Steps:
- Preheat oven to 425 degrees. Line 2 baking sheets with parchment.
- On a lightly floured surface with a lightly floured rolling pin, roll puff pastry into a 12-by-16-inch rectangle. With the long side facing you, lightly brush bottom half of rectangle with some of the beaten egg. Sprinkle 1/4 cup Parmesan and the salt on top half. Fold bottom half over top half. Gently roll dough to seal.
- Cut rectangle lengthwise into thirds. (You should have three 2-by-16-inch strips.) Sprinkle remaining 1 tablespoon Parmesan on 1 strip, poppy seeds on another, and cayenne on remaining strip. Cut each strip lengthwise into eight 1/4-by-16-inch strips.
- Transfer strips to baking sheets, spacing 1 inch apart. Working with 1 strip at a time, hold each end with your fingers, and carefully twist strip in opposite directions, forming a spiral. Press ends of strips against parchment to prevent unraveling. Freeze or refrigerate until strips are very firm and cold, about 15 minutes.
- Bake 1 sheet at a time, rotating halfway through, until straws are golden brown and cooked through, 12 to 14 minutes. Transfer straws to wire racks, and let cool.

PARMESAN PUFFS
A simple, super-quick-to-prepare recipe for an attractive and delicious appetiser, from the August/September 2005 issue of 'Australian Vogue Entertaining + Travel'. The recipe recommends using good-quality store-bought puff pastry. For an attractive colour contrast, top half the puffs with the cayenne pepper or paprika as specified in the recipe; and the other half with one of these mixed with your favourite herb, finely chopped. Perhaps basil or thyme. You can have these fully prepared in advance, and bake just before they are required.

- Remove sheets from the box of Puff Pastry Sheets and allow to thaw at room temperature for about 20 - 30 minutes, or until they are easy to handle.
- When the sheet is easy to handle, UNFOLD pastry sheet and lay it onto a baking mat or a lightly floured surface. The sheets are already divided into 3 strips, making it easy to slice each one into 4 triangles. NO need to roll the pastry.
- Cut the first pastry sheet into 3 strips along the folded marks. Then cut each strip into 4 triangles, to give you a total of 12 triangles for each pastry sheet. Repeat with second pastry sheet. Here's a tip: If you have a few extra cocktail franks, then cut one or two triangles again down the middle, to make extra triangles to roll them in.

- If you are using frozen puff pastry remove a sheet from the freezer and let it sit out for 15 - 20 minutes.
- Take your puff pastry sheet and roll it out slightly. This is just to flatten it a little so 2 passes of the rolling pin should be plenty.

- Preheat the oven to 425°F. Line two baking sheets with parchment paper., In a medium-sized saucepan set over medium heat, bring the water, butter, salt, and pepper to a boil, boiling and stirring until the butter is completely melted., Add the flour all at once and stir over the heat until the mixture forms a smooth ball; this should only take 20 seconds or so., Remove the pan from the heat, and transfer the dough to the bowl of your electric mixer. (If you have a hand mixer, you may leave the dough in the saucepan.), Beat in the Parmesan cheese, then add the eggs to the dough one at a time, beating well after each addition.
- Since eggs, even within a size range, vary quite a bit, check the dough after you've added 3 eggs.
- If it's smooth, shiny, and has a pudding-like consistency (e.g., if you were to drop a tablespoonful onto a baking sheet, it would be fairly smooth, but would hold its shape nicely and not spread), then don't add the remaining egg., Using a tablespoon cookie scoop or a spoon, drop large chestnut-sized (1 1/4") balls of dough the baking sheets, leaving about an inch between them.
