4-1/2 cups uncooked tricolor spiral pasta
1 package (16 ounces) imitation crabmeat, flaked
1/3 cup chopped celery
1/3 cup chopped green pepper
1/3 cup chopped onion
1/2 cup reduced-fat mayonnaise
1/2 cup reduced-fat ranch salad dressing
1 teaspoon dill weed

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Toss with crab and vegetables. Combine remaining ingredients. Pour over pasta mixture; toss to coat. Cover and refrigerate at least 2 hours before serving.

Number Of Ingredients 28

2 cups breadcrumbs
1 cup grated Parmigiano-Reggiano cheese
3 tablespoons dried parsley
3 tablespoons extra-virgin olive oil (EVOO)
plus some for brushing or coating pan or OO spray for pan
2 carrots
peeled and grated or finely chopped
2 small ribs celery with leafy tops
finely chopped
1 large onion
finely chopped
4 cloves garlic
finely chopped
1 pound ground beef (sirloin
80-85% lean)
Salt and pepper
1 teaspoon fennel seed or pollen
1 teaspoon red pepper flakes
1 cup/glass red wine (Nero d'Avola)
1 ½ cups passata
½ cup fresh or defrosted frozen peas
A handful of basil leaves
torn
1 pound anelletti
½ pound cooked ham
diced
½ pound caciocavallo or provola or mild provolone cheese
diced

Steps:

  • Combine breadcrumbs with grated cheese and parsley
  • Heat a pot of water to boil for pasta rings
  • Heat a Dutch oven over medium to medium-high heat
  • Add EVOO, 3 turns of the pan, add carrots, celery, onions, garlic and partially cover the pot
  • Sweat the vegetables 5 minutes, add beef and season with salt, pepper, fennel seed and red pepper flakes and brown lightly, crumble into fine pieces
  • Add a glass of red wine and let it absorb fully
  • Stir in passata and simmer at lowest heat 1 hour, then add peas and basil then simmer 10 minutes more
  • Remove from heat to cool to room temperature
  • Cook pasta 2 minutes less than package directions in salted water, drain and cool, then add to sauce
  • Preheat oven to 400˚F
  • Spray or brush a large bundt or springform pan liberally with EVOO or spray with non-aerosol OO spray, add breadcrumb mixture to coat liberally and gently press into place along sides and bottom, reserving extra crumb mixture
  • Fill pan with half the pasta, then nest in diced ham and cheese, top with remaining pasta and top that with remaining breadcrumb mixture
  • Bake pasta 25 to 30 minutes mid-oven to golden and hot through
  • Let stand 10 minutes, then invert carefully on large cake stand or serving platter or cutting board

8 oz ring macaroni as per package and drained but not rinsed
1 cucumber peeled and de-seeded
1/2 bunch green onions chopped
1 celery chopped
1 carrot large, shredded
DRESSING
3/4 c mayonnaise
3/4 c sugar
1/4 c apple cider vinegar
1/2 tsp salt
1/4 tsp pepper
1/4 nutmeg

Steps:

  • 1. Do not rinse macaroni as it needs the starch to thicken the dressing. Mix the dressing separately. Add to ingredients.
  • 2. Let sit overnight to absorb flavor. A MUST!!

1 lb (450g) Fusilli pasta: any short pasta would work for this recipe
1 cup diced Red pepper (I used a large red bell pepper)
⅓ cup chopped celery (from 1 celery stalk)
½ cup feta cheese crumbled: substitute with good old cheddar cheese or mozzarella pearls.
1 cup cherry tomatoes halved
⅓ cup diced red onions
1 cup cucumber chopped
1 teaspoon dried dill (substitute for fresh dill)
Salt and freshly ground pepper to taste
Green onions to garnish
1 cup light mayonnaise
1 tablespoon Lemon juice or as needed

Steps:

  • Cook the pasta in salted water according to the directions on the packet. Pasta should still be firm to bite. Drain and rinse the pasta under cold water, set aside and leave until completely cool. Make sure you drain any excess water.
  • Add the cooled pasta to a large bowl, add chopped celery, diced red bell pepper, chopped cucumber, cherry tomatoes, crumbled feta cheese.
  • Then add the juice of one medium lemon on top of the pasta and vegetables. Add mayonnaise, dill, salt and pepper and mix until combined. Place the pasta salad in the fridge for at least 30 minutes to build flavour. Serve and enjoy.

1 medium yellow squash, seeds removed, skin left on cut into 1/4 inch dice
8 ounces pasta, preferably little "ring" circle pasta or else rotini
4 ripe plum tomatoes, seeded and cut into 1/4 inch dice
1/3 cup or so mustard vinaigrette (2 teaspoons mustard, 1 tablespoon red wine vinegar and 1/3 cup olive oil, whisked together)
Olive oil
3/4 pound cleaned squid, bodies cut into 1/4 inch rings; tentacles, split lengthwise into strips
1 teaspoon minced garlic
Salt and pepper

Steps:

  • Bring lots of water to a boil. Set diced squash in a sieve; plunge sieve in boiling water and blanch the squash for a minute. Remove blanched squash, pat dry and add to a mixing bowl. Add the pasta to the boiling water and cook until al dente. When done, drain, refresh under cold water and pat dry.
  • Meanwhile add diced tomatoes to the mixing bowl with the squash and add the vinaigrette.
  • In a nonstick skillet add a little bit of olive oil. Add the squid and saute just for a minute or until rings turn opaque (don't cook longer than 2 minutes or they will turn tough) When they squid rings turn opaque, add the garlic, saute for a few seconds and remove from heat.
  • When pasta is done, drain and run under cold water to stop the cooking; dry and add to mixing bowl. Add the squid with olive oil and garlic and toss all of the ingredients together. Season to taste with salt and pepper.

AUNT BONNIE'S RING MACARONI TUNA SALAD

This was a staple at my Aunt Bonnie's barbeques, but the recipe probably originated from the back of a Creamettes box in the 1960's. In Minnesota, we obviously use Creamettes Macaroni Rings. You can use anellini pasta for this recipe. Cooking time does not include refrigerating time.

1/4 cup onion, finely diced
1 cup Miracle Whip
1 teaspoon salt (or less, use to taste)

Steps:

  • Gently mix all ingredients together and refrigerate 2 to 3 hours.

1 can mandarin oranges, drained (16 ounce can)
1 cup miniature marshmallows

Steps:

  • Prepare Creamette Rings according to package directions. Drain. Cook together egg, sugar, flour, salt and reserved pineapple juice until smooth and thickened. Blend into cooked rings. Chill 1 hour. Remove from refrigerator. Combine rings, pineapple, Cool Whip, mandarin oranges and marshmallows. Chill before serving. 6-8 servings.
