HAMBURGER PARMESAN
Purest form of comfort food.

Steps:
- Preheat oven to 350F/180C. Lightly spray a large baking dish (3-4Q/L) with non-stick spray.
- Mix the ground beef, fresh breadcrumbs, Parmesan, parsley, basil, oregano, onion, garlic, eggs, salt and pepper in a large bowl. Combine well. Divide into 6 equal portions and shape into patties.
- Heat olive oil in a large skillet over medium heat.
- Dredge patties in the regular dry breadcrumbs (I find this step stops a lot of shrinkage).
- Brown patties on both sides then place in the prepared baking dish.
- Pour sauce over the patties. Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove foil and spread the shredded cheese over the patties. Return to the oven and bake for an additional 10 minutes--until cheese is melted.

PARMESAN MEAT PATTY CASSEROLE
Kind of like chicken parmesan -- only with hamburger. This calls for the "green can" cheese, but I'm sure you can substitute the real thing. Recipe doesn't specify whether to cover or not while baking. I start out uncovered and cover towards the end, if it starts getting too brown.

Steps:
- Shape ground chuck into 4 patties, dip in flour, then in beaten egg, then in bread crumbs.
- Brown in oil until light golden brown.
- Place in casserole dish.
- Place mozzarella cheese on top of patties.
- Pour tomato sauce over cheese.
- Sprinkle with oregano and top with enough parmesan cheese to lightly cover the top.
- Bake at 350F for 40 minutes.

Steps:
- Trim off fat from steak.
- Cut into 6 pieces and flatten with the bottom of a heavy pan between wax paper.
- Dip meat into beaten egg, then into a mixture of bread crumbs and parmesan cheese.
- Brown in oil and put into a 9x13-inch baking dish.
- In remaining oil, brown onion, then add tomato paste, hot water, and seasonings.
- Cook for 5 minutes.
- Pour half of the sauce over meat and put a slice of cheese over each slice of meat and top with remaining sauce.
- Cover and bake at 300 degrees for 2 hours.
BEEF PATTIES PARMESAN
This is easy and can be on the table in a little over half an hour - but tastes like it took a lot longer. The secret is the Bisquick which makes them puff up.

- Place on a greased baking sheet and bake in a preheated 400 oven for 25 minutes.
- Combine tomato sauce with seasonings to taste.
- Heat.

- Preheat oven to 300 degrees.
- In a small bowl, mix Parmesan cheese and bread crumbs; set aside.
- In a medium-sized bowl, combine mashed potatoes, cream cheese, eggs, onion, and flour. Beat with a mixer on low speed until blended. Beat at high speed until mixture is light and fluffy. Add salt and pepper.
- Pour potato mixture into a greased casserole dish. Sprinkle with bread crumb/Parmesan cheese mixture.
- Bake for 35 minutes.

Wonderful and very filling hamburgers. This is another childhood favorite of mine. My father used to make these for Employee Appreciation Day for his workers.
