APPLE MATZO KUGEL
The BEST kugel ever. I'm not Jewish but have a lot of Jewish friends, and they love this recipe! Good as a side dish, breakfast, dessert or snack!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking dish. Break the matzo sheets into pieces, and soak in a bowl of water until soft. Drain in a colander, mashing to squeeze the water out.
- In a separate bowl, mix together the eggs, salt, sugar, oil and cinnamon. Add the soaked matzo, and mix well. Fold in the apples and raisins. Spoon into the prepared baking dish, and spread evenly.
- Bake for 45 minutes in the preheated oven, until nicely browned and apples are tender.

- Preheat the oven to 350°F (175°C). Place the crumbled matzos in a medium bowl, and add enough water to cover. Let stand for 2 minutes, then drain off excess water. Don't squeeze.
- To the bowl of matzo, add eggs, 1/4 cup sugar, salt, lemon juice and applesauce. Stir to combine. Mix in the apples and dried cranberries. Spread the mixture evenly into a greased 2-quart casserole dish. Mix together the remaining 1/4 cup of sugar, and cinnamon; sprinkle over the top.
- Bake for 45 minutes in the preheated oven, or until the top is golden, and the apples are soft.

- 1. Mix the farfel with 2 of the eggs and 1/2 tsp. of the salt and then toast the mixture over medium low heat in a heavy skillet. Set aside.
- 2. In a medium bowl, beat the remaing 2 eggs and a 1/2 tsp. salt, 1 tsp. cinnamon, and 3 tbsps. of the melted cooled butter. Add in the toasted farfel mixture and 1/2 cup water.
- 3. In a greased 8 X 8 baking dish, layer 1/2 the apples, and sprinkle with the lemon juice and a dusting of cinnamon, then add the matza farfel mixture and top with the remaining apples. Then sprinkle with nuts and dust it more cinnamon and pour over the remaining melted butter.
- 4. Bake at 350 degrees for 30 minutes.
MATZO FARFEL APPLE KUGEL
A little sweet, and very delicious! As posted, this will be lower fat, for fuller fat, use regular sugar and butter.

Steps:
- Preheat the oven to 350degF.
- Lightly grease a 1qt baking dish with butter/spread.
- Combine farfel with 2 eggs. Place in heavy skillet and toast over low heat, stirring all the time, until farfel is golden brown and the pieces are separate.
- Beat the 2 egg whites with the sugar, salt, and 3 tbsp butter. Add the farfel and 1/2 cup of water.
- Line the bottom of the prepared baking dish with half of the apple slices and sprinkle with lemon juice.
- Add the matzo farfel mixture.
- Top with remaining apple slices, sprinkle with nuts, and pour on the remaining butter.
- Bake for 30min.

- Toss apples gently with the 1 tablespoon lemon juice.
- Combine cake meal. sugar and salt. Set aside.
- Separate eggs. Mix yolks, water and oil until frothy.
- Add the combined dry ingredients and sliced apples.
- Beat egg whites until stiff.
- Fold egg whites into apple mixture.
- Pour into a greased 9 inch square baking dish.
- Bake at 350 degrees for 1 hour.
- Remove from oven and allow to stand 10 minutes before serving.

- Rehydrate/soften the dried fruit (raisins and apricots) w hot water or whatever liquid you choose - let them sit while you continue with the other preparation
- Instead of buying pre-made farfel, simply place the matzo boards in a ziploc bag and use your rolling pin to break them up into little pieces. 2 boards will yield about 1 cup of farfel.
- Beat 2 of the eggs and mix with the farfel and a teaspoon of the salt. Heat a skillet to medium low, add the two tablespoons of butter (you can skip the butter here if you want) then add the egg farfel mixture, mixing frequently to be sure the pieces brown and separate.
