This recipe is for a quick and easy potato casserole using mozzarella cheese, sour cream, and prepared frozen cubed potatoes.

2 cups shredded mozzarella cheese
1 (16 ounce) container sour cream
1 (10.75 ounce) can cream of chicken soup
½ cup melted butter
½ cup chopped onion
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix potatoes, mozzarella cheese, sour cream, cream of chicken soup, butter, onion, salt, and black pepper together in a casserole dish.
  • Bake in preheated oven until hot throughout and bubbly on top, about 30 minutes.

4 cups mashed potatoes (about 8 to 10 large) or 4 cups prepared instant potatoes
1 cup sour cream
1 package (8 ounces) cream cheese, softened
1 teaspoon minced chives
1/4 teaspoon garlic powder
1/4 cup dry bread crumbs
1 tablespoon butter, melted
1/2 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine potatoes, sour cream, cream cheese, chives and garlic powder. Turn into a greased 2-qt. casserole. Combine bread crumbs with butter; sprinkle over potatoes. , Bake at 350° for 50 to 60 minutes. Top with cheese and serve immediately.

This recipe is an easy side dish made from thawed hashbrown potatoes. After 5 hours in the slow cooker a delicious potato casserole is made.

30 oz. shredded hashbrown potatoes, (thawed)
8 oz. shredded cheddar, (divided)
16 oz. sour cream
10.5 oz. cream of chicken soup
1/2 tsp. salt
1/4 tsp pepper
1/4 tsp. onion powder
1/2 tsp. dried thyme
1 bunch green onions, (sliced and divided)

Steps:

  • In a large bowl combine all the ingredients except a half cup of cheese and a few tablespoons of the green onion.
  • Spray the slow cooker with non-stick spray. Add the potato mixture to the slow cooker and flatten out. Add the remaining cheese and place lid on slow cooker.
  • Cover and cook on low for 5 hours without opening the lid during the cooking time.
  • Sprinkle with the leftover green onions and serve!

1/2 cup margarine, melted
1 teaspoon salt
1 (10 3/4 ounce) can cream of chicken soup
1 cup sour cream
1 medium onion, diced
2 cups cheddar cheese, grated
2 cups corn flakes (topping)
1/4 cup margarine, melted (topping)

Steps:

  • Combine all ingredients, except the corn flakes and 1/4 cup margarine.
  • Put in a 12x9-inch pan.
  • Crush corn flakes and mix with margarine.
  • Sprinkle on top.
  • Bake for 45 minutes at 350°F or until bubbly.

2 large unpelled baking potatoes
olive oil or vegetable oil
1 c colby cheese
6 slice bacon
1/3 c green onions sliced
1/4 c barbecue sauce

Steps:

  • 1. Preheat oven to 450. Cut the potatoes into 1/4 inch slices. Brush both sides of the potatoes with oil. Place rounds on a baking stone or sheet pan. Bake for 20 minutes or until lightly browned. Remove from the oven.
  • 2. Meanwhile cook the bacon until crisp, drain and crumble. In a medium bowl combine bacon, cheese and sliced green onions in a bowl and toss together.
  • 3. With a basting brush, brush each potato rounds with barbeque sauce. Sprinkle the cheese mixture on top. Return to the oven. Bake 3-5 minutes until the cheese is melted.

1/2 cup unsalted butter, (melted)
2 cups sour cream
10 oz can cream of chicken soup
1 tsp kosher salt
1/2 tsp black pepper
1/2 tsp onion powder
1/4 - 1/2 tsp garlic powder
1/4 tsp smoked paprika
32 oz frozen diced hash brown potatoes, (thawed)
1 1/2 cups shredded cheddar cheese ((I prefer medium or sharp))
1/2 cup shredded mozzarella cheese
1/4 cup unsalted butter, (melted)
3 cups cornflake cereal, (lightly crushed)

Steps:

  • Preheat oven to 350 F degrees. Grease a 9x13 or 3 quart baking dish and set aside.
  • In a large mixing bowl, add 1/2 cup melted butter, sour cream, cream of chicken soup, salt, pepper, onion powder, garlic powder and smoked paprika. Stir well.
  • Add in thawed hash brown potatoes and the cheddar cheese and stir well to combine.
  • Transfer to prepared baking dish, and sprinkle with mozzarella cheese.
  • In a small mixing bowl, combine 1/4 cup melted butter and cornflakes, stirring well. Spread evenly over the top of the casserole.
  • Bake uncovered, 45-50 minutes, until hot and bubbly and cornflakes are golden brown.

  • Bring a large pot of lightly salted water to a boil. Cook potatoes in boiling water until tender. Drain, and transfer to a large mixing bowl. Mash until smooth. 1 tbsp fresh chives, chopped

Steps:

  • Preheat oven to 350F.
  • Add all the ingredients to a large bowl and stir to combine. Spread in a 9x13 baking dish.

1/2 cup butter, divided
1lb country-style frozen hash browns, thawed
1/4 cup green onions, chopped
1/2 cup sour cream
1 cup shredded sharp cheddar cheese
1/2 can condensed cream of chicken soup
1 cup crushed corn flakes

Steps:

  • Preheat oven to 350 degrees. Melt 1/4 cup butter in an 8x8 casserole dish in the oven while it heats.
  • Meanwhile, combine hash browns, green onion, sour cream, cheese and soup in a large bowl. Transfer mixture to the casserole dish after the butter has melted. Bake, uncovered, for 30 minutes.
  • Melt remaining 1/4 cup butter in the microwave, then mix with crushed cornflakes. Sprinkle on top of the potatoes then bake for 15 more minutes.
