1 tbsp olive oil
1 onion , chopped
1 garlic clove , finely chopped
6 pork sausages , skins removed
400g can chopped tomato
200ml chicken stock
1 tbsp tomato purée
4 rosemary sprigs, chopped
200g instant polenta (available from larger supermarkets and Holland & Barrett)
100g smoked cheese , grated

Steps:

  • Heat the oil in a large casserole dish over a medium-high heat and cook the onion and garlic for a few mins. Stir in the sausages, breaking them up into small pieces as you go, and cook for another 8-9 mins. Stir in the chopped tomatoes, stock, purée and most of the rosemary. Bring to a simmer and cook for another 8-10 mins or until the mixture is thickened. Season to taste.
  • Meanwhile, make up the polenta following pack instructions. Remove from the heat and stir in the cheese, with some seasoning. Spoon the polenta onto 4 plates, then top with the ragout and a sprinkling of the remaining rosemary.

Polenta is such a natural base for so many savory foods - more flavorful than either pasta or mashed potatoes, but somehow just as forgiving - that it's hard to pick a favorite topping. Having said that, I know what mine is: sausage. The fatty succulence of a banger combined with the lean graininess of the cornmeal is somehow perfect.

2 tablespoons olive oil
4 good-quality sweet Italian sausages
1 cup medium-to-coarse cornmeal
Salt
1/2 to 1 cup freshly grated Parmesan cheese, or to taste
2 tablespoons butter
Freshly ground black pepper

Steps:

  • Put oil in a large skillet over medium-high heat. When oil is hot, add sausages and cook, turning occasionally, until well browned on all sides and cooked through, about 20 minutes. Set aside.
  • Meanwhile, put cornmeal in a medium saucepan along with 1 cup water and whisk well to make a slurry; continue whisking mixture to eliminate any lumps. Put pan over medium-high heat, sprinkle with salt and bring to a boil. Reduce heat to medium and continue to cook, whisking frequently and adding water as needed to keep mixture loose and free of lumps, between 3 and 4 more cups. If mixture becomes too thick, simply add a bit more water; consistency should be similar to sour cream's.
  • Polenta will be done in 15 to 30 minutes, depending on grind. Add cheese and butter. Taste and add salt, if necessary, and lots of pepper; serve topped with sausages.

small handful dried porcini mushrooms
25g butter
1 shallot , finely sliced
2 garlic cloves , crushed
5 thyme sprigs , leaves picked
500g large field mushroom , sliced
200g chestnut mushroom , sliced
small glass of red wine
125ml vegetable stock
100g taleggio cheese (or vegetarian alternative), sliced
500ml milk
1 bay leaf
3 thyme sprigs
250g instant polenta
50g butter
75g parmesan (or vegetarian alternative), grated

Steps:

  • Soak the dried mushrooms in 150ml warm water. Set aside for 20 mins, then drain and squeeze, reserving the soaking liquid. Heat the butter in a large frying pan. When sizzling, add the shallot and cook for a few mins until soft. Add the garlic and thyme leaves, cook for 1 min more, then turn up the heat and add the soaked mushrooms. After 1 min, add all the other mushrooms and fry over a very high heat for 5 mins until soft. Splash in the red wine and boil rapidly for 1 min. Pour in the stock and reserved mushroom liquid, and simmer for 15 mins until you have a thickened stew. Turn off the heat.
  • For the polenta, bring the milk to the boil with 500ml water, the bay and thyme. Turn off the heat and leave to infuse for 20 mins, then fish out the herbs and bring back to the boil. Add the polenta in a steady stream, whisking steadily. Cook for 1 min until thickened, then stir in the butter and Parmesan. Spoon a 'crater' of polenta onto a baking tray and fill with the ragout. Top with slices of Taleggio, place under a hot grill until melting and oozy, then let everyone help themselves.

