BASIC EMPANADAS



Basic Empanadas image

These tasty and convenient Latin-American-style turnovers can be frozen for up to three months, individually wrapped in plastic and placed in resealable plastic bags. There's no need to thaw before baking, they can go right from the freezer to the oven.

2 pounds ground pork or beef
2 medium onions, finely diced
2 jalapeno chiles, minced (ribs and seeds removed for less heat, if desired)
1/2 teaspoon chili powder
2 cans (14.5 ounces each) tomatoes, diced
coarse salt and ground pepper
1 cup fresh cilantro, chopped
4 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
2 teaspoons salt
1/2 cup (1 stick) cold butter, cut into small pieces
1 cup cold water
1 large egg, lightly beaten with 1 tablespoon water (do not beat until ready to bake)

Steps:

  • Make the filling: In a 12-inch skillet over medium-high, cook meat until no longer pink, breaking it up into small pieces, 5 to 7 minutes.
  • Add onion and jalapenos; cook until soft, 5 minutes. Stir in chili powder and tomatoes. Cook over medium until mixture has thickened, 12 to 15 minutes. Season with salt and pepper. Fold in cilantro. Let cool.
  • Make the dough: In a bowl, combine flour, baking powder, and salt. Using your fingers, cut in butter until mixture is crumbly. Add just enough cold water so dough comes together.
  • Form empanadas. If desired, freeze on a baking sheet until firm, 2 hours. Wrap tightly in plastic; freeze in plastic bags.
  • To bake fresh or frozen empanadas, preheat oven to 400 degrees. Place on parchment-lined baking sheets. Brush tops with egg wash, avoiding crimped edges. Bake until golden brown, rotating sheets halfway through, 30 to 40 minutes.

1-1/4 cup All Purpose Flour (Maida)
1/2 cup Butter (Unsalted)
1/2 teaspoon Salt , or to taste
Chilled water , as needed
1 tablespoon Oil
1 Onion , finely chopped
1 Carrot (Gajjar) , grated
8 Button mushrooms , chopped
3 cloves Garlic
1/2 cup Green Bell Pepper (Capsicum) , chopped
3 tablespoons Parsley leaves , chopped
2 tablespoons Basil leaves , chopped
2 tablespoons Soy sauce
1 teaspoon White pepper powder
Salt , to taste
Milk , for brushing

Steps:

  • To begin making Mushroom Empanadas Recipe, prepare the dough first. Sift the flour and mix flour with salt. Incorporate butter to the flour, using a pastry blender, a fork or a pastry processor, until the mixture is crumbly.
  • Slowly add the water and stir until the water is incorporated. Wrap it with plastic, knead slowly to form a disc and refrigerate for at least 1 hour.
  • In a frying pan heat oil over medium high heat. Add onion and saute until soft.Add carrot, garlic, bell pepper, mushrooms and soy sauce and cook until any water evaporates.
  • Turn down heat and add basil, parsley, salt and pepper.
  • Remove from heat and set aside to cool.
  • Preheat oven to 350F (180C). Line a baking tray with parchment paper.
  • On a floured surface, roll out dough to thin disc. Using a 3-1/2-inch circle cutter cut out circles of dough. Re-roll dough as needed. Repeat procedure with remaining dough until using all the dough and results about 16-17 circles.
  • Stretch the circles into oval and place a tablespoon of mushroom filling on each oval.
  • Moisten the edges of the disc with water and fold the dough over the filling to create a semi-circle.
  • Use a fork to press the edges together to seal. Place the empanadas on the prepared baking tray. Make an incision with a knife in the center of each pastry for the steam to escape created while baking.
  • And brush their tops with milk. Bake in an preheated oven at 350F (180C) for 25 to 30 until slightly golden. Take care with oven baking since each oven differs in its heating capability. Keep a close watch on the same and take out as soon as it is done.
  • Cool them slightly and serve with a dipping of choice.

My family loves these juicy meat pies with raisins, chopped olives, and hard-boiled eggs. This recipe is always a hit.

½ pound ground beef
3 tablespoons butter
2 medium onions, chopped
1 green onion, chopped
2 hard-boiled eggs, chopped
14 pitted green olives, such as Manzanilla, finely chopped
3 tablespoons raisins
1 teaspoon cumin
½ teaspoon salt
¼ teaspoon black pepper
2 (17.5 ounce) packages frozen puff pastry (each with 2 sheets), thawed
1 raw egg, lightly beaten

Steps:

