SAUSAGE CARBONARA PASTA
A traditional carbonara pasta is combined with sausage and bacon in this indulgent Sausage Carbonara Pasta.

Steps:
- Remove the sausages from the skins. Using wet hands, roll the sausage into small balls about the size of marbles. Set aside.
- Heat the olive oil in a large pan over medium heat. Add the sausage balls and cook until they are starting to brown, then add the bacon. Continue to cook until the sausage and bacon are both cooked through.
- While the sausage is cooking, bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve a mug full of the pasta water before draining.
- Combine the egg yolks, cream, Parmesan, lemon zest and parsley in a bowl and whisk to combine. Immediately after draining the pasta, return it to the same pot and add the egg yolk mixture. Vigorously stir the pasta and the sauce - the heat from the pasta will gently cook the eggs. It should form a silky sauce after stirring for a minute or two. If the sauce becomes too dry or stiff, add a bit of the reserved pasta water to loosen it up.
- Stir the sausage and bacon into the pasta. Season to taste with salt and pepper. Drizzle each serving with olive oil before serving.
EASY CARBONARA
This easy pasta sauce will cook in about the same time it takes to cook some dried pasta in boiling salted water - we're talking about quick and easy options here. These amounts serve 2 but are easy to scale up or down. Remember you want about 75g of dried pasta per person - use whatever shape you've got. - Cook the pasta in a pan of boiling salted water according to the packet instructions.
- Slice the bacon and place in a non-stick frying pan on a medium heat with half a tablespoon of olive oil and a really good pinch of black pepper. Leave it to get super-golden and crispy, tossing occasionally, then turn off the heat.
- Meanwhile, beat the eggs in a bowl, then finely grate in the Parmesan and mix well.
- Use tongs to transfer your pasta straight into the pan and toss with the bacon.
- Pour the Parmesan eggs into the pan, and keep everything moving, loosening with splashes of the pasta cooking water until you have a silky sauce. Make sure the pan isn't too hot otherwise the eggs will scramble.
- Plate up the pasta, and finish with an extra grating of Parmesan.

SPAGHETTI WITH SAUSAGE ALLA CARBONARA
A few days after a tasting of 2005 Barbarescos, I had dinner at Centolire, Pino Luongo's Italian restaurant on the Upper East Side. As I cruised the wine list, Mr. Luongo suggested a Barbaresco he had just acquired. Perfect timing.The menu offered several dishes that would seem to complement a Barbaresco, including chicken livers on a bed of fennel, a Tuscan pot roast, and spaghetti with sausage. My husband and I tried them all. The intensity of the chicken livers and beef, however, seemed to point more toward Barolo. The pasta, Mr. Luongo's variation on the classic carbonara, delivered balance and richness.His approach to cooking is a very grandmotherly "some of this, some of that." He did provide some measurements, but I felt at ease adjusting them to my taste, like reducing the amount of pepper and increasing the cheese.

- Remove casings from sausage. Using a knife, a fork or your hands on a cutting board, break meat into small pieces. Heat oil and butter in a large skillet. Add onion and cook on medium-low just until translucent.
- Add sausage, mashing and breaking it up with a wooden spoon until it is uniformly crumbly and has lost its pinkness. Stir in the pepper and bay leaves. Add wine and cook until it has nearly evaporated, about 2 minutes. Remove skillet from heat and discard bay leaves. Season meat to taste with salt.
- Bring a large pot of salted water to a boil. Cook spaghetti until al dente, 6 to 7 minutes. Meanwhile, fill a large serving bowl with hot water or warm it in a low oven. Lightly beat the eggs in a small dish. Just before pasta is done, return pan with sausage to low heat. When pasta is done, slowly beat about a tablespoon of pasta water into eggs. Then drain the pasta.
- Transfer sausage to warm serving bowl. Pour spaghetti on top and toss it with the sausage, slowly adding the beaten eggs. Add salt to taste and fold in the pecorino.

- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Reserve 2 tablespoons bacon fat in the skillet and discard the rest. Chop bacon when cool enough to handle.
- Add 1 tablespoon olive oil and onion to reserved bacon fat in the skillet. Cook over medium-high heat until the onion has softened and turned translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. CHEESY GARLIC SAUSAGE AND BACON CARBONARA

- After you have fried your bacon and have started your water for the pasta, carefully remove some of your bacon grease and start sautéing your sliced smoked sausage. Once you have noticed some browning, flip sausages over and cook thoroughly.
- Once sausage is cooked move the cooked sausages to the side of the pan, reduce heat and add your garlic and blend in with your cooked sauage.
- Once you have drained your cooked pasta, you'll add the butter and cream mixture, add your crumbled bacon and cooked sausage with the garlic and then your cheeses over your cooked pasta.
- Follow Tidy Mom's instructions on how to prep your pasta for the sauce and cheeses.
- Tongs will be the utensil of choice when blending all the ingredients together. They're perfect to use for this recipe.

- Remove casings from sausages and crumble meat. Finely chop prosciutto. In a wide frying pan over medium-low heat, melt half the butter. Add sausage and half the prosciutto to pan and cook, stirring until sausage is lightly browned and prosciutto is curled (about 10 minutes). Stir in remaining ingredients. If you wish to complete the preparation at the table, have ready in separate containers the remaining butter, the parsley, eggs, the 1/2 cup Parmesan cheese and the pepper. Cook spaghetti in a large kettle of boiling salted water according to package directions until al dente. Drain well and add to hot meat mixture. - In a large pot of boiling salted water, cook spaghetti pasta until al dente. Drain well. Toss with 1 tablespoon of olive oil, and set aside.
- Meanwhile in a large skillet, cook chopped bacon until slightly crisp; remove and drain onto paper towels. Reserve 2 tablespoons of bacon fat; add remaining 1 tablespoon olive oil, and heat in reused large skillet. Add chopped onion, and cook over medium heat until onion is translucent. - Cook the pasta in a large pot to one minute less than the directions on the box and keep 1/2 cup of pasta water to the side to drain pasta (do not rinse pasta).
- In a large skillet add the bacon and cook it until crisp then turn off the heat and remove the bacon with a slotted spoon then add the pasta and toss it in the bacon fat.

- Cook the noodles in a pan of boiling water, for 6-8 minutes or until al dente.
- Meanwhile, heat the oil in a frying pan and fry the bacon for 2-3 minutes, then add the mushrooms and fry for another 3-4 minutes.
- Turn off the heat and reserve.
- Lightly beat the eggs and cream together in a small bowl and season with salt and pepper.
- When the noodles are cooked, drain well and return to the pan.
- Add the bacon/mushroom mixture and any pan juices and stir into the pasta.
- Pour in the egg/ cream mixture and half the Parmesan cheese.

- Heat the oven to 350°F. Cut the squash in half lengthwise with a sharp knife. Scrape out the seeds and seed flesh with a spoon and discard. Pour 1/2 cup water into a 9 x 13-inch baking dish and place the squash cut side down in the water. Roast for 45 minutes or until tender. In a skillet, cook the bacon over medium heat until the edges crisp. Add the onions and cook for 5 to 6 minutes or until soft and beginning to brown. Remove from the heat. In a large bowl whisk the eggs, then whisk in the ricotta. Fold in the cooked bacon and onions, then 1 cup of grated cheese and the salt and pepper. When the squash can be easily pierced with a fork, remove it from the oven and turn the heat up to 375°F. Remove the squash from the baking dish and let it cool slightly. Dump out any water left in the baking dish, wipe it dry and then grease it lightly with cooking spray. Shred the inside of the squash with a fork into spaghetti-like strings and remove from the outer shell. You should have approximately 6 cups. Mix the squash strings into the egg and onion mixture. Spread in the baking dish and top with the remaining 1/4 cup of cheese. Bake for 45 minutes or until firm and golden on top.Spa

- Boil a large pot of water with some salt. Add pasta to the pot once you are in the middle of cooking your bacon to make sure they are ready by time the bacon is cooked.
- In a large non-stick pan over medium heat, add your diced bacon/pancetta. As the fat renders, add your shallots to cook in the bacon fat until the shallots become soft and translucent, about 3-4 minutes, and bacon is done to your liking. Turn off heat and add garlic, stirring to ensure it doesn't burn.
- While bacon cooks, whisk together the heavy cream, grated parmesan cheese, and fresh egg yolks in a medium bowl until well combined. Set aside.
- When pasta is ready, remove it from the water and into the pan. Then add the cream-egg mixture and mix together well, making sure that the sauce coats all the pasta and doesn't stay on the pan, otherwise the heat from the pan can cook the egg solid. Toss well to melt the cheese down into the sauce and onto the pasta. Taste, then season to your liking with salt, pepper and parsley.
