VIRGINIA COUNTRY HAM BISCUITS
Steps:
- Preheat oven to 450 degrees F. Line a baking sheet or round cake pan with parchment paper; set aside.
- In a large bowl, sift together flour, baking powder, baking soda, salt and sugar. Use a pastry cutter or two forks to cut the butter and shortening into the flour mixture until incorporated and the mixture resembles coarse meal. You will still see flakes of butter and shortening throughout, which is good!
- Gradually add the buttermilk, stirring with a wooden spoon until a fairly wet, sticky dough forms. Turn out onto a lightly floured surface and knead for about 1 minute, adding flour to the counter and your hands, as necessary, to prevent sticking. Roll or pat to ¾-inch thickness. Use a small biscuit cutter to cut out rounds (I recommend a 2-inch cutter or smaller for ham biscuits). Firmly press the cutter down into the dough, but do not twist. Twisting the biscuit cutter seals off the edges of the biscuits and they therefore will not rise as high.
- Arrange biscuits (with sides touching) on the parchment-lined baking sheet or round pan. Brush the tops of the biscuits with a little bit of the melted butter. Place the tray of biscuits in the refrigerator for about 5 minutes (if you have time) to chill before popping them in the oven.
- Bake for 10-12 minutes, or until tops are golden brown. Brush the tops with additional melted butter, transfer to wire rack to cool slightly, and assemble sandwiches.
- Once the biscuits are cool enough to handle, split each biscuit in half (don't slice the biscuits with a knife -- use the tines of a fork to poke holes around the edge and then gently pull apart).
- Spread a dollop of your preferred condiment (butter, mustard, etc.) on each side of the biscuit, add a couple of thin slices of country ham, and then close the sandwich and enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
- Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.

SAVORY POPPY SEED HAM & CHEESE BUSCUITS
This recipe was given to me by one of my best friends who is a SUPER cook! EVERYONE loves them and they have become a staple at our get togethers. They are super easy (I describe things in too much detail so I hope it doesn't look TOO complicated...trust me it's not!) One of those definitely EASY, SURE FIRE, "go-to" recipes...

Steps:
- 1. Preheat your oven to 350 degrees. Take out one group of the Martin's party rolls (there are typically two groups of 12 ea in a bag that are still all attached). I slice 1/2 way through one section, making a top and bottom but keeping everything still attached (so it's almost like a big sandwich).
- 2. Cover the bottom section with pieces of ham. The amount is really to your preference and how thick you would like the biscuits although typically I wouldn't do more than doubling it. Next place the slices of swiss cheese on top of the ham. Again somewhat to your preference but again typically no more than double.
- 3. Place the top of the rolls back on top of the ham and cheese. Repeat all steps for the second section of rolls. Place each group on an ungreased cookie sheet.
- 4. For sauce, melt butter (can either do in a small saucepan on the stove or I've even done in a coffee mug in the microwave and mixed everything in there). Add in all dry ingredients.
- 5. With some sort of basting brush, generously brush the mixture onto the top of the rolls. Be sure to keep mixing so as to get the poppy seeds and minced onion as they might settle on the bottom. Place in heated oven for 6-7 minutes.
- 6. Remove from oven and AGAIN generously brush the top of the rolls with the butter mixture. Return to the oven for approximately 6-7 minutes. Remove from oven and cut along the pre-cut lines of the rolls. Serve warm.
PARTY HAM BISCUITS
Steps:
- Combine the first 5 ingredients. Spread the mixture on both sides of sliced rolls.
- Add cheese and ham. Cover with aluminum foil.
- Heat in 350 degrees F oven until cheese melts.

HAM BISCUITS RECIPE

- Preheat oven to 450°F. Whisk together all-purpose flour, granulated sugar, baking powder, salt, and baking soda in a medium bowl. Cut cold butter pieces into flour mixture with a pastry blender until mixture is crumbly. Make a well in center of mixture. Add whole buttermilk, and stir until mixture comes together in a ball.
- Scrape dough onto a lightly floured surface, and knead three to four times. Lightly flour top of dough and a rolling pin. Roll dough into a rectangle, and fold dough in half so short ends meet. Repeat the rolling and folding procedures one more time.
- Roll dough to 1⁄2-inch thickness. Cut with a floured 2-inch round cutter, rerolling scraps once. (You should have 10 biscuits.) Place biscuits 1 inch apart on a baking sheet lined with parchment paper. Bake in preheated oven until golden brown and firm to the touch, about 10 minutes.
- Brush tops of hot biscuits with melted butter, and serve with sliced ham and choice of Biscuit Spreads.

We love country ham and this is a recipe that is one of our very favorites. Country ham biscuits are always on our Christmas Brunch table.

- Preheat oven to 350@. Thaw rolls halfway so that you can flip them out of tray and cut in half horizontally as a whole piece, then put the bottom half back in the tin. Melt the butter and brown sugar on low heat in a saucepan until sugar melts in the butter and is caramel in color. Brush butter/sugar mix on bottom half of rolls, then tear up ham evenly among the 3 tins, put the tops back on and brush with butter/sugar mix. Heat for 15 minutes or until golden brown and cooked through. (If you are serving immediately, otherwise just cook about 10 minutes then wrap in foil and freeze in ziploc bag. If you do that, just pull out whenever you want, thaw and reheat for another 8-10 minutes at 350@) Cut into individual rolls.

- Place sifter in a large mixing bowl, add flour and sift into bowl.
- Create a well in the middle of the flour.
- Add lard.
- Add buttermilk.
- Squish lard and buttermilk between fingers until fairly smooth.
- Stir the wet ingredients into the flour using small circular motions. Draw the flour into the wet ingredients slowly as you continue to stir.
- When the dough ball forms, flip the dough and knead it a few times, working in flour as needed until a soft, smooth dough ball is achieved. Use a light touch as you work without pressing the dough too hard.
- Sprinkle your work surface with flour.
- Place the dough ball on the floured work surface, sprinkle dough lightly with flour.
- Lightly flour rolling pin then, gently roll the dough out until it's about ½ inch thick.
- Dip your biscuit cutter into some flour, press into dough, cut and remove biscuits.
- Place the formed biscuit in a pan that has been lightly greased with lard.
- Repeat the process until all dough is used.
- Bake at 500º for about 8-10 minutes or until the tops start to lightly brown.
- Remove from oven, brush with butter, cover with a clean cloth and let rest.
- Serve warm and enjoy.
