SPECIAL OCCASION PARTY TRAY FOR SANDWICHES
A great party tray that serves twenty people. A great money-server when you make it at home versus paying the local deli. "Accompany party tray with a basket of assorted breads and rolls and favorite spreads such as mayonnaise and mustard. Another platter could have lettuce leaves, tomato slices and bell pepper rings to use as sandwich add-ins." Steps:
- Place lettuce leaves on large rectangular platter.
- Fold each turkey slice into thirds.
- Roll each ham slice loosely.
- Fold each roast beef slice in half.
- Place turkey, ham and roast beef on platter according to diagram (see picture).
- ** Servings based on 2 ounces cheese and 4 1/2 ounces meat each)**.

I can't go ANYWHERE without bringing these! Nice enough for wedding showers to football parties! REALLY hope you try them!

Steps:
- Heat oven to 400•.
- Cut each biscuit in half CROSSWISE, (not horizontal through middle), making a half moon shape.
- Place on ungreased cookie sheet, spread tops with a little*mustard.
- Bake for 10-14 minutes or til golden brown.
- Cool on wire rack 10 minutes.
- Meanwhile, in small bowl, combine onions and butter, mix well.
- In another small bowl mix mustard, mayo and honey.
- Split each biscuit open with sharp knife.
- Spread bottoms with butter mixture.
- Top each with ham, cheese and lettuce.
- Spread inside tops liberally with mustard-mayo-honey sauce.
- Place on top/lid.
- Spear an olive onto frilled pick, then stick through sandwich.
- You can make a half a recipe if you want, but if serving even 10-12 people, best to make 40!
- Everyone LOVES these!
LINDA'S HAM SALAD SANDWICH (SANDWICHES) OR FINGER ROLLS
These are a big hit around the holidays when having parties or having baby, graduation and wedding showers! This recipe uses left over ham from a smoked shoulder. The flavor is WONDERFUL, and so GOOD! This is a real treat! My gram always made it for us growing up, as she made us smoked shoulder quite often... I always helped her grind the meat, and that I was the "Big Cheese" getting to do that part LOL... Now I just use my blender, and it works like a charm, as long as you don't overload it. Steps:
- Grind the ham shoulder with a meat grinder. You can use a blender for this also, just make sure you don't put in too much at a time.
- Put ground meat in a bowl and add mayonnaise, mustard, and relish. Mix well.
- Chill until ready to make sandwiches or rolls.
- When ready to make sandwiches, put a good amount of meat filling on the roll.
- Add a slice of onion, or as much as you want. I love making these with vidalia onions, they are so sweet.
- Put the top piece of bread or roll on, and serve.

- You will need two 9 x 13 pans. Place the bottoms of 12 rolls in each pan. Place two slices of ham on 12 of the rolls and two slices turkey on 12 of the rolls. Cut the cheese slices into 4 parts and place 2 parts of cheddar on the ham and 2 parts Swiss on the turkey. Put the dinner roll tops on. In a sauce pan, mix butter, Worcestershire sauce, onion powder, garlic powder and poppy seeds. Wait until all butter is melted and then brush the melted mixture over the ham and turkey sandwiches. Cover with foil and let sit in fridge for 1 hour or over night. Preheat oven to 375 and bake for 15 minutes or until cheese is melted. Serve.
