BAKED RANCH PARMESAN CHICKEN

Baked Ranch Parmesan Chicken image

The ranch dressing marinade is the secret to this recipe that not only adds flavor and keeps the chicken moist but it also helps the bread crumbs adhere to the chicken when baking.

Time 5h

Yield 6

Number Of Ingredients 7

6 boneless, skinless chicken breast halves
1/2 cup prepared ranch salad dressing
1 cup dry bread crumbs
1/2 cup grated Parmesan cheese
1 teaspoon black pepper
1 teaspoon dried Italian seasoning
1/2 teaspoon salt

Steps:

  • Combine the chicken breasts with the ranch salad dressing in a zip-top bag or plastic container. Make sure the chicken is fully coated with the dressing. Place in the refrigerator and marinate for 4 hours or overnight. Preheat oven to 450 degrees F. Combine the breadcrumbs, Parmesan cheese, black pepper, Italian seasoning, and salt in a shallow dish and mix well. Remove the chicken from the marinade, leaving the dressing clinging to the chicken. Roll the chicken breasts in the breadcrumb mixture to coat on all sides. Place the chicken in a single layer in a 13" x 9" baking dish and bake at 450 degrees F for 20 minutes. Then reduce the heat to 350 degrees F and bake the chicken for an additional 30 minutes or until cooked through.

With the tangy ranch seasoning mixed with the delicious Parmesan cheese, garlic and basil tastes to accent, this Instant Pot Parmesan ranch chicken dinner will have your taste buds soaring!! A quick and easy family meal.

Provided by Six Sisters

Yield 6

Number Of Ingredients 13

1 1/2 pounds chicken breasts
3 pounds baby red potatoes
1/4 cup olive oil
1 teaspoon salt
3/4 teaspoon ground black pepper (more or less to taste)
1 1/2 teaspoons garlic powder
1 1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 (1 ounce) packet dry Ranch dressing mix (divided)
1 (15 ounce) can chicken broth
1/4 cup grated Parmesan cheese
1/4 cup butter, melted

Steps:

  • Add chicken and potatoes to Instant Pot and drizzle with olive oil. Toss chicken and potatoes until they are coated with oil.
  • In a small bowl, mix together salt, pepper, garlic powder, thyme, basil, oregano, and half of the dry ranch dressing mix. Sprinkle seasonings over chicken and potatoes, then toss gently to coat.
  • Pour chicken broth into the Instant Pot (try to pour it to the sides of the chicken and potatoes so that you don't rinse off the seasonings).
  • Place the lid on top of the Instant Pot and set the valve on top to sealing. Press the "MANUAL" button and set the timer for 16 minutes.
  • Remember that it will take 10-15 minutes for the Instant Pot to come to pressure, so be sure to plan accordingly!
  • When the Instant Pot is finished cooking, do a "quick release" of the pressure. Remove the chicken and potatoes to a large bowl or serving platter.
  • In another small bowl, mix together remaining ranch dressing mix, Parmesan cheese, and melted butter. Drizzle butter/seasoning mix over the chicken and serve.

CRISPY PARMESAN-RANCH CHICKEN BREASTS (STRIPS OR TENDERS)

Crispy Parmesan-Ranch Chicken Breasts (Strips or Tenders) image

I use the boxed Kellogg's cornflake crumbs for this, you can usually find them next to the Shake and Bake chicken coating mixes, if you are not able to find the boxed crumbs then you can use a processor to crush the cornflakes, reduce the baking time to 25 minutes for strips and for tenders bake only 20 minutes --- LOW-FAT OPTION use a healthy butter alternative in place of butter

PARMESAN RANCH BAKED CHICKEN TENDERS

Parmesan Ranch Baked Chicken Tenders image

These Parmesan Ranch Baked Chicken Tenders, have no flour or breadcrumbs, they're low carb, keto friendly and have everyone talking about how delicious they are! A must make!

Provided by Jenny

Categories     Dinner     Lunch

Time 40m

Number Of Ingredients 5

3/4 cup grated Parmesan Cheese
1.0 ounce packet Ranch Dressing Seasoning Mix
2 pounds chicken tenders
1/2 cup salted butter (melted)
2 tablespoons dried parsley leaves (divided)

Steps:

  • Preheat oven to 350 degrees F. and line a large baking sheet with tin foil.
  • Place Parmesan, Ranch Dressing Seasoning Mix and 1 tablespoon of dried parsley leaves onto a large plate or shallow dish. Use a fork to mix ingredients well. Use another fork to dip both sides of the chicken tender in melted butter then both sides into Parmesan mixture, making sure all sides are coated well. Transfer Parmesan coated chicken tenders to foil lined baking sheet, placing 1/2 inch apart from each other. Once all chicken has been coated and placed onto baking sheet, bake for 23-35 minutes at 350 degrees F. then turn on oven's broiler and carefully watch to cook tops of chicken until browned. Each oven will be different, mine took about 3 minutes. I didn't leave the oven, just watched through the window. Once the Parmesan browns, it goes very fast, so watch carefully. Remove tenders from oven and let cool for a couple minutes before serving. Serve hot with your favorite dipping sauce.

  • Put the chicken between two sheets of plastic wrap and use the flat side of a meat tenderizer to flatten your chicken. You will want your chicken to be 3/4"-1" thick. You will mainly be flattening the middle of the chicken breast so it's all about the thicknesses.
