BRATS MY WAY --FOR A CROWD

Brats My Way --For a Crowd image

If you love brats and beer, you'll love this. It's a great Ocktoberfest dish that does double duty as a tailgate meal or party or any cook-out. We serve this with German potato salad, stuffed jalapenos, vinegary cole slaw and sauteed onion and green peppers. Add a hot crunchy kaiser roll and you've got heaven! We like Johnsonville brats, but if you have a local brand or can get fresh brats, they're the best.

Time 20m

Yield 24 serving(s)

Number Of Ingredients 10

24 bratwursts
2 (12 ounce) cans beer
1/2 cup butter
2 garlic cloves
2 jalapenos
2 tablespoons liquid smoke
1 white onion, chopped
1 white onion, sliced
2 green peppers, sliced
2 tablespoons butter

Steps:

  • In a large aluminum pan with deep sides, pour in 2 cans of beer, liquid smoke, 1 stick butter, garlic, jalapenos, and 1 white onion, choppped. Set aside.
  • Grill brats over medium hot on all sides until browned. Remove from grill and add to the large beer bath.
  • Meanwhile, steam one onion and 2 green peppers in 2 T butter. I use my microwave for this. If you like, you can saute them on the stove.
  • Cover the aluminum pan with foil and place in a large warming oven on low, or in the regular oven on low heat until ready to serve. You want them in the beer bath at least an hour.
  • When serving, allow guests to pile kaiser rolls with onions, green peppers, cole slaw, spicy mustard, pickles, whatever.

Bears Brat image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 55m

Yield 8 sandwiches

Number Of Ingredients 14

2 cans lager or pilsner beer
3 medium Granny Smith apples, peeled and sliced
1 onion, sliced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
8 fresh bratwurst
1/2 cup stone-ground mustard
1 to 2 tablespoon pickled jalapenos, chopped
1 tablespoon mayonnaise
8 pretzel rolls
Caramelized Onions, recipe follows
2 tablespoons vegetable oil
4 medium yellow onions, sliced thin
Salt and freshly ground black pepper

Steps:

  • For the bratwurst: Preheat a grill to medium-high heat.
  • Bring the beer to a simmer in a pot with the apples, sliced onions, salt and pepper. Add in the brats and simmer, turning once, until cooked through, 10 to 15 minutes. Strain out the solids and reserve 1 cup of the beer base.
  • Brown the sausages on the grill to add color and texture, 5 to 6 minutes.
  • For the beer mushtard: Mix the mustard, jalapenos, mayonnaise and 1 to 2 tablespoons of the reserved beer base in a bowl. Adjust the thickness with more beer base if necessary.
  • For the sandwich build, place the grilled brats on the pretzel buns, followed by some beer mushtard and Caramelized Onions.
  • Add the oil and sliced onions to a skillet and stir to combine. Sprinkle with salt and pepper. Cook over medium-low heat, undisturbed, until the bottoms of the onions begin to caramelize, 10 to 15 minutes. Stir only once and keep for another 5 minutes undisturbed. Once the onions are golden and soft, set aside. (Add water if necessary to help deglaze the pan throughout the cooking process.)
