CLASSIC LIMA BEAN CASSEROLE
An abundance of homegrown lima beans and leftover sausage inspired me to create this dish more than 20 years ago. It's proven to be a timeless classic.

- In a saucepan, cook and crumble sausage until no longer pink; drain. add lima beans, carrots, water, sugar, salt and pepper. Cook, uncovered, for 20-25 minutes or until vegetables are tender; drain.

BARBECUED SMOKED SAUSAGE AND LIMA BEANS
There's a slightly sweet flavor to this filling blend of sausage, lima beans and tomatoes. "The last time I made this dish, I used homemade sausage from a local store and it was delicious!" writes Myrna Wingate of Irons, Michigan.

Steps:
- In a large nonstick skillet, saute the onion, green pepper and garlic in oil for 1 minute. Add sausage; cook and stir 4-5 minutes longer or until sausage is lightly browned. Stir in the tomatoes, brown sugar, vinegar, mustard, chili powder, ginger, salt and pepper. Bring to a boil. Stir in lima beans. Return to a boil. Reduce heat; cover and simmer for 10 minutes or until heated through. Serve over rice.

PARTON FAMILY BAKED LIMA BEANS & SAUSAGE
This came from a cookbook called "All Day Singing and Dinner on the Ground" by Willadeene Parton (Dolly's sister) that we recently got. The cookbook is full of really good, simple family recipes! I love lima beans, so here's one we've adapted and hope to make. Time does not include overnight bean soaking.

Steps:
- Soak the beans in lots of water overnight, then drain, rinse, and pick out any bad ones.
- In a large pot, cover with cold water and add salt. Simmer covered over medium heat for 35 to 45 min until tender (make sure they don't get mushy). The amount of time it takes will depend on how large the beans are.
- Preheat oven to 350 degrees F.
- Drain and pour the cooked beans into a well-oiled baking dish.
- In a bowl, combine the remaining ingredients and stir to combine well. Add to the beans and fold it all together.
- Bake in a 350 degree F oven for 1 hour.
- Note: onions would also go well in this recipe.

LIMA BEANS & SAUSAGE
I like to use my small blue enamel roaster for baking. Great served with crescent rolls and honey! This recipe was given to me by Lois Osland (gr.6 teacher) in about 1979 or 1980.

Steps:
- 1. Soak the beans over night (or several hours). Pour off soaking water, discard, and add fresh water to cover. Simmer 1/2 hour. Drain, reserve cokking water.
- 2. Dissolve the salt, sugar, syrup and vinegar in some of the cooking water. Put it into roaster with the beans. Add enough reserved water to cover. Bake 1 hour at 350 degrees, covered. (Watch...if it begins to dry out add a bit more of the reserved bean liquid).
- 3. After 1 hour, add the cream and bake in oven 1 more hour. Add polish sausages about 1/2 hour after you add the cream.
CREAMY BAKED LIMA BEANS

Steps:
- Soak Beans overnight, with plenty of water above the beans. They soak it up!
- In the morning, drain the beans, cover with water, add 1 tsp salt and cook until slightly tender -- 20-30 minutes. However, you must watch these babies, because they have a big tendency to boil over!Just bring them to a boil (watching them), then lower the heat --- and still watch them!
- After the beans are cooked, drain again and rinse them under hot water, and place them in a lightly sprayed or greased (oleo) casserole dish.
- Dab Butter over beans; mix "lightly"! or they get squishy.
- Stir in Molasses.
- Finally, pour in sour cream and mix "tenderly".
- Bake at 350 for one hour. (again, keep an eye on them, I don't think I usually bake them for and entire hour).

Steps:
- 1. In a medium sauce pan put beans and baking soda and cover with water.
- 2. Bring to a rapid boil then remove from the stove and rinse beans in cold water, removing all baking soda. This step eliminates having to soak the beans overnight.
- 3. Put beans, onions, garlic and salt & pepper in a medium sauce pan and cover with water.
- 4. Cut sausage into 2" pieces and add to pot. Bring water to a boil and then reduce heat to a simmer. Continue to simmer until beans are cooked, adding water as needed to keep the beans from sticking.
- 5. Watch beans closely as the water will cook down quickly and you will need to replenish it often. Beans should be soupy when finished.

- In a Dutch oven, bring beans, water and salt to a boil. Remove from the heat; cover and let stand for 1 hour (or soak beans overnight). Do not drain. Bring beans to a boil. Reduce heat; cover and simmer for 45 minutes or until tender. , Meanwhile, shape sausage into 3/4-in. balls; brown in a large skillet or until a thermometer reads 160°. Drain fat. Stir in the tomato juice, chili powder, pepper and basil. , Drain beans; add sausage mixture. Simmer for 10 minutes or until heated through, stirring occasionally.

BABY LIMA BEANS AND SAUSAGE
Okay, so, when my husband and I got married everyone thought it'd be hilarious to get us a pig (think Varsity Blues), only instead of getting us a cute little potbelly pig, these guys went out to the country and bought a butcherin' hog. First few months, this pig was soooooo cute, it ate out of my hand, played with the dogs, we even took it to the dog park a time or two. However, six months into it, the pig was still growing... and growing... and growing. Bacon (that's what we named her) finally started tearing up our backyard, destroyed our air conditioning unit trying to get to the roots under it, pushed the dogs around so they didn't get any food (these are Great Danes, big dogs, by the way), tipped over the water basin daily and generally outgrew her surroundings. One day, I get home and... well, long story short, my husband had made a trip to Marvin's Meats and brought home about 300 lbs. worth of pork and there was no piggie to be found in my backyard. I wouldn't touch that meat for six months until our freezer got so bare there wasn't anything but the piggie meat. So, I tried not to think of my little pickle-eater while I cooked up ribs (so good!), butt roast (the best I've ever had) and pork chops (Marvin cut 'em real thick). And this recipe is what came of the last of the sausage and some dried beans in the cabinet.

- Place 2 lbs. Lima's in 12 cups water. Bring to a soft boil and maintain for approximately 1 hour or until beans are mostly done but still a little crunchy. Throughout the cooking, add hot tap water to keep the beans covered and strain off any foam that appears.
- Fry bacon chunks until crispy and add bacon and grease to beans with boullion cubes.
- Cook beans the rest of the way.
- Cook sausage in a large skillet and add Frank's hot sauce and ground sage.
- Combine all ingredients and enjoy!

CROCK-POT BEANS & SAUSAGE
Southern comfort food at its finest. Let this cook in the crockpot all day and serve up with some cornbread. This recipe can be cooked on the stovetop and the liquid can be cut back to make it thicker and less soupy. I dreamed this up one cool day when I was hankering for some good beans and sausage.
