1 tablespoon olive oil
1 small onion, finely diced
2 carrots, finely diced
2 stalks celery, finely diced
3 cloves garlic, minced
2 italian sausages, casings removed, 1 sweet, 1 hot
1 lb ground sirloin
salt, to taste
pepper, to taste
2 tablespoons tomato paste
1 tablespoon italian seasoning
½ cup red wine
28 oz crushed tomato
16 oz beef broth
2 bay leaves
1 cup parmesan cheese
½ cup heavy cream
1 lb penne pasta, cooked to box instructions
parmesan cheese, shavings

Steps:

  • In a large pot, set on medium heat, add the olive oil and sauté the onions, celery, carrots, and garlic until they are soft, about 10-15 minutes.
  • Add garlic and cook for an additional 2-3 minutes.
  • Add the ground beef and the sausages. Season with salt and pepper, and break up the meat with a spoon and frying until no longer pink.
  • Next, add the tomato paste, Italian seasoning, and red wine. Stir and reduce until the wine has almost completely evaporated.
  • Now add all the remaining ingredients, except the parmesan and cream. Stir to ensure everything is well mixed.
  • Simmer for 30 minutes to 3 hours. The longer the simmer, the deeper and more concentrated the flavor.
  • Stir in the parmesan and cream to the sausage bolognese.
  • Add the cooked pasta to the sauce.
  • Serve with more parmesan, if desired.

This is a wonderful recipe I found them preparing at Publix one afternoon while I shopped. Even my kids devoured it despite some ingredients that kids normally wouldn't even think about eating!

3 links Italian sausage (pork or chicken)
16 ounces ziti pasta
6 garlic cloves, finely chopped
1 (12 ounce) jar roasted red peppers, chopped
2 large tomatoes, chopped
1 (12 ounce) jar marinated artichoke hearts, drained
1 (8 1/8 ounce) jar sun-dried tomato pesto
3/4 cup heavy cream
3/4 cup kalamata olive, chopped (pitted)
1/4 bunch Italian parsley
1/2 teaspoon pepper
1/4 cup parmesan cheese, shredded

Steps:

  • Preheat large saute pan on medium-high for 2-3 minutes. Place oil in pan, then add sausage; brown 5-6 minutes,stirring to crumble sausage, or until no pink remains.
  • Cook and drain pasta following package instructions.
  • Stir into sausage: garlic, peppers, tomatoes, artichokes, and pesto; cook 3-4 minutes or until heated.
  • Reduce heat to medium-low. Stir in cream and olives; cook 2-3 minutes or until sauce reduces and thickens slightly.
  • Stir parsley and pepper in sausage mixture. Top pasta with sauce and sprinkle with cheese; serve.

1/2 cup grated Parmesan or Romano

1/2 cup extra-virgin olive oil

3 slices bacon, chopped
1/2 cup dried onion
1/4 cup minced garlic
1/4 cup dried fennel seeds
2 teaspoons salt
1 teaspoon oregano
1 teaspoon cracked black pepper
1 tablespoon extra-virgin olive oil
1 medium onion, diced
1 carrot, diced
3 stalks celery, diced
1 tablespoon all-purpose flour
1/4 cup white wine
3 cups store-bought tomato marinara sauce
1 cup beef or chicken stock
1 bay leaf
Salt and cracked black pepper
1 pound dry linguine or spaghetti
Salt
1/2 cup sour cream, thinned with milk or heavy cream and seasoned with salt and pepper
Grated Parmesan or Romano, for serving
Chopped fresh basil, for serving, optional

Steps:

  • For the basil pesto: Place basil leaves, grated cheese and garlic in the blender (with basil on the bottom).
  • Add half of the oil and turn the blender on to medium, then add the rest of the oil and blend until smooth.
  • Remove from blender and place in a bowl; check flavor and season with salt and pepper.
  • For the Italian sausage: In a large mixing bowl, mix the three meats together. In a smaller bowl, mix the dried onion, garlic, fennel seeds, salt, oregano and black pepper together. Sprinkle the seasonings over the meat and mix until everything is incorporated.
  • Preheat the oven to 275 degrees F.
  • Line a sheet pan with nonstick wax paper and press the meat onto it, spreading it evenly in a 1/2-inch layer. Bake for 25 to 30 minutes. Remove from the oven and let chill completely in the fridge. Crumble up the sausage.
  • For the bolognese meat sauce: Heat the olive oil in a large saucepan over medium-low heat, then add the onions, carrots and celery. Cook until the vegetables start to soften, then add 3 cups crumbled Italian sausage and cook for 1 minute. Add the flour and stir into the sausage, then cook for another couple of minutes, stirring occasionally. Add the wine to the pan and cook until evaporated. Add the marinara sauce, beef/chicken stock and bay leaf, then turn the heat to low and let simmer for 30 minutes. Give the sauce a taste and season with salt and pepper if desired.
  • For the pasta: Cook the pasta according to the package directions in salted water (do not rinse the pasta with cold water when it is finished). Drain, then return it the cooking pot and toss it with the basil pesto.
  • Place 1 cup pasta in a bowl, then top with 1/2 cup meat sauce, a tablespoon of the sour cream mix and grated Parmesan. If you wish, top with chopped fresh basil.

  • in a large skilled over medium-high heat, cook the sausage 5 minutes or until browned breaking up the meat. With slotted spoon transfer sausage to bowl. Discard all but 1 tbsp. fat in skillet. Return sausage to skillet along with 3 cloves pressed garlic. Cook 30 seconds. Stir in 2 tbsp. tomato paste and cook 2 minutes, then stir in 1 (28) oz. can crushed tomatoes, 1 tbsp. red wine vinegar and 1/2 tsp. salt and heat to simmering. Cook 7 minutes or until thickened slightly. Stir in 1/2 cup finely grated parmesan cheese and 1/4 cup heavy cream. Serve over 1 lb. rigatoni with more parmesan cheese if desired.

Add onion, carrots, and celery, and sauté until softened and beginning to caramelize, 5 to 8 minutes. Add garlic and sauté for another couple of minutes, until fragrant. Season with salt and pepper and, using a slotted spoon, remove the soffritto to a plate and reserve.
  • Add more olive oil, if needed, and add the pancetta. Cook until golden brown, about 5 minutes. Remove pancetta and reserve. Working in 2-3 batches so not to over crowd the pot, add ground beef and pork. Season with salt and pepper and cook, breaking lumps with a wooden spoon but resisting the urge to stir too often, until browned, about 10 - 15 minutes. We want the meat to caramelize and the brown bits to stick to the bottom of the pot, as that's where all the flavor is! (See notes.)
  • Return the reserved soffritto and pancetta to the pot. Add the white wine and deglaze the pan, scraping all the browned bits stuck to the bottom. Cook until the wine is mostly evaporated, about 2 to 3 minutes. Stir in the crushed tomatoes, milk, nutmeg and a pinch of salt and pepper. Bring to a boil and then lower the heat to a simmer.
  • Cover and cook, stirring occasionally, for 3 to 4 hours or until the liquids have reduced and the sauce is thick. If, by then, the sauce is still too liquid-y, you can turn the heat up and boil - stirring frequently - until it reduces.Some of the fat will separate and float to the top, making it easier to skim it off with a spoon.
