5 pita bread rounds
6 tablespoons butter, melted
1/2 teaspoon garlic powder
1 teaspoon parmesan cheese

Steps:

  • Preheat oven to broil.
  • Cut each pita into 6 pie slice-shaped triangles.
  • Separate each triangle into 2 triangles and place on a cookie sheet.
  • Brush each pita triangle with butter; sprinkle with garlic powder and parmesan cheese.
  • Broil for 1-2 minutes until cheese is bubbly and lightly browned.
  • Serve warm.

These snacks make a beautiful and tasty warm appetizer, or could be kept whole and served as a light lunch. Pita bread toppped with a tahini yogurt sauce, bell peppers, olives, tomatoes and feta. Simple to make with a very nice presentation. This recipe was created for the Ready, Set, Cook! contest.

2 pita bread rounds, 7 inch size
4 tablespoons plain yogurt
1 tablespoon tahini
1 teaspoon lemon juice
1 tablespoon water
1 garlic clove, minced
1/2 yellow bell pepper
4 tablespoons tomatoes, diced
6 kalamata olives, thinly sliced
2 tablespoons feta cheese, crumbled

Steps:

  • Preheat oven to 425 degrees F.
  • Place whole pitas on baking sheet.
  • Mix yogurt, tahini, lemon juice, water and garlic until smooth.
  • Spread half of yogurt mixture on each pita bread.
  • Cut yellow pepper lengthwise into strips about 1/8 inch wide, then cut strips in half and place decoratively on pitas.
  • Then top each pita with half of the tomatoes, olives and feta.
  • Bake for 8 minutes, until pita begins to crisp and feta is beginning to melt.
  • Remove from oven, cut pitas into 6-8 triangles and serve warm, or leave whole and serve as individual pizzas.

6 6-inch-diameter pita breads
6 tablespoons olive oil
1 1/4 cups freshly grated Parmesan cheese

Steps:

  • Preheat oven to 325°F. Cut each pita bread horizontally in half, forming 2 pita disks. Brush disks with olive oil. Sprinkle disks with Parmesan cheese, then pepper. Cut each disk into 6 wedges. Arrange pita wedges in single layer on large baking sheets.
  • Bake until pita wedges are golden and just crisp, about 12 minutes. (Can be prepared 3 days ahead. Cool completely. Store airtight at room temperature. Rewarm in 325°F oven about 5 minutes.)

4 (6 inch) whole wheat pita bread
olive oil flavored cooking spray

  • Spray each pita with olive oil spray.
  • Combine MrsDash Italian Medley and Parmesan cheese in a small bowl.

1 cup sour cream
1/2 cup mayonnaise
1/2 cup freshly grated parmesan cheese
2 teaspoons basil (dried)
2 teaspoons oregano
1 -2 garlic clove, minced
salt and pepper
8 mini pita pockets, split into circles

Steps:

  • Combine ingredients except bread. Using a sharp knife, split pita into rounds. Spread each with a tablespoon or so of mixture and place on a cookie sheet. Freeze uncovered, then transfer into plastic bag. When ready to use, preheat oven to 375°. Cut frozen circles into 6ths (small size) or 8ths (large loaves) using a sharp carving knife. Spread on cookie sheet, in one layer. Bake for 15-20 minutes until they start to brown a little.

1 1/2 cups finely shredded Parmesan (about 6 ounces)

Steps:

  • Preheat oven to 375°F.
  • Split each pita loaf horizontally into 2 rounds and brush rough sides with oil. Cut each round into 16 wedges and arrange with edges touching, oiled sides up, on 2 baking sheets. Sprinkle pita with Parmesan and salt and pepper to taste and bake on middle and lower racks of oven, switching position of sheets in oven halfway through baking, 12 to 15 minutes, or until golden. Crisps may be made 3 days ahead and kept in an airtight container at room temperature.

1 teaspoon italian seasoning
25 wonton wrappers, cut in half to form triangles
2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 400F.
  • Spray large baking sheet with nonstick coating and set aside.
  • In a small bowl stir oil, water, garlic and seasoning.
  • Set wonton wrappers on baking sheet in a single layer.
  • With fingers, spread oil mix over the triangles.
  • (If mixture begins to separate, stir again).
  • Sprinkle with cheese.
  • Bake 3-4 mins til they crisp.
  • Cool on a wire rack, or serve warm.