  • Set racks in upper and lower thirds of oven, and preheat to 450 degrees F. Line 2 large baking sheets with parchment paper.
  • Cook beef in a large, heavy skillet over medium-high heat, stirring and breaking up lumps, until no longer pink, 4 to 5 minutes. Transfer beef to a small bowl with a slotted spoon, and pour off grease from skillet. Melt butter in skillet and saute onions and green onion, stirring occasionally, until tender, about 5 minutes. Return beef to skillet and stir in hard-boiled eggs, olives, raisins, cumin, salt, and pepper. Transfer mixture to a shallow bowl and chill until cooled, 10 to 20 minutes.
  • Unfold 1 pastry sheet, keeping remaining chilled, onto a lightly floured surface, dust lightly with flour, and roll out into a 12-inch square. Cut 4 (5 1/2-inch) rounds from pastry. Brush a 1/2-inch border around edges of 1 round with water, using a small brush or fingertip. Spoon about 3 tablespoons of filling onto half of round. Fold other half over filling and press edges together firmly. Crimp edges with a fork and transfer to one of prepared baking sheets. Repeat with 3 remaining rounds. Form 12 more empanadas in same manner with remaining pastry and filling, arranging them about 1 1/2 inches apart on baking sheets.
  • Brush tops of empanadas with beaten egg. Bake, switching position of sheets halfway through, until golden brown, about 15 minutes.

1 lb ground beef round
1 lb chorizo sausage
2 onions
4 garlic cloves
4 jalapeno peppers
8 ounces monterey jack cheese
8 ounces frozen corn
2 (17 ounce) packages frozen puff pastry

Steps:

  • Cook ground beef and chorizo together over medium heat until done. Pulse in food processor. Chop and saute onion and garlic. Add to meat mixture. Place in freezer for 10 minutes. To prepare jalapeños, char under broiler and put in plastic bag for five minutes. Peel skins and remove seeds. Chop and add to mixture. You can substitute a can a green chili's. Fold in grated jack cheese and thawed corn.
  • Place puff pastry in a plastic bag and bring to almost room temperature Place sheet on floured surface. cut along folds into three long strips. Using a floured rolling pin, roll first strip about six times length wise. Put about two Tablespoons of the filling about 1 inch from each end and another just above center. Cut to make three pockets and fold over dough . Enclose by pressing dough together and shape into half rounds using scissors. Optional- using the tines of a fork press around edges. Continue with remaining pastry. Bake 400 degrees until tops are just brown. To freeze, place wax paper between stacks. For parties, bake using frozen pastries straight from freezer.

1 tablespoon olive oil, for sauteing
1 pound ground beef
1 pound ground pork
1 large white onion, finely chopped
1 tablespoon curry powder
1 bunch cilantro, washed and leaves chopped
1 cup chopped spinach
1/2 cup goat cheese
Salt and freshly ground black pepper
Frozen puff pastry dough, cut into 5-inch rounds, and kept cold in refrigerator

Steps:

  • In a large saute pan, heat the olive oil. Saute beef and pork until cooked. Strain the meat from the fat and reserve. In the same pan, saute the onions until soft, about 5 to 8 minutes. Add the cooked meat to the onions, and saute 5 minutes. Add the curry powder, cilantro, and spinach and saute for 5 minutes. Remove the mixture from the stove and mix in the goat cheese until completely incorporated. Season with salt and pepper and cool to room temperature.
  • Preheat the oven to 350 degrees F.
  • Lay out the chilled cut dough on a cutting board. Spoon a small amount of the stuffing into the center of the dough. Fold the top over the bottom and crimp all the way around with a fork. Lay the empanadas on a sheet pan. See Chef's Note. Bake for 15 minutes or until dough appears crispy.
  • Chef's Note: At this point the empanadas can be refrozen for future use.

EGG AND SAUSAGE EMPANADAS

3 oz. breakfast sausage, removed from casing, cooked and crumbled (3 links removed from casing)
1 tsp. extra-virgin olive oil
1 package store-bought pie dough (two rounds in one 14.1 oz. package)
3 large Eggland's Best eggs, plus 1 large Eggland's Best egg, beaten
1 tbsp. whole milk
1/2 c. shredded cheddar cheese

Steps:

  • Preheat the oven to 400°. Heat a large nonstick skillet over medium-high heat and add sausage and oil. Cook, breaking up the sausage with a wooden spoon into small bits, until sausage is cooked through and golden, about 3 minutes. Add the eggs to the skillet, and cook, stirring slowly, until eggs are just barely set, about 1 minute. Remove the pan from the heat and let cool slightly while preparing the dough.
  • Unroll one piece of the pie dough. Using a 4-inch round cutter, cut out 5 dough rounds. Repeat with second pie dough, then re-roll scraps from both to make 2 more rounds for 12 rounds total.
  • Working with one round at a time, use a pastry brush or your fingers to gently brush the edge with the beaten egg. Place a heaping tablespoon of egg filling in center and top with a bit of cheese. Fold dough round in half to cover filling; press edge together to seal. Use a fork to crimp edges together. Repeat with remaining filling and dough. Lightly brush tops of empanadas with beaten egg and place evenly spaced on a large rimmed baking sheet.
  • Bake until golden, about 12 minutes.
