This is a very old recipe enjoyed by family and friends. A must at our family gatherings especially Christmas.

1 cup flour
2 tablespoons icing sugar
1/2 cup butter or 1/2 cup margarine
2 eggs
1 cup brown sugar
1/4 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
1 teaspoon vanilla
1 cup coconut
1/2 cup maraschino cherry, cut in half
1/2 cup walnuts, chopped

Steps:

  • BASE- whisk flour and icing sugar in bowl, cut in butter or margarine and press into a greased 9x9 pan.
  • Bake base in a 300 degree oven for 10 minutes.
  • TOPPING- Beat eggs, blend in sugar and beat together.
  • Add the vanilla and the dry ingredients.
  • Add the coconut, cherries and the walnuts.
  • Spread filling on the prepared base and bake at 325 degrees for 30 minutes or until top nicely golden brown.
  • Cool until set before cutting.

These a very sweet and delicious squares, I'm sure everyone will love them. A variation of this is to melt 2 squares semi-sweet chocolate with 1 tsp. vegetable oil. Drizzle over cooled squares. Let chocolate set before cutting into squares.

1 1/2 cups all-purpose flour
1/4 cup brown sugar, lightly packed
1/2 cup butter or 1/2 cup margarine, softened
3 eggs
1 cup flaked coconut
3/4 cup brown sugar, lightly packed
3/4 cup corn syrup
1 (14 ounce) can crushed pineapple, well drained
2 tablespoons butter or 2 tablespoons margarine, melted
1 teaspoon vanilla extract

Steps:

  • TO MAKE BASE;
  • Preheat oven to 350°F Spray a 9-inch square pan with cooking spray. In a medium bowl, combine flour and brown sugar. Cut in butter until mixture is crumbly. Press into bottom of pan. Bake until lightly browned, 12-15 minutes. Cool slightly.
  • TO MAKE TOPPING:.
  • In a medium bowl, whisk eggs just until blended. Stir in remaining ingredients. Spread over base.
  • Bake until topping is set but still soft in center, 40-45 minutes. Cool completely on a wire rack. Cut into squares. Keep refrigerated.

PINK PARTY SQUARES

This recipe was given to my Mother in law and it is one of those special always-at-the-holidays sweets. They are very sweet, so cutting them in very small squares is usually how we do it. I just guessed at the servings because it really depends on how you cut it.

1/2 cup butter
1 cup brown sugar
1 egg
2 cups graham cracker crumbs
1 (14 ounce) can sweetened condensed milk
8 ounces sweetened flaked coconut
1/4 cup butter
2 cups icing sugar
1 tablespoon milk
red food coloring

Steps:

  • Layer 1:.
  • In a double boiler (or a metal bowl over a pot of boiling water, as I do) add; 1/2 cup butter, 1 cup brown sugar and 1 egg (well beaten). Stir constantly until smooth and shiny. Remove from heat and add 2 cups graham crumbs. Pack into 9x9 pan.
  • Layer 2:.
  • Stir together 3/4 of a can of sweetened condensed milk and 8 ounces coconut. Spread on graham layer.
  • Icing:.
  • Combine 1/4 cup butter with 2 cups icing sugar and 1 tbsp milk. Add a few drops of red food coloring, until a nice pink shade is reached, and stir until smooth. Spread on top of coconut layer.
  • Refrigerate at least 3 hours.

3/4 cup margarine
1 cup graham wafer crumbs
2 cups icing sugar
1 tablespoon cocoa
1/4 cup margarine
1 teaspoon vanilla
1/2 cup margarine, melted
2 eggs, beaten
6 tablespoons cocoa

Steps:

  • BASE: Melt 3/4 cup margarine. Add graham crumbs. Press half the mixture into an 8-inch square baking pan. Bake for10 minutes at 350°F Cool completely.
  • FILLING: Combine icing sugar, cocoa, margarine and vanilla. Beat with electric mixer for 3 minutes. Pour over first mixtue.
  • MIX: Combine melted margarine, beaten eggs and cocoa. Mix well. Pour over top of filling and put the rest of the crumbs on top.
  • Refrigerate for 2 hours and serve.

I forget where I got this recipe, but my family has enjoyed it for years. It's a fun and different way to prepare a cake mix.

1 package pillsbury plus white cake mix
1 1/4 cups rolled oats
1/2 cup butter or 1/2 cup margarine, softened
1 egg
1 (21 ounce) can cherry pie filling
1/2 cup chopped nuts
1/4 cup packed brown sugar

Steps:

  • Heat oven to 350 deg.
  • Grease 13x9" pan.
  • In large bowl, combine cake mix, 1 cup of the rolled oats and 6 T of the margarine; mix until crumbly.
  • Reserve 1 cupcrumbs for topping.
  • To remaining crumbs, add 1 egg; mix until well blended.
  • Press into greased pan.
  • Pour cherry pie filling over crust; spread to cover.
  • To reserved crumbs in large bowl, add remaining 1/4 cup rolled oats and 2 T margarine, nuts and brown sugar; mix well.
  • Sprinkle over cherry filling.
  • Bake at 350 deg for 35-40 minutes until golden brown.
  • Cool completely.
  • If desired, serve with whipped cream.

1/2 cup butter, melted
2 1/2 cups graham wafer crumbs
1/2 cup butter, softened
1 1/2 cups icing sugar
2 egg yolks
2 cups whipped cream
1 1/2 cups crushed pineapple, drained

Steps:

  • Mix melted butter and crushed graham wafer crumbs together in 8x8-inch baking pan; reserve 2 tablespoons for top of dessert.
  • Spread remaining crumb mixture evenly in pan. Bake at 350F 10-15 minutes; cool.
  • Mix softened butter, icing sugar and egg yolks together in bowl; mix until smooth and creamy. Spread evenly over cooled crumb base.
  • Mix together pineapple and whipped cream. Spread over above layer. Sprinkle reserved crumbs on top of dessert.
  • Refrigerate at least 1/2 hour before serving.

  • Drain and chop cherries. Blot, or wrap, chopped cherries in paper towel to soak up excess moisture. Chop pecans and cut up dates. Measure coconut. Set cherries, nuts, dates and coconut aside.
  • In bowl of stand mixer fitted with paddle attachment, mix flour and sugar together. With mixer set at medium speed, mix in the butter just until crumbly. A food processor may, alternatively, be used to make the base, pulsing the mixture for just a very few short bursts. Mixture will appear dry using either method.
  • In bowl of stand mixer fitted with paddle attachment, beat the eggs lightly at medium-low speed. Increase speed slightly and beat in brown sugar, vanilla, and almond extract. Mix flour and baking powder together in small bowl. Reduce mixer speed to low and add the dry ingredients. Increase speed slightly and beat just until ingredients are combined and mixture is smooth.
  • Place butter in bowl of stand mixer fitted with paddle attachment and beat at medium speed until creamy. Blend in the almond and vanilla extracts. Reduce mixer speed to low and gradually add the sifted icing sugar, about one-half cup at a time. Add the water (or milk), a couple of teaspoons at a time as the icing sugar is being blended in. If desired, add a smidgeon of pink food coloring gel to tint the icing soft pink. Increase speed to medium-low to blend ingredients then increase speed to high and beat an additional minute to ensure ingredients are well combined and icing is smooth. Additional milk or water may be required to make icing of desired spreading consistency. If adding additional milk or water, add by ½ teaspoon at a time. Icing should be of spreading consistency but not “soupy”.
