Parmesan adds another layer of flavor to this simple side of steak fries.

3 large egg whites
1 teaspoon coarse salt
3 baking potatoes (8 to 10 ounces each), cut into 6 long spears
1 1/4 cups grated Parmesan cheese
Ground pepper

Steps:

  • Preheat oven to 425 degrees. In a wide, shallow bowl, whisk egg whites with salt until frothy. Add potatoes to egg whites, and turn to coat.
  • One at a time, lift spears out of egg whites, shaking off excess; working over a plate, sprinkle with Parmesan cheese until coated (do not shake off excess). Place on a parchment-lined baking sheet.
  • Bake, without turning, until potatoes are fork-tender and golden brown, about 30 minutes. Season with salt and ground pepper.

6-7 medium russet potatoes ( - cleaned & cut into fry size pieces)
½ cup shredded parmesan cheese
2 tbsp olive oil
2 tbsp granulated garlic
1 tbsp parsley
2 tsp table salt or fine Kosher salt

Steps:

  • Preheat the oven to 450 degrees.
  • Line a large baking sheet with foil & spray lightly with cooking spray.
  • Toss all ingredients together in a large bowl.
  • Spread out coated potatoes on prepated baking sheet. Bake 15 minutes.
  • Remove from oven & turn fries over & return to oven for an additional 15-30 minutes, or until brown & crispy on the outside.
  • Remove & sprinkle with additional salt if desired - serve immediately.

4 large unpeeled russet potatoes, cut into 1/4-inch strips
¼ cup olive oil
3 cloves garlic, minced
½ teaspoon ground dried thyme
¼ teaspoon seasoned salt
½ cup grated Parmesan cheese, divided
¼ cup chopped fresh parsley
¼ cup grated Parmesan cheese
¼ teaspoon seasoned salt

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
  • Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. Toss to coat, then spread again onto the baking sheet. Return to the oven, and bake until the Parmesan cheese melts, about 10 minutes. Sprinkle the fries with the remaining 1/4 cup Parmesan cheese and 1/4 teaspoon seasoned salt to serve.

From Everyday Food. This is a great way to do fries without the added fat of oil. I added the cheese only at the last 10 minutes, when the potatoes were almost done. We were four, I doubled the recipe... and the potatoes were almost all gone... :)!

These crispy, oven-baked fries will be a new favorite side with everyone in your family! Russet potato wedges are coated in Parmesan cheese, ranch seasoning, and a bit of parsley, they come together in moments, and bake to perfection! Fantastic with anything from sloppy joes to steak and everything in between!

3 large Russet potatoes, cut into 8 long wedges
1/2 c. Parmesan cheese, grated
3 Tbsp. fresh parsley, minced
1 (1 oz.) envelope, ranch flavored dry dressing mix
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. coarse ground pepper
Additional parsley and Parmesan cheese for topping after baking

Steps:

  • Preheat oven to 375 degrees. Line a large baking sheet with Glad™ Foil. Set pan aside.
  • Slice potatoes into 8 long wedges and place wedges into a large bowl.
  • In a separate smaller bowl, add the Parmesan cheese, parsley, dry dressing mix, onion powder, garlic powder, salt and pepper. Mix to combine. Sprinkle cheese mixture over potato slices and toss with hands to coat.
  • Place potato wedges onto prepared baking sheet, and sprinkle remaining cheese mixture over the top of the potatoes. Bake at 375 degrees for 33-35 minutes. Remove from oven and let cool slightly for 5 minutes. Serve with additional Parmesan cheese and parsley, if desired.
