EASY CHEESY PASTA AND BEAN CASSEROLE



Easy Cheesy Pasta and Bean Casserole image

A super quick and easy vegetarian pasta casserole bake recipe. This is a great way to use up any leftover cooked pasta you have lying around.

1 (16-ounce) package penne pasta
1 (14.5-ounce) can diced tomatoes
2 (16-ounce) cans kidney beans (drained and rinsed)
1 (26-ounce) jar spaghetti sauce
2 cups shredded mozzarella cheese

Steps:

  • Gather the ingredients.
  • Preheat oven to 375 degrees. Prepare pasta according to package directions. Drain and return to saucepan.
  • Stir in diced tomatoes, kidney beans, and spaghetti sauce. Transfer to 2-quart baking dish and top with shredded mozzarella.
  • Bake until cheese is melted and golden, about 40 minutes.
  • Serve and enjoy!

Number Of Ingredients 6

1 ½ tablespoons extra virgin olive oil
1 onion, chopped
2 tomatoes, chopped
1 (15 ounce) can cannellini beans
2 cups penne pasta
salt to taste

Steps:

  • In a medium size saucepan heat the olive oil. Saute onion until tender. Stir in tomatoes and entire can of beans. Let simmer for 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Add penne pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Mix pasta with bean mixture and salt as desired.

1/2 cup chopped onion
2 garlic cloves, minced (I used 5)
1 tablespoon olive oil
2 (15 ounce) cans cannellini beans, rinsed and drained
3 cups cooked small shell pasta
1 (8 ounce) can tomato sauce
1 1/2 teaspoons italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded Italian cheese blend
2 tablespoons finely chopped fresh parsley
1 1/2 cups sliced mushrooms (optional)

Steps:

  • Preheat oven to 350. Spray 2 quart casserole with cooking spray.
  • Cook onion and garlic in oil in large skillet over medium-high heat 3 to 4 minutes or until onion is tender.(if using mushrooms, add those to the oil).
  • add beans, pasta, tomato sauce, italian seasoning, salt and pepper, mix well.
  • Transfer to prepared casserole;sprinkle with cheese and parsley.
  • bake 20 minutes or until cheese is melted.

1 pound sweet or hot Italian sausage, casings removed
1 pound lean ground beef (90% lean)
1 large onion, chopped
4 garlic cloves, chopped
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 can (28 ounces) Italian plum tomatoes, drained and chopped
2 tablespoons tomato paste
1-1/2 teaspoons salt
1/2 teaspoon pepper
1 can (15-1/2 ounces) kidney beans, rinsed and drained
1 pound mostaccioli, rigatoni or macaroni, cooked and drained
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 pound shredded Fontina or mozzarella cheese

Steps:

  • In a large skillet, saute first six ingredients, crumbling with a fork, until the meat is browned and done. Drain. Add tomatoes, tomato paste, salt, pepper and kidney beans; heat through. , Add pasta, Parmesan cheese and parsley; toss well. Spoon into a greased shallow 4-qt. baking dish; sprinkle with Fontina or mozzarella cheese. Bake, uncovered, at 375° for 30 minutes.

1 (16 ounce) package seashell pasta
2 tablespoons olive oil
1 medium onion, peeled and diced
3 cloves garlic, minced
½ green bell pepper, chopped
½ red bell pepper, chopped
1 jalapeno pepper, minced
1 (14.5 ounce) can diced tomatoes with juice
1 (15 ounce) can garbanzo beans
1 teaspoon basil
1 teaspoon dried oregano
1 teaspoon ground paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
salt to taste
black pepper to taste
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Oil a 9x13 inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente. Drain.
  • Heat olive oil in a skillet over medium heat. Cook onion in oil until soft, then add garlic and red and green peppers. Stir in jalapeno, if desired. Continue cooking for 2 more minutes. Stir in tomatoes and garbanzo beans. Season with basil, oregano, paprika, cumin, coriander, and salt and pepper. Simmer with 5 minutes. Remove from heat, and stir in pasta. Transfer to prepared baking dish, and top with cheese.
  • Bake in preheated oven for 30 to 40 minutes, or until cheese is melted and bubbly.

I put this together in an attempt to make some quasi-healthy with the little left in my pantry and fridge. I've tweaked the recipe after tasting my original version. I haven't tried it with the adjustments, so it might need to be played with a little.

3 1/2 cups whole wheat pasta (uncooked)
3 tablespoons butter
2 cups extra-sharp cheddar cheese, grated
2 teaspoons italian seasoning mix
1 (19 ounce) can 7 bean mix, drained & rinsed
1 large tomatoes, diced
1 (10 ounce) can evaporated milk
1/2 cup sour cream
2 eggs
2 garlic cloves, mashed
1/3 cup parmesan cheese
1/4 cup wheat germ or 1/4 cup breadcrumbs
1/4 teaspoon paprika

Steps:

  • In large enamelled cast-iron French oven, bring water to a boil.
  • Cook pasta as directed, drain.
  • Return to pot and add butter.
  • Mix cheddar cheese with bread seasoning.
  • Add 1 1/3 cups of cheese/seasoning mix to beans.
  • Toss with pasta & tomatoes in the pot.
  • Beat eggs with sour cream, evaporated milk, and garlic.
  • Pour over pasta & cheese.
  • Combine remaining 2/3 cup of cheddar with Parmesan and wheat germ.
  • Spread out evenly over the surface.
  • Sprinkle paprika on top.
  • Bake for 20 minutes, covered, at 350°F.
  • Uncover and return to oven for 10 minutes.
  • If top layer is not crunchy, set on broil until golden.
