POTATO-TOPPED OVEN SWISS STEAK



Potato-Topped Oven Swiss Steak image

For a special touch and a great way to soak up sauce, surround roasted steak and vegetables with a swirl of instant mashed potatoes.

1 1/2 lb boneless beef round steak (1/2 inch thick), cut into pieces
3 medium carrots, sliced (1 1/2 cups)
1 large onion, cut into thin wedges (2 cups)
1 can (14.5 oz) diced tomatoes with Italian herbs, undrained
1 jar (12 oz) beef gravy
2 pouches (4.7 oz each) Betty Crocker™ butter & herb seasoned mashed potatoes
4 cups water
1 1/2 cups milk
6 tablespoons butter or margarine
1 egg, beaten

Steps:

  • Heat oven to 325°F. In ungreased 13x9-inch (3-quart) glass baking dish, arrange beef in single layer. Top with carrots and onion.
  • In medium bowl, mix tomatoes and gravy; spoon over beef and vegetables. Cover with foil; bake 2 hours.
  • In 3-quart saucepan, make potatoes as directed on pouch using water, milk and butter. Stir in egg until well blended.
  • Remove baking dish from oven. Uncover; spoon potato mixture over hot meat mixture. Return to oven; bake uncovered 15 to 20 minutes longer or until potatoes are set.

I was really glad to find this recipe since it's a great way to use round steak and it picks up fabulous flavor from one of my favorite herbs - tarragon. I am a homemaker with three children and enjoy cooking tasty dinners like this one for my family. -Lorna Dickau, Vanderhoof, British Columbia

8 bacon strips
2 pounds beef top round steak (3/4 inch thick)
2 cups sliced fresh mushrooms
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup chopped onion
1 to 2 teaspoons dried tarragon
2 tablespoons cornstarch
2 tablespoons water
1 cup heavy whipping cream
Minced fresh parsley, optional

Steps:

  • In a large cast-iron or ovenproof skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 1/4 cup drippings. Crumble bacon and set aside. , Trim beef; cut into serving-size pieces. Brown on both sides in drippings. Top meat with mushrooms, tomatoes and onion. Sprinkle with tarragon and bacon. Cover and bake at 325°, until meat is tender, 1-1/4 to 1-3/4 hours, basting twice. , Remove meat to a serving platter; keep warm. Combine cornstarch and water until smooth; add to skillet. Bring to a boil; cook and stir until thickened, about 2 minutes. Reduce heat; stir in cream. Simmer, uncovered, until heated through, 3-4 minutes. Return meat to skillet and turn to coat with sauce. If desired, sprinkle with parsley.

1/8 teaspoon pepper
TOPPING
1 1/2 cups water
3 tablespoons margarine or butter
2 1/2 cups mashed instant potato flakes
3/4 cup milk
3 tablespoons finely chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon dried thyme leaves
1 egg, beaten

  • 1. Heat oven to 325°F. Arrange beef in ungreased 12x8-inch (2-quart) baking dish. Top with carrots and onion.2. In medium bowl, combine gravy, tomatoes, 1/4 teaspoon thyme and pepper mix well.
