RICE AND PASTA PILAF

Rice and Pasta Pilaf image

This Rice and Pasta Pilaf is an easy and versatile side dish that goes with just about everything. It uses one pot, a few simple pantry ingredients, and is ready in about 30 minutes!

Provided by Michelle / Now Cook This!

Categories     Side Dish

Time 30m

Number Of Ingredients 8

2 tablespoons butter
¾ cup long-grain or extra-long-grain white rice
¾ cup orzo pasta (or you could use spaghetti or vermicelli broken up into small 1/2-inch pieces)
3 cups water
3 teaspoons roasted chicken base (such as Better Than Bouillon (see Recipe Notes below))
½ teaspoon garlic powder
1 teaspoon dried parsley flakes
salt and pepper (to taste)

Steps:

  • In a saucepan with a tight-fitting lid (I use a 3-quart saucepan), melt the butter over medium heat.
  • Add the rice and pasta and saute, stirring frequently, until it is lightly golden brown, about 2 to 3 minutes. Keep a close eye on it so it doesn't burn; reduce heat if needed.
  • In a small bowl, combine the water and roasted chicken base. Add to the pot along with the garlic powder and parsley flakes; stir briefly to combine. Note: Be very careful when adding the liquid to the pot, as it creates a lot of hot steam!
  • Increase the heat and bring to a boil.
  • Cover the pot, reduce the heat, and simmer until the rice is tender and the liquid has been absorbed, 15 to 20 minutes.
  • Remove the pot from the heat and let sit for 5 minutes.
  • Fluff with a fork, season to taste with salt and pepper if needed, and serve.

Provided by Michelle / Now Cook This!

Categories     Side Dish

Time 30m

Number Of Ingredients 10

1 tablespoon olive oil
1 cup chopped onion (about ¼-inch pieces)
2 cloves garlic (minced (about 1 heaping teaspoon))

  • Once the broth comes to a boil, add the orzo and give it a quick stir.
  • Reduce the heat, cover the pot, and simmer for 15 to 20 minutes or until the orzo is tender and most of the liquid has been absorbed.
  • Stir in the peas.
  • Add the parmesan cheese and heavy cream. Stir to combine.
  • Continue to cook over very low heat just until the cheese is melted and the peas are heated through. Taste and season with salt and pepper if needed.

CREAMY PARMESAN GARLIC RICE PILAF

Creamy Parmesan Garlic Rice Pilaf image

An easy & delicious side dish!

Provided by Lisa - Cornfed Creations

Yield 10 servings

Number Of Ingredients 11

4 T. butter
¼ c. onion, diced
¾ c. Orzo pasta
¾ c. Basmati or other white rice
3 c. chicken stock
Pinch of salt
4 oz. cream cheese
1 t. garlic, minced
1 c. whole milk
1 c. Parmesan cheese
1 T. dried parsley

Steps:

  • In a large sauce pan, melt 2 T. butter; add onion and sauté briefly over medium/high heat. Add the Orzo and rice to the onion and sauté, stirring constantly to prevent scorching. When Orzo and rice have browned, add the chicken stock, along with a pinch of salt; then stir briefly to combine. Bring mixture to a boil, then cover and reduce heat. Let mixture simmer for 15-17 minutes, or until liquid is absorbed and rice is tender. Remove from heat and fluff with a fork; cover and set aside.
  • In a medium skillet, melt the remaining 2 T. butter over medium heat. Add minced garlic and sauté briefly until garlic becomes aromatic. Cut cream cheese into small cubes and add to hot garlic butter. Whisk or stir to break up cream cheese, then add about ½ cup of the milk and continue to stir until sauce begins to thicken. Whisk in about ½ cup of the Parmesan cheese. Then, gradually whisk in remaining milk and Parmesan cheese as sauce begins to thicken. Continue to whisk until sauce is slightly thick, but still easy to pour. Stir in the dried parsley flakes. Pour sauce over Orzo and rice. Stir to combine. Serve immediately.
