My Pasta Roni Parmesan copycat recipe has more garlic than the original but it suits my family and hopefully it will suit yours too.

3 tsp olive oil
3 TBS butter
4 cloves garlic (minced)
3 cups chicken stock
1/2 box angel hair pasta
1 1/2 cups Parmesan cheese (shredded)
3/4 cup half and half

Steps:

  • In a large saucepan, heat the olive oil and butter over medium heat until melted.
  • Add the garlic and stir for about 1 minute, don't let garlic burn or it will get bitter.
  • Pour in the chicken stock, turn heat up to high until liquid comes to a boil.
  • Turn the heat back to medium, add the uncooked pasta and cook for 4-5 minutes until al dente.
  • Remove the pan from the heat and stir in the Parmesan cheese until melted.
  • Stir in the half and half then let sit for 5 minutes before serving.

One Pot Chicken Parmesan Pasta image

All the great chicken parmesan flavors, combined in one easy one pot pasta dish that's ready in 30 minutes! Less dishes, but a meal with maximum flavor!

2-3 boneless skinless chicken breasts, (diced into bite sized pieces)
1 tsp Italian seasoning
1/2 tsp garlic powder
1 medium yellow onion, (minced)
3 cloves garlic, (minced)
16 oz dried short-cut pasta ((I used rigatoni))
24 oz jar of your favorite marinara sauce ((I used Newman's Own))
water to fill empty marinara sauce jar
1 cup mozzarella cheese
1/2 cup parmesan cheese
salt and pepper, to taste
additional dried Italian seasoning, optional
fresh parsley and/or basil, minced (for garnish)

Steps:

  • To a large pot or skillet (I used my dutch oven), add a drizzle of olive oil and heat over MED-HIGH heat. Add chicken, season with salt, pepper, Italian seasoning and garlic powder. Cook about 5 minutes, until chicken is most of the way cooked through. Remove to a plate.
  • Add onion and garlic to the pot and cook about 2-3 minutes, until soft. Pour in marinara sauce, fill up empty sauce jar with water and add to the pot. Bring to a boil, then reduce to a strong simmer.
  • Add chicken and pasta, stir, then cover and cook for 10-15 minutes, until pasta is cooked to your liking. Stir in parmesan cheese and 1/4 cup of the mozzarella cheese.
  • Sprinkle remaining 3/4 cup mozzarella cheese on top of the dish and cook another 2-3 minutes, until cheese is melted and gooey.
  • Sprinkle with additional Italian seasoning if desired, and garnish with parsley or basil.

Packaged noodle side dishes are a great convenience food but they are high in sodium, packed full of preservatives, and expensive! Make your own version at home with this recipe using simple ingredients you probably already have on hand!

Number Of Ingredients 8

1 1/4 cup water
1/2 cup milk or half-and-half
1 1/2 cubes chicken bouillon
2 tablespoons butter or margarine
1 1/4 cup noodles, curly, flat, rotini, etc
1/4 teaspoon garlic powder
3 pinches dried parsley
1 dash black pepper

Steps:

  • Place a 2-quart saucepan over medium heat. Add the water, milk, chicken bouillon cubes, butter, pasta, garlic powder, parsley, and pepper. Bring to a boil then turn the heat down to a simmer. Cook, uncovered, for 15 minutes or until the pasta is tender. Remove the pan from the heat and place a cover on it. Let it sit for 5 minutes for the sauce to thicken a bit more. Stir before serving. Variations: add 1 cup chopped cooked chicken, turkey, drained tuna or other meat. Make it into stroganoff by adding browned and drained ground beef and using beef bouillon cubes instead of chicken and stirring in 1/4 cup sour cream before serving.

  • Bring the pot to a boil, then reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 18-20 minutes.
  • Stir in Parmesan. If the mixture is too thick, add more milk as needed until desired consistency is reached.

Either way it's a quick and easy weeknight dinner we created together and scribbled on a little recipe card more than a decade ago, and it remains in my weekly dinner rotation to this day. It's a simple dinner the whole family will love.

8 ounces gluten-free penne pasta or whole-wheat penne pasta
2 tablespoons extra-virgin olive oil
1 pound boneless, skinless chicken breast or thighs, trimmed, if necessary, and cut into bite-size pieces
½ teaspoon salt
¼ teaspoon ground pepper
4 cloves garlic, minced
½ cup dry white wine
Juice and zest of 1 lemon
10 cups chopped fresh spinach
4 tablespoons grated Parmesan cheese, divided

Steps:

  • Cook pasta according to package directions. Drain and set aside.
  • Meanwhile, heat oil in a large high-sided skillet over medium-high heat. Add chicken, salt and pepper; cook, stirring occasionally, until just cooked through, 5 to 7 minutes.

2 teaspoons olive oil
1 cup water
1 cup vegetable broth
1 cup heavy cream
1 teaspoon minced garlic (if you like garlic add more, if you don't like garlic, you can omit)
8 ounces grated Parmesan cheese

Steps:

  • In your Instant Pot Bowl, add the pasta. (Break it up, so it fits, the size will depend on what size Instant Pot You are using)
  • Then add the olive oil, minced garlic, vegetable broth, heavy cream, and water. Then add your lid, moving the valve to the sealed position.
  • Set manual high pressure for 3 minutes. When the time is up, do a quick release.
  • Add the Parmesan cheese mix well.
  • Plate, serve and enjoy!

1 (6 ounce) box Pasta Roni
26 ounces Ragu pizza sauce
4 breaded chicken patties
1/4 cup parmesan cheese
1 cup mozzarella cheese

Steps:

  • Cook Pasta Roni according to directions on box.
  • Place cooked Pasta Roni in a 8x8 baking dish.
  • Mix half the jar of Ragu with pasta.
  • Place 4 chicken patties on top of pasta.
  • Pour ret of Ragu on chicken patties.
  • Sprinkle the parmesan and mozzarella cheese on top.
  • Bake according to directions on frozen chicken patty box.

  • In a medium saucepan, melt the butter over medium heat. Add the flour and whisk until smooth. Cook 1 minute. Whisk in the milk and cook, stirring constantly, 3 minutes. Remove from the heat and whisk in the sour cream, onion powder, garlic powder, salt, and chives.
  • Add the angel hair pasta to the pot of boiling water and cook, according to package directions, only to al dente (this will only be 2 minutes - don't go further or the pasta will come out gummy). Drain quickly, reserving ½ cup pasta water, and add the pasta to the sour cream and chive sauce. Taste for seasoning.
  • Serve immediately because this will thicken quite a bit when it cools. If pasta thickens too much, add some of the reserved pasta water to loosen it back up.
