PARTY RIBBON SANDWICHES

Lovely layered sandwiches showcase three fabulous fillings and two kinds of bread.

1 cup frozen cooked deveined peeled salad shrimp, thawed
1 tablespoon finely chopped fresh parsley
1 teaspoon lemon juice
1/4 teaspoon pepper
1/2 teaspoon dried dill weed
1/4 cup mayonnaise or salad dressing
1 cup chopped smoked cooked turkey
1/4 teaspoon pepper
1/2 teaspoon curry powder
1/3 cup mayonnaise or salad dressing
1/4 cup finely chopped celery
1 package (3 oz) cream cheese, softened
1 cup shredded Mexican cheese blend
1/4 cup mayonnaise or salad dressing
1/4 cup sliced Spanish olives
8 slices white bread, crusts removed
8 slices whole wheat bread, crusts removed

Steps:

  • Place all shrimp filling ingredients in food processor. Cover; process 3 to 5 seconds or until mixture is creamy. Remove from food processor; set aside.
  • Place all turkey filling ingredients except celery in food processor. Cover; process 3 to 5 seconds or until mixture is creamy. Stir in celery. Remove from food processor; set aside.
  • Place all cheese and olive filling ingredients except olives in food processor. Cover; process 3 to 5 seconds or until mixture is creamy. Stir in olives.
  • To assemble ribbon sandwiches, place one slice white bread on cutting board. Spread 5 tablespoons cheese and olive filling over white bread. Top with 1 slice wheat bread; spread with 1/4 cup turkey filling. Top with 1 slice white bread; spread with 1/4 cup shrimp filling. Top with 1 slice wheat bread. Repeat process 3 more times to make a total of 4 sandwich stacks. Wrap each in plastic wrap; refrigerate at least 4 hours but no longer than 24 hours.
  • Just before serving, cut each sandwich stack in half lengthwise and then crosswise into 4 slices.

CLASSIC TRIO OF PARTY SANDWICHES

8 oz plain brick-style cream cheese, room temperature 250 g
1 tbsp finely chopped fresh dill 15 mL
1 tbsp drained and finely chopped capers 15 mL
1 tsp lemon zest 5 mL
1 tsp lemon juice 5 mL
¼ tsp Sensations by Compliments Perky Pepper Seasoning (grinder) 1 mL
4 tsp honey mustard 20 mL
18 slices white sandwich bread
5 oz 9 slices smoked salmon 150 g
27 thin slices of cucumber
1 cup loosely packed arugula 250 mL
6 slices ham

Steps:

  • Divide cream cheese equally into 3 small bowls. In first bowl, mix dill and capers into cheese. In second bowl, mix in lemon zest, lemon juice and pepper seasoning. In third bowl, mix in honey mustard.
  • To make smoked salmon sandwiches, spread dill-caper cream cheese onto 6 slices of bread. Lay smoked salmon on 3 of the slices. Top with remaining 3 prepared slices. Cut off crusts; slice each sandwich into triangular quarters.
  • To make cucumber sandwiches, spread lemon cream cheese onto 6 bread slices. Lay cucumber slices onto 3 slices; top with arugula. Top with remaining 3 prepared bread slices. Cut off crusts; slice each sandwich into 4 rectangular "fingers".
  • To make ham sandwiches, spread honey mustard cream cheese onto remaining 6 slices of bread. Lay ham onto 3 slices; top with remaining bread slices. Cut off crusts; slice each sandwich into square quarters. Arrange sandwiches on platter to serve. (To store in refrigerator 1 to 24 hr. ahead, place sandwiches in single layer on baking sheet, cover with damp tea towel and seal tightly with plastic wrap.)

These small, delicious sandwiches are perfect for any party. They are so good that even the pickiest of eaters will eat these.

¾ cup melted butter
1 ½ tablespoons Dijon mustard
1 ½ teaspoons Worcestershire sauce
1 ½ tablespoons poppy seeds
1 tablespoon dried minced onion
24 mini sandwich rolls
1 pound thinly sliced cooked deli ham
1 pound thinly sliced Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
  • Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.

Party sandwiches are so good! You might now be able to find Pepperidge Farms party rolls, so use any soft small roll. They will work as well.

1 pkg hawaiian sweet bread
1 stick butter, softened
3 Tbsp mustard
2 tsp poppy seed
2 tsp worcestershire sauce
1/2 small onion, chopped fine

Steps:

  • 1. 1. Preheat oven to 350 degrees 2. In a small sauce pan melt butter, mustard, poppy seeds, Worcestershire sauce and small onion. Simmer for a few minutes.
  • 2. 3. Remove rolls from packages. (Do not separate rolls.) Cut rolls in half horizontally creating 1 top and 1 bottom per package. Spread mixture above on cut sides of top and bottom of rolls.
  • 3. On the bottom half of rolls layer Swiss cheese and ham on top of spread. Cover with top halves of rolls, which you have spread with mixture above. Cut into sections before baking. (You will cut each roll, so you will have a little sandwich) , and wrap in aluminum foil. Bake for 15 to 20 minutes or until cheese has melted. Enjoy!

  • Place 3 slices of bread on your worktop. Spread each with a thin layer of the cream cheese mixture (you should use about ½ of it).
  • Now, take 2 slices of cheddar and place these on top of one slice. Add 1 or 2 slices of ham (see note 4) and top this with lettuce. Cover with second slice of bread and top this again with cheese (I only use 1 slice here), ham, lettuce and last slice of bread (spread side facing down). Press down slightly. Repeat the same with other 3 slices.
  • Cut each sandwich in half. Stick 6 toothpicks into each half and cut around them. You will get 6 mini sandwiches out of 1 half = 12 mini sandwiches out of 1 sandwich (check the process pictures for better understanding). Sticking the toothpicks in before cutting keeps the fillings from moving and makes it easier to cut the tiny sandwiches.
