the refrigerator until ready to serve.
- In a 1-quart mason jar, place all of the herbs, zest, chile, and peppercorns. Pour both oils into a saucepan and heat to 200 degrees F. Pour the hot oils into the jar and cover with a kitchen towel. Let stand overnight.
- Place cheesecloth over the top of the jar and replace the outer rim of the lid. Invert and strain oil into desired container.
PASTA SALAD WITH ARTICHOKES AND TUNA (OR CHICKEN)
I got this recipe from a friend. Its a very easy and light main dish, great for summer evenings. I serve it with a spinach salad and bread. When I bring this dish to a church supper I always get asked for the recipe. A big thanks to Pat Duran for her terrific picture She used cooked chicken and this variation turned out great.

- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water. Transfer to a large bowl and toss with the remaining ingredients. Chill and serve.
- NOTE: To extend this salad to serve 6 nicely add one (10 ounce) box of frozen peas, cooked, and one small can of well drained mushrooms.
