CRISPY PARMESAN-RANCH CHICKEN BREASTS (STRIPS OR TENDERS)

I use the boxed Kellogg's cornflake crumbs for this, you can usually find them next to the Shake and Bake chicken coating mixes, if you are not able to find the boxed crumbs then you can use a processor to crush the cornflakes, reduce the baking time to 25 minutes for strips and for tenders bake only 20 minutes --- LOW-FAT OPTION use a healthy butter alternative in place of butter

1 cup crushed corn flakes
3/4 cup grated parmesan cheese
1/2 teaspoon garlic powder (optional)
1/2 teaspoon black pepper
1 (1 ounce) package hidden valley ranch dry ranch dressing mix
8 boneless skinless chicken breasts
1/2 cup melted butter (you might need a little more)

Steps:

  • Grease a 13 x 9-inch baking dish.
  • Set oven to 350 degrees F.
  • In a shallow dish mix together the cornflake crumbs with Parmesan cheese, garlic powder (if using) black pepper and dry ranch dressing mix.
  • Place the melted butter in a shallow dish.
  • Coat the chicken breast or strips into the melted butter, then roll into the cornflake mixture.
  • Place in prepared baking dish.
  • Bake uncovered for about 30 minutes or until the chicken is cooked through (strips or tenders or chicken strips might take less time).

1 cup Italian seasoned bread crumbs
½ cup panko bread crumbs
¼ cup Parmesan cheese
1 teaspoon seasoning salt (such as Mrs. Dash® garlic and herb)
1 teaspoon black pepper
1 teaspoon garlic powder
½ cup spicy ranch dressing, or to taste
½ cup buttermilk ranch dressing, or to taste
6 skinless, boneless chicken breasts
¼ cup melted butter

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Combine Italian bread crumbs, panko bread crumbs, Parmesan cheese, seasoning salt, pepper, and garlic powder in a bowl.
  • Combine spicy ranch dressing and buttermilk ranch dressing in a separate bowl. Dip chicken into dressing until both sides are coated, then coat in bread crumb mixture. Place chicken in a single layer on the prepared baking sheet, leaving space between pieces. Lightly drizzle chicken with melted butter.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 30 to 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

6 boneless skinless chicken breasts
1/2 cup ranch dressing
1 cup seasoned dry bread crumb
1/2 cup freshly grated parmesan cheese
1 teaspoon fresh coarse ground black pepper
1 teaspoon ground sage
1/2 teaspoon salt
1/4-1/2 teaspoon garlic powder

Steps:

  • Marinate chicken breasts in the ranch dressing for 4 hours or overnight.
  • I opted for overnight.
  • Preheat oven to 450 degrees.
  • Combine bread crumbs, Parmesan cheese, black pepper, sage, salt and garlic powder; mix well.
  • Remove the chicken from the ranch dressing and coat with the breadcrumb mixture.
  • Place in a 13 x 9 pan baking dish.
  • Bake for 20 minutes, then reduce heat to 350 degrees and bake for an additional 30 minutes or until done and juices run clear.
  • Time does not reflect marinading time.

There are plenty versions of this recipe, this is mine and can be on your table in less that an hour, my family loves this chicken! --- the ranch dressing is the secret it holds in all the flavor and moistness while the chicken is baking and also adds flavor, I find that Hidden Valley Ranch dressing works the best but Kraft or any other brand will do, I sometimes top the baked chicken with mozzarella cheese or cheddar, but that is optional --- although I have only made this using breasts I imagine that chicken pieces could be used although you would have to increase the breadcrumb mixture slightly, you can marinate the chicken breast in the ranch dressing for a few hours in the fridge, although you will need more than 1 cup of dressing if you are marinating .... *NOTE* to avoid a soggy bottom crust, place the chicken breasts onto a flat rack on top the baking sheet, also it is important not to bake the chicken in a small baking pan, if you do not have a rack bake on a large baking sheet so any juices in the pan will spread out and not accumulate under the chicken causing a soggy bottom --------------- FOR LOW-FAT OPTION: use low-fat Ranch dressing and omit the melted butter on top or use a healthy butter alternative such as Smart Balance 50/50 blend.

Steps:

½ sleeve buttery round crackers, crushed
1 cup dry bread crumbs
¼ cup Parmesan cheese
1 (1 ounce) package ranch dressing mix
salt and ground black pepper to taste
2 eggs, beaten
4 skinless, boneless chicken breast halves
2 tablespoons butter, cut into 4 pats, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x13-inch glass baking dish.
  • Mix crushed crackers, bread crumbs, Parmesan cheese, ranch dressing, salt, and pepper in a resealable 1-quart storage bag.
  • Dip a chicken breast into the beaten eggs. Lift up so excess egg drips back in the bowl. Add chicken to the bag with the breading and shake until completely covered. Place in the prepared baking dish. Dredge remaining chicken breasts. Top each breast with a pat of butter.

With the ranch flavoring, it dresses it up and makes it a great recipe for weekends or a special company meal. I love it because the prep time is very low. I can pop it in the oven and pull out a meal that looks and tastes like it took me hours to prepare. Over a bed of rice with a side salad or green vegetable, it makes an attractive display.

6 chicken breasts (fully thawed)
3 eggs
3/4 cup plain breadcrumbs
1/2 cup parmesan cheese
1 ounce Hidden Valley Original Ranch Dressing Mix
1 cup shallot (diced)
6 -8 slices mozzarella cheese
1/8 cup bottled Hidden Valley® Original Ranch® Dressing

Steps:

  • Set oven for 350 degrees Fahrenheit.
  • Mix together bread crumbs, parmesan cheese and Ranch mix in a small bowl.
  • In another small bowl, beat two eggs with a fork.
  • Dip the chicken breasts first in the beaten eggs, and then in the bread crumb mixture. Lay them in a casserole dish.
  • Scatter the shallots over the chicken breasts.
  • Place the mozzarella slices over the shallots, completely covering all the chicken in the dish.
  • Spread Ranch dressing from the bottle over the mozzarella. Use a knife to smooth it out so that a thin layer of the dressing covers all the cheese.
  • Put the chicken in the oven and bake it for 1 hour but check it at 45 minutes. The cheese should be golden brown and the chicken tender and delicious.
