CREAMY GARLIC PARMESAN ORZO
This Creamy Garlic Parmesan Orzo can be on your table in 15 minutes! While it's perfect as a side dish, I prefer this as a meal on its own because it's cheesy, creamy and really hits the spot.

Steps:
- In a large skillet add the olive oil, butter and cook for about 30 seconds until the butter melts. Stir in the onion and garlic and let it cook for about 2 minutes until the onion softens and the garlic becomes aromatic.
- Add the orzo to the skillet and let it cook for about 2 minutes just in the oil so that it starts to toast lightly, this will give it a nutty flavor.
- Season with salt and pepper then stir in the chicken broth and half and half. Bring to a boil, then turn the heat down to a medium-low, cover with a lid and let it cook for 5 minutes.
- Remove the lid and stir in the Parmesan cheese and fresh parsley.
- Serve immediately.

Steps:
- Bring a large pot of water to a rolling boil; add 2 teaspoons salt. Cook orzo in the boiling water, stirring occasionally until tender yet firm to the bite, 6 to 11 minutes. Drain.
- Heat oil in a skillet over low heat. Add bell pepper and saute for 10 minutes. Increase heat to medium and add carrot, onion, and garlic. Saute until carrot begins to soften, 2 to 3 minutes. Add zucchini and summer squash; cook for 1 minute more. Increase heat to high and add broth, tomato sauce, remaining salt, and pepper. Cook until sauce comes to a simmer, about 5 minutes. Reduce heat to low.
- Add orzo to the sauce and mix well. Remove from heat. Stir in half-and-half, followed by Parmesan cheese. Serve hot or at room temperature.

This one pot vegan lemon orzo primavera is seriously one of my favorite meals ever! It's packed with tender vegetables, takes under 30 minutes to make, and is super flavorful.

- In a straight-sided pan or large pot, add 1 tablespoon of oil over medium to medium-high heat. Once hot, add mushrooms and sauté for 6-8 minutes until golden and tender. Then, add garlic and sauté until fragrant. Add in orzo, stir until evenly coated in the oil and garlic, and cook for another minute.
- Add in vegetable broth and bring to a boil. Once boiling, cover, only lifting to stir occasionally, and cook until the vegetable broth is almost fully absorbed (5-6 minutes). At this point, add in broccolini, spinach, french green beans, and zucchini. Cover again and cook for another 5 minutes, or until broth is fully absorbed and vegetables are tender.
- Add the lemon juice, salt and pepper. Stir to combine and taste to adjust seasonings to your preference.
- Top with vegan parmesan cheese and enjoy immediately!
