This is a great pasta sauce with tons of vegetables and sour cream. You can serve it with any type of pasta you like.

1 (12 ounce) package penne pasta
2 tablespoons olive oil
1 zucchini, sliced
1 red bell pepper, sliced
1 cup sliced fresh mushrooms
6 ounces frozen chopped spinach, thawed and drained
2 tomatoes, chopped
3 cups vegetable broth
7 ounces sour cream
1 tablespoon tomato paste
salt and freshly ground black pepper to taste
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped fresh basil

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Heat olive oil in a large skillet over medium heat. Add zucchini, bell pepper, mushrooms, spinach, and tomatoes. Cook and stir until vegetables have softened, 3 to 4 minutes. Add broth, sour cream, and tomato paste and stir to combine. Season with salt and pepper. Bring to a boil and remove from heat. Drain penne and mix into the sauce. Stir in parsley and basil.

⅓ cup olive oil
2 tablespoons red wine vinegar
1 teaspoon dried basil
1 teaspoon dried oregano
salt and pepper to taste
1 red bell pepper, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
2 carrots
1 ½ cups broccoli florets, lightly steamed or blanched
4 cups uncooked rotini pasta

Steps:

  • Mix together the oil, vinegar, basil, oregano, salt and pepper. Set aside.
  • Bring a large pot of salted water to boil; add rotini and bring to a boil again. Cook until rotini is al dente; drain well. Return the rotini to the pot.
  • While rotini is cooking heat oil in a frying pan and saute red bell pepper, green bell pepper, garlic and carrots. Cook until vegetables are softened. Place the broccoli in the frying pan and cook another 2 minutes.
  • Pour the cooked vegetables into the pot with the pasta. Pour the vinaigrette over the pasta and vegetables. Toss to distribute vegetables and vinaigrette evenly.

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup sour cream
3/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
3 cups frozen chopped broccoli, thawed
1-3/4 cups frozen cauliflower, thawed and cut into bite-size pieces
8 ounces wide egg noodles, cooked and drained
1-1/2 cups shredded Swiss cheese, divided

Steps:

  • In a large bowl, combine the soup, sour cream, onion, salt and pepper. Add the broccoli, cauliflower, noodles and 1/4 cup of cheese; mix gently. , Pour into a greased 13x9-in. baking dish. Top with remaining cheese. Bake, uncovered, at 350° for 30 minutes or until heated through.

1 pound fresh asparagus, trimmed and cut into 1-inch pieces
1 medium sweet red pepper, cut into 1-inch pieces
1 medium red onion, sliced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
4-1/2 cups uncooked bow tie pasta
1 tablespoon butter
1 tablespoon all-purpose flour
3 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1 cup vegetable broth
1 cup shredded Parmesan cheese
1/2 cup sour cream
2 tablespoons lemon juice
1 tablespoon grated lemon zest
1/2 cup chopped pistachios
1/4 cup fresh basil leaves, thinly sliced
Additional shredded Parmesan cheese

Steps:

  • In a large bowl, combine the asparagus, red pepper, onion, oil, salt and pepper. Transfer to a greased 15x10x1-in. baking pan. Bake at 450° for 10-15 minutes or until golden brown, stirring once., Meanwhile, cook pasta according to package directions. In a large saucepan, melt butter over medium heat. 7 ounce sour cream ((200 gr.))
3.5 ounce cheese ((100 gr.) It can be any cheese, as long as it melts!)
1 clove garlic ((finely chopped))
1 tablespoon olive oil

salt & pepper

Steps:

  • First, boil the pasta according to the instructions on the package.
  • In a pan, add the tablespoon of oil, then fry the finely chopped garlic for a few seconds.
  • Add the sour cream in your pan, heat it up, then add the cheese.
  • Stir until the cheese melts, add the chives, salt & pepper to taste.
  • Now, add the pasta over the sauce and mix everything. Lunch is ready!

8 ounces linguine or 8 ounces fresh pasta
1/4 cup onion, minced
4 garlic cloves, minced
2 tablespoons butter
300 ml sour cream or 300 ml low-fat sour cream
4 tablespoons parmesan cheese, grated and divided
2 tablespoons milk
2 teaspoons lemon pepper seasoning
1 -2 tablespoon lemon juice
1 lemon, zest of
1/2 teaspoon salt (optional)
2 tablespoons parsley, freshly chopped

Steps:

  • Boil water and cook pasta according to package instruction.
  • If using fresh pasta, it wont take 3 minutes. Set aside.
  • Melt butter in a large pan.
  • Saute onions till fragrant.
  • Add in the minced garlic.
  • When light brown, add the sour cream.
  • Lower heat, add 2 T. Parmesan cheese, milk, lemon pepper, juice and zest of lemon and salt if desired.
  • Simmer for 1-2 minutes only.
  • Remove from heat.
  • Pour over cooked pasta.
  • Toss gently, add parsley and remaining 2 T Parmesan cheese. Serve with Garlic bread.

1 tablespoon olive oil
200 g pasta shapes
1 small onion (peeled and chopped)
2 garlic cloves (peeled and crushed)
1 small courgette ( thinly sliced)
1 teaspoon dried oregano
4-5 basil leaves (torn or 1 teaspoon dried basil)
1/2 broccoli head (broken into small florets)
2-3 small tomatoes (cut in quarters)
150 ml crème fraîche (half or full fat)
55 g cheddar cheese (grated)
Freshly ground ( black pepper)

Steps:

  • Place the pasta in a large saucepan, cover with boiling water
  • Bring back to the boil and simmer for 10-12 minutes until cooked
  • Meanwhile heat the olive oil in a large frying pan
  • Add the onion and cook for 2-3 minutes
  • Next add the garlic, herbs and courgettes and cook until the vegetables are soft
  • Cook the broccoli in the simmering pasta waster for about 5 minutes (or steam over the top of the pasta)
  • Add the tomatoes to the other vegetables
  • When the broccoli and pasta are cooked, drain and add to the vegetables
  • Reduce the heat to minimum and pour over the crème fraîche and cheddar
  • Stir until the cheddar is melted and the crème fraîche distributed throughout the pasta
  • Serve immediately

1 pound zucchini
8 ounces short cut fresh pasta like fusilli
1/8 teaspoon salt
Freshly ground black pepper
4 tablespoons low-fat sour cream

Steps:

  • Bring water for pasta to boil in covered pot.
  • Chop whole onion.
  • Heat large nonstick skillet until it is very hot; reduce heat to medium high, and add oil. Add the onion, and cook until it begins to brown.
  • Meanwhile, slice and add garlic.
  • Wash, trim and seed pepper, and chop and add to onion as it cooks with the thyme.
  • Wash, trim and cube zucchini, and add to vegetables; cover, and cook over low heat for a few more minutes, until pasta is cooked.
  • Cook pasta according to package directions.
  • When pasta is cooked, drain and stir into vegetables with the sour cream. Season with salt and pepper, and serve.