2 pounds precooked polenta (in a tube), cut into 4 (1/2-inch-thick) rounds
1/3 cup grated parmesan
2 tablespoons olive oil, divided
1 pound sweet Italian sausage, casing removed
1/2 pound mixed sliced fresh wild mushrooms
1/2 cup dry red wine
1 1/2 cups bottled marinara sauce
Accompaniment: grated parmesan

Steps:

  • Preheat broiler.
  • Broil polenta rounds on a lightly oiled large heavy baking sheet 3 to 4 inches from heat until lightly browned in spots, about 7 minutes. Turn rounds over and sprinkle with cheese, then broil until polenta is golden in spots and cheese is melted, about 7 minutes more.
  • Meanwhile, heat 1 tablespoon oil in a 12-inch heavy skillet over high heat until it shimmers, then cook sausage, breaking up lumps, until just cooked through, about 4 minutes. Transfer to a bowl.
  • Heat remaining tablespoon oil in skillet over medium heat until it shimmers, then cook mushrooms, stirring occasionally, until softened, about 3 minutes. Add wine and boil, scraping up any brown bits, until reduced by about half, about 2 minutes. Stir in sausage and tomato sauce and simmer, stirring occasionally, 5 minutes. Season with salt.
  • Serve ragout spooned over polenta.

This heartwarming sausage and mushroom ragu, served with parmesan polenta, will warm the cockles on cold winter days.

50g dried porcini mushrooms
6 tbsp olive oil
800g meaty pork sausages, skinned and broken into small chunky pieces
1 medium onion, chopped
3 garlic cloves, crushed
1 large rosemary sprig, leaves picked and finely chopped
2 tsp fennel seeds, lightly crushed
½ tsp chilli flakes
150ml dry white wine
2 x 400g cans chopped tomatoes
3 fresh bay leaves
450g mushrooms, cleaned if necessary, then thickly sliced
A little fresh flatleaf parsley, chopped, to serve
For the parmesan polenta
250g quick-cook polenta
1½ tsp salt
75g butter
150g parmesan, finely grated

Steps:

  • Cover the dried porcini with 200ml freshly boiled water, then leave to soak for 30 minutes. Meanwhile, heat 2 tbsp of the oil in a large, non-stick frying pan. Add half the sausage pieces and fry briskly, stirring occasionally, until golden brown all over. Lift onto a plate with a slotted spoon and repeat with the remainder.
  • Heat another 2 tbsp olive oil in a large pan, add the chopped onion, cover and fry gently for 10 minutes, uncovering and stirring occasionally until soft and lightly golden.
  • Drain the soaked porcini, reserving the liquid, and squeeze out as much water as you can from the mushrooms. Uncover the pan, add the soaked mushrooms, garlic, rosemary, fennel seeds and chilli, then fry for 1-2 minutes. Add the wine and simmer until it has almost all evaporated. Add the browned sausage pieces to the pan with the tomatoes, bay leaves and all but the last teaspoon or two of the mushroom soaking liquid (in case there's grit in it). Simmer gently for 20 minutes, stirring every now and then.
  • Meanwhile, for the polenta, bring 1.8 litres water to the boil in ?a separate, large saucepan. Slowly pour in the polenta, stirring all the time. Add the salt, then simmer for 8 minutes, stirring frequently to remove any lumps.
  • When the ragù has reduced and thickened, heat the remaining olive oil in a large frying pan. Add the fresh mushrooms and some seasoning, then fry over a high ?heat for 3 minutes, turning the mushroom slices half way through, until lightly golden. Stir them into the ragù, cover and leave to simmer for another 5 minutes. Season.
  • Stir the butter into the cooked polenta along with the Parmesan, then season to taste.
  • To serve, spoon the polenta into warmed deep bowls, then top with the ragù and a sprinkle of parsley.

6 cups water
1 teaspoon kosher salt
2 cups polenta (aka corn grits)
3 tablespoons butter
1 lb Italian sausage
1 (24 ounce) jar hearty traditional Ragú® Pasta Sauce
8 ounces goat cheese, log
3/4 cup shredded parmesan cheese
1 cup baby arugula

Steps:

  • Ragu Recipe Contest Entry.
  • Pre-heat oven to 400 degrees Fahrenheit.
  • Butter the bottom and sides of a 9" springform pan. Also fold a piece of foil around the bottom of the pan to catch any leaks as the dish cooks in the oven.
  • In a large pot, bring water and salt to a boil over high heat. Once water is boiling, slowly whisk in corn grits.
  • Reduce heat to simmer and stir frequently, to keep corn grits from sticking to the pot, until mixture is very thick.
  • Stir the butter into the cooked polenta. Set pan aside, but cover the surface of the polenta with a piece of plastic wrap to keep the polenta from forming a skin on the top.
  • In a large skillet, break up the Italian sausage and cook until it is browned and cooked through.
  • Add the jar of Ragu to the sausage, stir to combine and cook just until it is heated through. Remove from heat and set pan aside.
  • Pour half of the polenta into the springform pan and spread it evenly in the pan.
  • Slice the log of goat cheese into equally thick slices (about 20) and arrange half of the goat cheese evenly over the top of the polenta.
  • Sprinkle 1/4 cup of the Parmesan cheese over the goat cheese and polenta.
  • Spread the arugula evenly over top of the cheese.
  • Pour half of the sausage and Ragu mixture over top of the arugula and spread it evenly across the whole pan.
  • Pour remaining polenta over top of the meat sauce and spread evenly in the pan.
  • Spoon the rest of the sausage and Ragu mixture on top of the layer of polenta and spread it into an even layer.
  • Arrange the remaining goat cheese evenly on top of the meat sauce.
  • Sprinkle the 1/2 cup of Parmesan cheese evenly over top of the pasticciata.
  • Place the foil lined springform pan onto a baking sheet and slide into the oven to bake for 45 minutes.
  • Remove from oven when cheese is golden brown and bubbly.
  • Let the pasticciata rest for 20 minutes before removing the outer ring and serving. This will allow it to cool a bit and will stay together once the outer ring has been removed.

1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
2-1/2 cups water, divided
1 cup milk
3/4 cup polenta
1/2 cup KRAFT Grated Parmesan Cheese

Steps:

  • Crumble sausage into large skillet; cook 6 min. or until evenly browned, stirring occasionally. Remove from skillet; drain.
  • Add onions and garlic to skillet; cook 1 min. Stir in sausage, pasta sauce and 1/2 cup water; bring to boil. Simmer on medium-low heat 20 min., stirring occasionally.

two mild Italian turkey sausage
4 T. olive oil
12 crimini mushrooms, sliced
two large shallots, finely chopped
3 cloves of garlic, crushed and minced
2 t. chopped fresh herbs, I use a combination of thyme, basil, Italian parsley and chives
1 1/2 T. tomato paste
1/2 - 3/4 cup white wine (could also use red wine or dry vermouth or champagne)
1 1/2 cups chicken stock
Polenta:
3 - 4 T. olive oil
1 3/4 cups polenta
3 cloves
1 quart chicken stock
1 cup parmesan cheese, finely grated
1/4 cup 1/2 & 1/2

Steps:

  • For ragout: Heat olive oil add mushrooms, cook for a couple of minutes add shallots and garlic, saute over medium heat for about 5 minutes, until lightly carmelizing add turkey sausage in small pieece Cook well on medium to high heat until sausage cooked and veg and sausage starting to carmelize Add herbs, stir in quickly Deglaze with wine Add tomato paste,stir in well and cook through for a few minutes Add chicken stock, bring heat up to high simmer, cover and reduce heat. Cook on low simmer for about 15 minutes. Polenta: While sauce is cooking, heat olive oil in large (4qt) saucepan Add finely minced garlic, saute until lightly browned Add two cups of stock, bring to high simmer Add polenta, 1/2 cup at a time, stirring well so that no lumps form Add more chicken stock as you add polenta Cook over low/medium heat for about 15 minutes, stirring every few minutes Add parmesan about 1/4 cup at a time, stirring until well incorporated Cook for about another 10 minutes Add 1/2 and 1/2, stir in well Continue to cook for another few minutes. Consistency should be thick and creamy. Ladle 3/4 cup polenta into shallow bowl, and spoon ragout over polenta.
